This makes a delicious breakfast for 4 points per serving. This recipe makes 4 servings. The recipe recommends using rare roast beef from your deli counter and ask for it sliced extra thick.

cooking spray
4 large eggs
4 large egg whites
1/8 cup club soda, 2 Tbsp
8 ounces deli roast beef, thickly sliced
1/8 teaspoon table salt (to taste)
1/8 teaspoon black pepper, freshly ground (to taste)
3 tablespoons steak sauce

Steps:

  • Coat a large nonstick skillet with cooking spray and set pan over medium heat.
  • In a medium bowl, whisk together eggs and eggs whites with club soda until frothy.
  • Cook eggs until underside is firm and then fold into an omelet to finish cooking, about 2 to 3 minutes; remove eggs from skillet and cover to keep warm.
  • Add roast beef to skillet and cook until warmed through, about 1 to 2 minutes.
  • Cut omelet into quarters and season with salt and pepper; serve each omelet quarter with 2 ounces of roast beef and 2 1/2 teaspoons of sauce.

I love egg salad and was thrilled when a friend passed this recipe along from a recent WW meeting. 3 delicious little points per serving.

Number Of Ingredients 8

4 large eggs
2 large egg whites, you'll have to boil these as whole eggs and discard the yolks
2 tablespoons fresh chives, chopped
2 tablespoons reduced-calorie mayonnaise (I used FF, less fat = less points!)
1/2 teaspoon Dijon mustard
1/2 teaspoon table salt
dill
1/4 teaspoon black pepper, freshly ground

Steps:

  • Place eggs in a medium saucepan and pour in enough water to cover them; set pan over high heat and bring to a boil.
  • Boil 10 minutes; drain and place eggs in an ice-water bath.
  • When eggs are cool enough to handle, remove shells.
  • Discard yolks from two of the eggs. Cut remaining whole eggs and whites into 1/2-inch pieces (or use an egg slicer).
  • Transfer eggs to a medium bowl. Add chives, mayonnaise, mustard, dill, salt and pepper; mix until blended.
  • Yields about 1/2 cup per serving.

2 large eggs
1/2 cup diced tomato
1/4 cup diced onion
1/4 cup diced scallion
1/4 cup kraft shredded fat-free cheddar cheese
4 -5 slices oscar mayer shaved deli meat, diced
1 thomas' light multi-grain English muffin (optional)

Steps:

  • Lightly brown the scallions and onions in olive oil.
  • Add eggs, tomatoes, and cheese.
  • Cook thuroughly.
  • Turn off stove, and add meat.
  • Enjoy with or without english muffin (2 pts).

  • Meanwhile, beat egg whites and eggs in large bowl. Stir in bell pepper, scallions, 1/4 cup salsa, cilantro, paprika, and black pepper.
  • Heat oil in large nonstick skillet set over medium heat. Add egg mixture and cook until eggs begin to set, about 1 1/2 minutes; push egg mixture toward center of skillet to form large soft curds, cooking until eggs are just set, about 2 minutes longer.
  • Lay tortillas on work surface. Top with 1/4 spinach. Spoon 1/4 egg mixture along center of each tortilla; top with 1/4 beef and 1 tbsp Monterey Jack. Fold top and bottom edges of tortillas over, then roll up to enclose filling. Place, seam side down, on prepared baking sheet.
