3/4 cup fat-free mayonnaise
3 teaspoons Sweet 'n Low
1 dash cayenne pepper
garlic powder
celery seed
salt and pepper

  • Mix all ingredients together and serve.

Quick broccoli slaw stir-fry with chicken image

This speedy stir-fry cooks in just about the same time it takes to prepare instant brown rice. You can make it start to finish in about 15 minutes, which is why we love making stir-fries as an easy, flavorful weeknight dinner. This version features a quick sauté of scallions, ginger, and garlic, which then flavors the store-bought broccoli coleslaw. After letting the spinach wilt and teriyaki sauce deglaze, throw in some shredded roasted chicken, and your stir-fry is ready before you know it. Like most stir-fries, this recipe is extremely versatile; you can use kale instead of spinach, or lean turkey instead of the chicken.

2 tsp Canola oil or safflower oil
4 medium Uncooked scallion(s) sliced
1 piece(s) Ginger root (1-inch) peeled and minced
1 medium clove(s) Garlic clove(s) minced
1 pound(s) Store bought coleslaw broccoli variety
5 oz Fresh spinach baby variety
2 Tbsp Teriyaki sauce
8 oz Roasted skinless boneless chicken breast or baked or poached, shredded

Steps:

  • Heat the oil in a large nonstick skillet or wok; add the scallions, ginger, and garlic and stir-fry until fragrant, about 30 seconds. Add the broccoli slaw and cook until just softened, about 2 minutes.
  • Stir in the spinach, a handful at a time, and the teriyaki sauce; cook, stirring, until the spinach is nearly wilted, about 2 minutes more. Sprinkle with the chicken and heat thoroughly through; serve at once. Yields 1 1⁄4 cups per serving.

3 tablespoons plain low-fat Greek yogurt
3 tablespoons rice vinegar
1 1/2 teaspoons Dijon mustard
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
3 teaspoons olive oil
2 serving(s) sun maid raisins

Steps:

  • Add the broccoli slaw and raisins to a large mixing bowl.
  • Combine remaining ingredients in a measuring cup.
  • Whisk together until the dressing is smooth and emulsified.
  • Pour the dressing over the broccoli slaw. Stir well to combine.
  • Let broccoli slaw rest for at least 30 minutes or up to 4 hours, stirring occasionally to redistribute the dressing that will settle on the bottom of the bowl.

1 pkg. grated Broccoli slaw
2 cups pineapple chunks, drained
1/3 cup slivered almonds
1/3 cup cranraisins
1 apple diced
1 cup fat free mayo
2 Tablespoons vinegar (I use rice vinegar)
2 Tablespoons Splenda
1/2 teaspoon celery seed

Steps:

  • Drain your pineapple juice and add the pineapple to a bowl, along with the slaw, almonds, cranraisins, and diced apple. Combine your dressing ingredients and add to the above. Chill for 2 - 3 hours before serving.

1/3 cup rice vinegar
2 teaspoons minced green onions
1 pinch salt
3/4 cup dried cranberries
1 tablespoon dark sesame oil
1 teaspoon ginger
1 teaspoon mustard
10 ounces broccoli coleslaw mix
1/2 cup slivered almonds, toasted

Steps:

  • Combine orange juice, vinegar and shallots in the bowl you'll be serving slaw inches
  • Add good pinch of salt.
  • Add dried cranberries.
  • Let stand 5 to 20 minutes, as long as you can.
  • Whisk in sesame oil, ginger and mustard.
  • Taste and adjust seasonings. Add broccoli slaw and toasted almonds to bowl; toss to combine. Serve immediately.

1 cup cherry tomatoes, quartered
1/2 cup sweet onion, diced
3/4 cup fat-free Miracle Whip
2 tablespoons red wine vinegar
2 tablespoons Splenda sugar substitute

Steps:

  • Put broccoli,cauliflower, tomatoes and onion in a large bowl.
  • Mix Fat Free Miracle Whip, red wine vinegar, and Splenda until smooth (you may want to add more or less vinegar and Splenda to suit your taste).
