1 medium onion
1 clove garlic
2 tbsp olive oil
1 can white beans ((1 can = 15.5 oz))
¼ cup sun dried tomatoes in oil
½ lemon ((juiced))
2 tbsp parsley, fresh ((or frozen, chopped, use less if dried))
2 tbsp chives, fresh ((or frozen, chopped))
1 tbsp water
Salt and pepper to taste
2 tbsp tomato puree
Worcestershire sauce (vegetarian) ((A few drops also combine nicely with this. Make sure you grab an anchovy-free, vegan one))

Steps:

  • Roughly chop the onion and garlic.
  • Fry them in oil for a couple of minutes until lightly browned. When ready, throw both into a large mixing bowl.
  • Drain and rinse the beans and place them in the bowl.
  • Juice the lemon.
  • Finally, add the lemon juice and rest of the ingredients and using a hand blender, give it all a good blend. Alternatively throw it all in a food processor instead. That's it! Serve as you like, hot wholemeal bread goes great.

1 (15-ounce) can cannellini beans, drained and rinsed
2 cloves garlic
2 tablespoons fresh lemon juice
1/3 cup olive oil, plus 4 tablespoons
1/4 cup (loosely packed) fresh Italian parsley leaves
Salt
Freshly ground black pepper
6 pitas
1 teaspoon dried oregano

Steps:

  • Preheat the oven to 400 degrees F.
  • Place the beans, garlic, lemon juice, 1/3 cup olive oil, and parsley in the work bowl of a food processor. Pulse until the mixture is coarsely chopped. Season with salt and pepper, to taste. Transfer the bean puree to a small bowl.
  • Cut each pita in half and then into 8 wedges. Arrange the pita wedges on a large baking sheet. Pour the remaining oil over the pitas. Toss and spread out the wedges evenly. Sprinkle with the oregano, salt, and pepper. Bake for 8 to 12 minutes, or until toasted and golden in color.
  • Serve the pita toasts warm or at room temperature alongside the bean puree.

two 1-pound cans navy or other white beans
4 to 6 garlic cloves
1/4 cup extra-virgin olive oil
1 teaspoon ground cumin
1/2 teaspoon ground coriander seeds
1/4 teaspoon salt, or to taste
a pinch cayenne
Garnish: minced fresh parsley leaves and/or paprika
Accompaniment: crackers or thin slices of baguette

Steps:

  • Rinse and drain beans. To a food processor with motor running add desired amount of garlic and blend until minced. Add beans and remaining ingredients and blend until smooth. Transfer spread to a serving bowl. Spread may be made 1 day ahead and chilled, covered. Bring spread to room temperature before serving.
  • Just before serving, garnish spread with parsley and/or paprika. Serve spread with crackers or baguette slices.

The idea of adding a whole head of garlic to a dip might scare you, but compared to its bracing raw counterpart, roasted garlic is sweet and mellow. This dip is garnished with a sprig of sizzled rosemary that's for more than just looks: Frying the herb infuses the olive oil with its fragrance. Spoon the remainder over your finished bowl for a hit of rosemary you wouldn't get with just the minced leaves, then scoop it up with warm pita, cucumber spears, and carrot sticks.

1 head garlic
1 teaspoon, plus 5 tablespoons olive oil
2 (15-ounce) cans white beans, like cannellini, Great Northern or navy beans, drained and rinsed
3 tablespoons lemon juice (from 1 lemon)
1 tablespoon roughly chopped fresh rosemary leaves, plus 1 full sprig
1/4 teaspoon black pepper
1 pinch of cayenne, plus more for garnish (optional)
1 tablespoon hot water
1 1/4 teaspoons kosher salt

Steps:

  • Roast the garlic: Heat the oven to 400 degrees. Peel off most of the garlic's outermost skin but leave the whole head intact. Trim about 1/4 inch off the top of the garlic to expose the cloves. Place the garlic on a large piece of aluminum foil, then drizzle 1 teaspoon olive oil over the exposed cloves and close the foil into a pouch. Bake for 40 to 50 minutes, until you can pierce the center of the head with a knife. Let cool slightly.
  • Squeeze the roasted garlic cloves into the bowl of a food processor. Add the white beans, 4 tablespoons olive oil, lemon juice, rosemary leaves, black pepper, cayenne (if using), hot water and salt. Purée until smooth, then taste for salt, pepper, rosemary and lemon juice. Adjust as necessary. Transfer to a serving dish.
  • Heat remaining 1 tablespoon of olive oil in a small heavy skillet over medium-high heat. When hot, add the remaining rosemary sprig - it should sizzle. Cook until brown and crisp, flipping once, about 1 minute per side, then transfer to the top of the dip as a garnish. Pour or spoon the remaining olive oil, now infused with rosemary, over the top of the dip. Sprinkle with cayenne for a little additional heat.

This recipe was printed in the New York Times several years ago. I often use it for my own lunch with some fresh veggies. Flavors are best a room temp, but dip must be stored (long-term) in the fridge. Prep time does not include additional time for flavors to blend.

1 1/2 cups white beans, drained but quite moist
1 clove garlic, peeled
coarse salt
fresh ground black pepper, to taste
2 tablespoons extra virgin olive oil, plus
1 teaspoon extra virgin olive oil
1 teaspoon thyme or 2 teaspoons ground cumin
1 sprig fresh rosemary or 1 sprig thyme (to garnish)

Steps:

  • Put beans, garlic and some salt in container of a food processor.
  • Turn machine on, and add 2 tablespoons olive oil in a steady stream through feed tube; process until mixture is smooth.
  • Taste and adjust seasonings with salt and pepper.
  • Cover and refrigerate (up to 2 days), until about an hour prior to serving.
  • Just before serving, stir in herbs, drizzle with remaining olive oil, and garnish with herb sprig.
  • Serve with chips, pita crisps or raw veggies.

1 1/2 cups navy beans, soaked and drained
5 garlic cloves
10 sage leaves
2 bay leaves
3 tablespoons olive oil, divided
1 head garlic, outermost papery hush removed
salt & freshly ground black pepper, to taste
1 lemon, juice of
1 tablespoon thyme, chopped

Steps:

  • Boil the beans in a large pot with water to cover by 2 inches for 10 minutes.
  • Lower the heat and add the 5 garlic cloves, sage leaves, bay leaves, and 2 teaspoons of olive oil.
  • Simmer, covered until the beans are tender, about 1 1/2 hours.
  • Remove bay leaves and drain, reserving the broth.
  • Preheat oven to 350°F
  • Rub the head of garlic with a little of the remaining olive oil and put it in a small baking dish and add 1/3 cup water.
  • Cover and bake until soft and lightly caramelized, about 45 minutes.
  • Cool, then squeeze out the softened garlic.
  • Puree the beans in a food processor with all the garlic, the remaining olive oil, 1 teaspoon salt and enough bean broth to give the beans a soft, spreadable consistency.
  • Season to taste with lemon juice and pepper and taste again for salt.
  • Stir in thyme leaves and serve warm.

2 cups drained cooked or canned cannellini or other white beans, still moist and liquid reserved
2 garlic cloves, peeled, or to taste
1/4 cup extra virgin olive oil, plus oil for drizzling
Salt and black pepper to taste
2 teaspoons ground cumin, or to taste
Fresh lemon juice to taste
1/4 cup chopped shallot, red onion, or scallion for garnish, optional

Steps:

  • Put the beans in a food processor with the garlic, olive oil, salt, pepper, and cumin. Turn the machine on and process until the mixture is smooth, stopping and scraping down the sides if necessary and adding a bit more bean liquid or olive oil if necessary.
  • Taste and adjust the seasoning-add more garlic, salt, pepper, or cumin if you like-then transfer to a bowl. Add lemon juice a tablespoon at a time, until quite tart, then garnish with the chopped shallot if you like. Use immediately or refrigerate for a day or two. Bring back to room temperature before serving. Drizzle with a little olive oil and sprinkle with a little more cumin (or some paprika) before serving.
