BOURBON AND DP BAKED BEANS
I came up with this recipe after having made some bourbon baked beans and seeing a recipe for cola baked beans and I thought: Why not combine the two?

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Mix brown sugar, paprika, mustard, and cayenne pepper together in a bowl. Whisk in pepper soda, ketchup, and Worcestershire sauce until brown sugar is dissolved.
- Cut 4 slices of bacon into small strips. Cook and stir in a large Dutch oven over medium heat until almost crispy, 3 to 5 minutes. Transfer to a bowl, reserving bacon grease.
- Stir onion into the bacon grease in the Dutch oven; cook and stir until soft, 3 to 5 minutes. Add garlic; cook and stir for 1 minute. Pour in bourbon, stirring to scrape up browned bits off the bottom with a wooden spoon. Stir bacon strips back in.
- Pour brown sugar mixture and baked beans into the Dutch oven. Simmer until beans are heated through, about 15 minutes. Arrange remaining 4 slices of bacon on top of the beans.
- Bake in the preheated oven, covered, until beans are bubbly and sauce is syrupy, about 3 hours.

- Preheat the oven to 350 degrees F.
- In a Dutch oven, cook the bacon over medium heat until the fat is rendered, 8 to 10 minutes. Transfer the bacon to a paper towel-lined plate and reserve. Add the onion to pan and cook until translucent, about 10 minutes.
- Reduce the heat to low, add the beans, ketchup, sugar, preserves, chicken broth, bourbon, mustard, salt, pepper, garlic powder and reserved bacon and stir until well combined. Bring to a simmer. Cover and bake for 40 minutes. Stir before serving.

- Preheat the oven to 300 degrees F. Cook the bacon in a large Dutch oven over medium-high heat until browned and crisp, about 8 minutes. Add the onion and garlic and cook until softened, 4 to 5 minutes. Add the paprika and toast, stirring, about 30 seconds. Add the tomato sauce, molasses, bourbon, brown sugar, Worcestershire sauce, mustard, 2 teaspoons salt and 1/2 teaspoon pepper. Bring to a simmer and cook 5 minutes.
- Add the beans and 8 cups water. Bring to a boil, then cover the pot and transfer to the oven. Bake until the beans are tender, about 3 hours. (If the beans are still slightly firm, continue cooking, stirring every 45 minutes and adding more water if necessary to just cover.)
- Once the beans are tender, uncover and increase the oven temperature to 325 degrees F. Bake until the beans are thick and browned, about 1 more hour. (Again, if the beans need more time, continue cooking, stirring occasionally and adding more water if necessary.) Remove from the oven and thin with water if necessary.
SLOW COOKER BOURBON BAKED BEANS
Steps:
- Cook bacon in a nonstick skillet. Remove to a paper towel-lined plate. Discard all but 1 tablespoon of bacon fat from the skillet. Saute onion in the bacon fat for 3-4 minutes.
- Place onions and all other ingredients, except bacon, in a 6-quart crockpot. Stir well, cover, and cook on low for 4 hours.
- Remove top, turn heat to high and cook 20 minutes to thicken some. Stir in bacon.
GUINNESS AND JAMESON BAKED BEANS
I like using Guinness in savory dishes, particularly those that are slow-cooked. This summer, I came up with this recipe for baked beans and they were a big hit. Given that this year is the 250th anniversary of Guinness, I thought I'd share and make it slightly more Irish, if not in tradition (these are much sweeter than Irish/British beans), then in ingredients, by making the whiskey Jameson. Feel free to use any whiskey you like (same with the beer actually) and they're still great. For those looking for a non-alcoholic beer substitution, try O'Doul's Amber, which is a really useful cooking beer that happens to be non-alcoholic. I buy my onions pre-diced and frozen and my garlic pre-diced in a jar. Note that this recipe is made to fill my large oval crock pot and will NOT fit in the standard round ones. Split in half for that.

Steps:
- Dice up the salt pork and saute until brown.
- Remove the pork and put into the crock pot, leaving the grease in the pan.
- Saute the onions and garlic in the pork fat until brown.
- Remove the onions and garlic to the crock pot.
- Brown the sausage and add it to the crock pot.
- Add the rest of the ingredients to the crock pot.
- Cook on low for at least 12 hours, but I prefer 24 hours.

INSTANT POT BAKED BEANS RECIPE

- Being by adding the dried white beans and broth to the Instant Pot and cook them on high pressure >>20 minutes >> quick release. Then, let the beans sit for 5 minutes in the Instant Pot.
- Before straining the beans, remove 1 cup of the excess liquid from the cooked beans*. Set aside. Then, strain the rest of the liquid from the white beans in a sieve and then set the cooked beans aside.
- Turn on the sauté function and add olive oil to the pot.
- When the olive oil is fragrant, add onion and 1/2 teaspoon of salt to the pot. Let the onion cook until it begins to caramelize (about 5-6 minutes).
- Then deglaze the pot with bourbon by pouring the bourbon over the onion. Scrape the sides of the pot with a spatula to remove all the crunchy bits from the pot.
- Add the ground sausage to the pot and cook the sausage until it is no longer pink.
- Add the rest of the ingredients to the Instant Pot and mix everything together.
- Cover the Instant Pot. Set the Instant Pot to >> high pressure >> 3 minutes >> quick release.
- Stir the beans and let them sit for 5-10 minutes before serving.

- Prep. Coarsely chop the onions, bell pepper, and jalapeño (or opt to leave the jalapeño out if you don't like heat).
- Cook. Make sure you are using a 2 quart or larger pot or Dutch oven. Cook the bacon over a medium heat. When it begins to brown, flip it, brown the other side, but remove it before it renders all its fat and gets hard. We want bacon that we can cut, not crumble. You will probably need to do the bacon in two batches. And what the heck, go ahead and cook an extra slice or two for the cook to eat when nobody is watching. Drain the bacon by putting it on 2 layers of paper towels on top of a section of the local newspaper.
- Pour off the bacon fat into a coffee cup leaving behind about 2 tablespoons and most of the brown bits dissolved in the fat. When the fat in the cup begins to cool, but before it hardens, move it to a plastic tub and store it in the fridge. You can use this later for cooking onions or veggies. Nothing perks up broccoli like bacon fat!
- Add the onions and peppers to the pot and cook them until they wilt. If the bacon bits stuck to the bottom start to get too dark, add an ounce of water and they will dissolve promptly with the help of a wooden spoon.
