3 cups chopped yellow onions (2 onions)
2 tablespoons good olive oil
2 teaspoons kosher salt
1 1/2 teaspoons freshly ground black pepper
3 (10-ounce) packages frozen chopped spinach, defrosted
6 extra-large eggs, beaten
2 teaspoons grated nutmeg
1/2 cup freshly grated Parmesan cheese
3 tablespoons plain dry bread crumbs
1/2 pound good feta, cut into 1/2-inch cubes
1/2 cup pignoli (pine nuts)
1/4 pound salted butter, melted
6 sheets phyllo dough, defrosted

Steps:

  • Preheat the oven to 375 degrees. In a medium saute pan on medium heat, saute the onions with the olive oil until translucent and slightly browned, 10 to 15 minutes. Add the salt and pepper and allow to cool slightly. Squeeze out and discard as much of the liquid from the spinach as possible. Put the spinach into a bowl and then gently mix in the onions, eggs, nutmeg, Parmesan cheese, bread crumbs, feta, and pignoli. Butter an ovenproof, nonstick, 8-inch saute pan and line it with 6 stacked sheets of phyllo dough, brushing each with melted butter and letting the edges hang over the pan. Pour the spinach mixture into the middle of the phyllo and neatly fold the edges up and over the top to seal in the filling. Brush the top well with melted butter. Bake for 1 hour, until the top is golden brown and the filling is set. Remove from the oven and allow to cool completely. Serve at room temperature.

1 (16 ounce) package frozen chopped spinach, thawed and drained
3 eggs
1 ½ cups heavy cream
½ teaspoon salt
½ teaspoon ground black pepper
½ teaspoon ground nutmeg
½ cup shredded Swiss cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a 9 inch pie pan with non-stick cooking spray.
  • Melt 2 tablespoons butter in a large saucepan over medium-high heat. Add onions and cook, stirring occasionally, until onions are soft. Squeeze extra water out of the spinach and add the spinach to the skillet. Continue cooking until the spinach is heated through and the extra water evaporates. Spoon mixture into pie pan.
  • In a large bowl, beat together eggs and cream. Stir in salt, pepper and nutmeg. Pour into pie pan, top with shredded Swiss cheese. dot with remaining 1 tablespoon of butter.
  • Bake 25 to 30 minutes until set and golden brown. Cool 5 minutes before serving.

1 pepperoni, chopped into small pieces

garlic salt or garlic powder, to taste
black pepper, to taste
2 lbs pizza dough (homemade or store bought)
1/4 cup olive oil

Steps:

  • Preheat oven to 350 degrees.
  • Cook the spinach according to package directions; drain well.
  • Combine with the black olives, pepperoni, mozzarella, garlic salt, and pepper.
  • Roll out the pizza dough on a lightly floured work surface.
  • Cut the dough into 12 equal pieces.
  • Place a portion of the spinach mixture on each piece of dough.
  • Close each piece of dough and seal to make a turnover.
  • Brush each turnover with olive oil.
  • Place on baking sheet.

2 to 3 tablespoons olive oil
2 yellow onions, diced
5 bunches scallions, chopped
1 cup chopped fresh dill
1 teaspoon ground nutmeg
1 teaspoon black pepper
1/2 teaspoon salt
6 pounds spinach, chopped
4 pounds feta cheese, crumbled
7 large eggs
2 pounds phyllo dough
2 pounds butter, melted

Steps:

  • Preheat the oven to 325 degrees F.
  • To a large pot, add the olive oil and saute the onions until browned. Add the scallions, dill, nutmeg, black pepper and salt.
  • Boil the chopped spinach until blanched and still bright green, stirring occasionally. Mix it together with the ingredients in the pot. Add the crumbled feta cheese and the eggs, making sure that the mixture is slightly cool so the eggs don't scramble. Mix well.
  • Brush 1 pound of the phyllo dough with melted butter, piece by piece, layering in a large enough tray to fit the phyllo sheets. Then add the spinach mixture on top and, piece by piece, layer and brush the rest of the phyllo on top. Mark the pieces with a knife and make sure the ends are tucked in, then sprinkle with a little water.
  • Bake for 45 minutes, or until golden brown.

1 small yellow onion, chopped
20 ounces frozen chopped spinach, thawed and squeezed dry
1 cup whole-milk ricotta
3 large eggs
1/4 cup crumbled feta
2 tablespoons chopped fresh dill

4 sheets frozen phyllo dough, thawed

Steps:

  • Preheat oven to 375 degrees. In a 10-inch nonstick, oven-safe skillet, melt butter over medium. Transfer 2 tablespoons to a small bowl. Add onion to skillet and cook, stirring, until softened, 5 minutes. Remove from heat and let cool slightly. Stir in spinach, ricotta, eggs, feta, dill, 1 teaspoon salt, and 1/4 teaspoon pepper.
  • Lay 1 sheet phyllo on a work surface and lightly brush with reserved melted butter. Lay over spinach mixture, folding edges under to fit inside skillet. (Keep extra phyllo covered while you work.) One at a time, brush remaining 3 sheets and add to skillet, rotating and scrunching each sheet slightly so edges are offset and top is ruffled. 2 (1 1/2 to 2 pounds total) fresh spinach
1 tablespoon olive oil
2 cloves garlic, thinly sliced
1/4 cup pine nuts
Coarse salt and freshly ground pepper

Steps:

  • Place golden raisins in a small bowl, and cover with 3/4 cup warm water; set aside. Remove any tough stems from spinach, and wash thoroughly. Set aside.
  • Place a wide, 6-quart saucepot over medium-high heat, and add olive oil. Add garlic, and saute for 1 minute. Add pine nuts. Cook, stirring constantly, until golden brown, about 1 minute. 1-1/2 teaspoons dried oregano
1-1/2 teaspoons dill weed

12 sheets phyllo dough (14x9-inch size)

Steps:

  • Preheat oven to 375°. In a large bowl, combine eggs, spinach, cheeses, walnuts, seasonings and, if desired, tomatoes; set aside. Brush a 10-in. cast-iron or other ovenproof skillet with some of the oil; set aside., Unroll phyllo dough. Place 1 sheet of phyllo dough on a work surface; brush with oil. (Keep remaining phyllo covered with a damp towel to prevent it from drying out.) Place in prepared skillet, letting edges of phyllo hang over sides. Repeat with an additional 5 sheets of phyllo, again brushing with oil and rotating sheets to cover the skillet., Spread spinach mixture over phyllo in skillet. The tortilla adds a delicious crunchy shell and it smells so good while it is cooking. I actually made up this recipe from items in my kitchen and couldn't believe how wonderful it tasted! It is now a hit in my family and so EASY to make. Please rate and give feedback. Update: Since I first made this five years ago, we still enjoy this at least once a month. I have found that I can alternate the ingredients to use up items I have in the fridge. I have used mushrooms, sauteed onions, cherry tomatoes and even feta cheese instead of cheddar cheese. And it always comes out fantastic. I have also found that there are times I need to use more or less eggs depending on the ingredients. Also, a glass pie pan is so much better than a metal as it toasts the tortilla just right. Such an easy recipe with gourmet taste!

5 jumbo eggs (or 7 large eggs)
2 tablespoons milk
3 roasted garlic cloves, crushed
1/4 teaspoon lemon pepper
1 dash salt
3 slices cooked bacon, chopped (optional)
1 large flour tortilla
1 1/2 cups any blend shredded cheese
3 cups fresh spinach

Steps:

  • Mix the first six ingredients (eggs, bacon, milk, garlic, lemon pepper and salt) in a bowl. Set aside.
  • Lay the flour tortilla in a glass pie dish, press gently - does not need to lay perfectly flat against dish. I don't spray it prior and have never had any issues with it sticking. Especially when made using a glass pie pan.
  • Sprinkle only 1/2 cup cheese on tortilla.
  • Sprinkle remaining cheese and the spinach onto tortilla in layers, and press gently. I don't chop or tear the spinach but you might opt to do this.
  • Pour egg mixture evenly over spinach, be careful not to pour any outside of tortilla as this causes it to stick to pan.
  • Bake in oven at 365 degrees for 35 to 45 minutes. Insert fork in center and it should come out clean.
  • Use sharp knife to cut into pie slices and serve hot.
  • Other options: Instead of garlic, you can use 1/4 cup onions. For added flavor, serve with homemade salsa.
