Steps:
- In a small saucepan, melt butter over medium heat. Whisk in the flour, salt and pepper until smooth. Gradually whisk in the milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Use immediately or refrigerate.

- Recipe kindly shared by the Tesco Community Cookery School with Jamie Oliver. The recipe has been written to be flexible and scalable up to 50 portions. Note: all veg weights are for trimmed, prepped vegetables.
- Peel and roughly chop the onions.
- Trim, wash and slice the leeks.
- Place a pan large enough to hold all the ingredients on a medium heat with the oil and butter.
- Add the vegetables and cook with the lid on for 30 minutes or until the vegetables are softened and lightly coloured, stirring every so often.
- Tip in the flour and stir it into the buttery veg until well mixed.
- Divide the milk between three cups and add one cup to the pan, stirring until completely incorporated. Add the second cup and repeat.
- Pour in the remaining milk and bring to the boil, stirring continuously.
- Reduce the heat to low and cook for 20 minutes or until thickened, stirring regularly.
- Carefully pour the sauce into a clean pan, leaving behind any burnt bits that are stuck to the bottom, and whiz with a stick blender until smooth. Season to taste with salt and pepper.

BASIC ITALIAN WHITE CREAM SAUCE (LIKE AN ALFREDO OR BECHAMEL)
This recipe is for a basic Italian White Cream Sauce (like an Alfredo or bechamel) for Pasta, Chicken, Shrimp, etc. You can add other ingredients to suit your liking, this is the basic version - goes great over Fettuccine or Tortellini... you can also add 1 teaspoon oregano or parsley to flavor. If you throw in some bacon, carmelized onion & a handful of frozen peas & serve over pappardelle it is absolutely fabulous!

- Gently bring 500ml whole milk to the boil in a small saucepan with 1 halved onion, studded with 1 bay leaf and 2 cloves. Turn off the heat and leave to infuse for 20 mins.
- Melt 50g butter in another saucepan, then add 50g plain flour. Stir continuously until a paste forms - this is called a roux. Continue cooking for 2 mins.
- Remove the onion, bay and cloves from the milk with a slotted spoon and discard. Add the infused milk to the roux gradually, stirring as you go, until you get a smooth sauce. Cook for 5-10 mins, stirring continuously, until the sauce has thickened. Season to taste.

WHITE SAUCE BASE
A white sauce base that can flavor to taste. As you've seen from my other recipes I like things simple, easy, and use common ingredients for a great taste. Sometimes I'll add garlic powder, cream cheese and/or Parmesan cheese to make an alfredo sauce. Unfortunately I don't have the exact measurements of the add-ins because I usually make the sauce to taste for the meal. I would recommend stirring in your extra ingredients very small amounts and let the sauce steep. The milk will hide the flavors of your extra ingredients at first and will take time to work through the mixture. For best results always use real butter or a butter blend that is at least half butter.

- Melt butter in a heavy saucepan on a low heat.
- Add all dry ingredients to make a well-blended thick paste.
- Add milk slowly while stirring. Small amounts of milk at first are best. Make sure to scrap the dry mix off the side of the pan. Left over dry mix will burn and ruin the taste.
- Increase heat to medium.
- Bring sauce to very a light simmer.
- Remove the sauce from heat and serve.

- Melt butter over low heat in wide sauce pan, or deep skillet.
- Stir in flour and mix with a wooden spoon until blended.
- Slowly add milk to pan, careful not to burn it.
- When milk is fully intergrated into rue, increase heat and reduce for 10 minutes, stir often to prevent burn.
- If sauce too thick, add more milk.
- If too thin, add more flour.
- Add salt and pepper to taste.
- Pour over warmed buttered pasta, and cover with cheese.
- Serve immediatlly.

- Add flour and beat until smooth, remove from the heat.
- Add milk, a little at a time, and beat well.
