EASY BAKED FISH WITH LEMON AND HERBS
Easy baked fish with lemon and herbs, a simple and delicious dinner idea you can make in minutes.

Steps:
- Preheat oven to 350F degrees.
- Spray a baking dish with nonstick cooking spray.
- Add fish fillets to the prepared dish in one layer.
- Squeeze the juice from half the lemon over the fish.
- Sprinkle fish with dill, basil, all-purpose seasoning and parsley.
- Slice other lemon half into 4 thin slices and place one on top of each fillet.
- Cover with foil.
- Bake 10 to 15 minutes until fish flakes easily with fork. (Don't overcook of fish will be dry. The thinner the fillets, the quicker they'll cook.)

HEALTHY MEDITERRANEAN BAKED HADDOCK
Haddock is a mild-tasting, flaky white fish similar to cod. Here it is baked to perfection atop a sweet cherry tomato sauce spiked with salty capers and olives. Pair it with some crusty bread to soak up the juices.

- Preheat the oven to 425 degrees F. Combine the cherry tomatoes, white wine, olives, 3 of the garlic cloves, capers, honey, 1/2 teaspoon salt and a few grinds of pepper in a 9-by-13-inch baking dish.
- Pat the haddock fillets dry with a paper towel and season the flesh side with the Italian seasoning, paprika, 1 teaspoon salt and a few grinds of pepper. Nestle the fillets into the sauce in the baking dish. Bake until the sauce is bubbling around the edges and the fillets are cooked through and easily flaked with a fork, 15 to 20 minutes.
- Meanwhile, mix the remaining 1 garlic clove with the olive oil, 1/4 teaspoon salt and a few grinds of pepper in a small bowl. Brush both sides of each slice of bread with the oil mixture and place onto a baking sheet. Bake until the bread is toasted, 5 to 7 minutes.
- Serve the fish on plates with the sauce and bread on the side.

SIMPLE BAKED FISH IN FOIL WW
This is so simple, I can't believe I couldn't find it anywhere on zaar. The onion keeps the fish from drying out and gives a lovely mild flavor. We especially like Telipia, but any white fish can be used, as well as any of your favorite fish seasonings. We like lemon pepper or Dominant One (an all seasoning mix from hubby's Indiana hometown spice factory www.marionkay.com). Fresh fish from a camping trip is good also, in fact this method is great for outdoors, as it can be cooked on the grill for 20 min, clean up is a snap, just toss the foil.

- Bring a large pan of water to the boil and add the potatoes. Boil for 8-10 minutes until just tender, adding the sugar snaps and broccoli for the last 2 minutes. Drain well and run under cold water, then set aside.
- Preheat the oven to 180/160/Gas 4. Lay each haddock fillet onto an individual square of tin foil, and scrunch up the sides. Brush each fillet with the mustard, then squeeze over the orange and lemon juice. Bring the edges of the foil together to make a loose parcel and bake in the oven for 12-15 mins, until the fish is cooked through.
- Bring the rosemary, thyme and parsley together then roughly chop. Mix the orange & lemon zest with the breadcrumbs, and then spritz a non-stick frying pan with the low cal spray. Toast the breadcrumbs for 3-4 minutes until golden brown, then set aside.
- Meanwhile, lightly spray a griddle pan with low cal and heat until very hot. Thickly slice the potatoes and chargrill for 1-2 minutes on each side, along with the sugarsnaps and broccoli.
