BEST CHICKEN TETRAZZINI
This is the number one most requested dish at my house. Even my picky pre-teen daughters love this. Legend has it that this dish is named after a nineteenth century opera singer, Luisa Tetrazzini. This dish MUST be made a day in advance.

Steps:
- Cook chicken in lots of water until done. Save the stock!
- Tear chicken into pieces and toss with onion salt and celery salt. Set aside.
- Cook 1/2 lb of spaghetti per label directions in the reserved chicken stock. (add more water as needed).
- Drain spaghetti and place in 9 x 13 baking dish.
- In a skillet heat 3 tbsp butter,1 tbsp lemon juice and 1/2 tsp salt until melted. Pour this mixture over cooked spaghetti and toss lightly.
- In same skillet slowly heat another 3 tbsp butter, 2 tbsp flour, 1/2 tsp pepper, 1/8 tsp nutmeg and 1/4 tsp paprika until smooth and thick. Remove from heat.
- Add whipping cream to above mixture and stir.
- Add the above to the chicken and toss.
- Spoon chicken evenly over spaghetti.
- Cover the chicken and spaghetti with 2/3 cup of grated Parmesan cheese.
- Cover and refrigerate overnight.
- Cook uncovered for 25 minutes in a 400 degree oven and enjoy!

- In a medium saucepan, melt butter or margarine and add the flour, stirring to prevent lumps. Cooking over medium heat, add milk gradually and stir until sauce is made.
- Add 3/4 Cup cheese, stirring until melted and well blended. The add the remaining ingredients.
- Stir gently until all the ingredients are combined and then pour into 9x13 baking dish.
- Top with remaining 1/4 C cheese and bake at 350 degrees 30-45 minutes.

CHICKEN TETRAZZINI
Chicken tetrazzini takes its name from the Italian opera star Luisa Tetrazzini, and was a mainstay of upscale restaurant menus of the early 20th century. Today, though, it is hardly fancy. (And definitely not Italian.) The recipe that follows is built on the frame of what might be called a Mississippi-style tetrazzini, made with canned tomatoes and chiles and processed cheese. The chef Brad McDonald, who grew up in Yazoo City, at the top of the Delta, used to cook a bespoke version for his tasting menu at the Lockhart, a restaurant in London, using washed-rind Irish cheese and a mixture of roasted green bell peppers and jalapeños to flavor his shredded chicken, along with porcini mushrooms and guajillo chiles. I made a few changes of my own, and discovered a weeknight casserole of great distinction.

- Turn broiler to high, and set a large pot filled with salted water over high heat to come to a boil. As oven heats, place the mushrooms in a small bowl, and pour boiling water over them, then leave them to soak for approximately 20 to 25 minutes, then strain and set aside.
- Place the poblanos on a small sheet pan, and set on the highest rack under the broiler so that the skin blackens, turning a few times so that the roasting is even, approximately 15 to 20 minutes. When the skin is blackened and blistered all over, place the peppers in a medium bowl, cover it with a plate and allow to rest.
- Make the sauce. Put the dried chiles in a medium pot set over medium-high heat, and allow them to cook until they become fragrant, approximately 5 to 7 minutes, then turn heat to low, and add the chicken stock, milk, garlic and shallots. Allow the mixture to cook at just below a simmer for approximately 10 minutes, or until the chiles have softened. Remove from heat, and pour into a blender, then add 6 ounces of the grated Cheddar, and process to a smooth consistency. Set aside.
- Meanwhile, remove the skin and seeds from the roasted poblanos, and cut them into thin strips. Set aside.
- Heat oven to 400. Cook the spaghetti in the boiling salted water in the large pot until just al dente, approximately 9 to 10 minutes. Drain, and rinse under cold water until cool, then drain again.
- Return the spaghetti to the cooking pot, and toss it with the roasted pepper strips, the mushrooms, the shredded chicken meat and the lemon juice, then season with salt and pepper. Transfer to a casserole dish, approximately 9 inches by 13 inches, and pour the reserved cheese sauce over it. Cover with the remaining shredded cheese, place in oven and bake until the cheese has melted and started to turn golden brown, approximately 20 minutes. Garnish with chopped parsley, if you like, and serve.

- Cook the spaghetti according to the package instructions.
- Dissolve the bouillon in a bowl of water.
- Add soup, celery salt, and pepper.
- Drain spaghetti; add soup to mixture.
- Stir in chicken, onion, pimentos and 1/2 cup of cheese.
- Transfer to a greased 8 inch square baking dish.
- Top with the remaining cheese.

- Heat oven to 425°F In a large nonstick skillet melt butter over medium-high heat. Add mushrooms; sauté 4 minutes or until browned. Sprinkle with flour and toss to combine. Add broth and half-and-half; cook, stirring often, until mixture comes to a boil. Reduce heat and simmer 2 minutes, stirring constantly. Stir in sherry, salt, pepper and nutmeg. Remove from heat and stir in chicken.
- Combine spaghetti and chicken mixture; toss gently and spoon into a 13 x 9-inch baking dish or shallow 3-quart baking dish or casserole; sprinkle with cheese. Bake 20 minutes or until golden brown and bubbly. Serves 6.

Steps:
- Melt 3 tbsp butter in medium saucepan over medium heat.
- Add garlic and cook 30 seconds.
- Add flour and cook stirring for 1 minute.
- Gradually whisk in broth, cream, ¼ tsp each salt and pepper, and pinch of nutmeg until smooth.
- Bring to a boil, whisking constantly and set aside.
- Heat oven to 450 degrees.
- Cook noodles in boiling salted water until barely tender about 8 minutes.
- Drain and place in bowl.
- Stir in 1½ cups prepared sauce.
- Melt remaining 1 tbsp butter in large skillet over medium-high heat.
- Add shallots and cook stirring 1 minute.
- Add shitake and white mushrooms, thyme, remaining ½ tsp salt and pepper and pinch of nutmeg.
- Cook stirring, until mushrooms are tender and liquid has evaporated about 5 minutes.
- Add sherry and boil for 1 more minute.
- Spoon half of noodles with ½ cup peas in shallow 2½-quart baking dish.
- Top with half of chicken the half of mushroom mixture.
- Repeat layering with remaining noodles, peas chicken and mushrooms.
- Pour remaining sauce evenly over top and sprinkle with Parmesan.
- Bake 15 minutes until golden and bubbly.

POTLUCK CHICKEN TETRAZZINI
The original dish was created in 1908 in San Francisco in honor of opera star Luisa Tetrazzini. There is a cooling and standing time of a total of 10 minutes. This was found in Better Homes and Gardens, May 2007 edition. This is so delicious and such great comfort food! Use both red & yellow peppers, they make it taste wonderful!

- Preheat oven to 350ºF.
- Remove meat from chicken; discard bones.
- Cut chicken pieces in chunks to equal 3 cups.
- Save remaining chicken for another use.
- In Dutch oven cook spaghetti according to package directions.
- Add asparagus the last 1 minute of cooking.
- Drain.
- Return to pan.
- Meanwhile, in large skillet cook mushrooms and sweet peppers in hot butter over medium heat for 8 to 10 minutes or until mushrooms are tender, stirring occasionally.
- Stir in flour and black pepper until well combined.
- Add broth and milk all at once.
- Cook and stir until thickened and bubbly.
- Add mushroom mixture, chicken pieces, Swiss cheese, and half the lemon peel to pasta mixture in Dutch oven.
- Toss gently to coat.
- Spoon pasta mixture into 3-quart rectangular baking dish.
- In a medium bowl toss together bread cubes, olive oil, and remaining lemon peel.
- Spread bread cube mixture on pasta mixture.
- Bake, uncovered, for 15 minutes or until heated through.
- Let stand for 5 minutes before serving.
- Sprinkle with parsley before serving.
