TANGY CAROLINA-STYLE BARBEQUE SAUCE
This sauce is thinner, more tangy and less rich than your typical southwestern-style sauce. There is no molasses or tomato-based products in this sauce. This sauce works great on ribs, pulled pork, and chicken.

- Combine yellow mustard, cider vinegar, brown sugar, white sugar, water, vinegar, chili powder, black pepper, white pepper, cayenne pepper, and soy sauce in a saucepan over medium-low heat; cook and stir until flavors blend, about 20 minutes. Add butter and liquid smoke flavoring and simmer for 10 minutes more.

TANGY BARBECUE SAUCE

- Combine all of the ingredients in a small saucepan; bring to a boil, stirring occasionally. Reduce heat; cover and simmer for 30 minutes., Discard bay leaf. Use as a basting sauce when grilling chicken, pork or beef.

- In a medium saucepan, cook the onion in the olive oil over medium heat until softened, about 3 minutes.
- Add the chili powder and cumin and cook, stirring, for 1 minute.
- Stir in the vinegar, beer, ketchup, Worcestershire sauce, brown sugar, and mustard.
- Add the garlic, Tabasco, salt and pepper.
- Bring to a boil, reduce the heat to medium low, and simmer for about 15 minutes, or until the sauce is slightly thickened.

- For the tangy barbecue sauce: Heat the oil in a small saucepan over low heat. Add the onion, garlic, and jalapeño and cook until softened, about 5 minutes. Stir in the remaining sauce ingredients. Bring to a boil, and then reduce the heat to low and let the sauce simmer, uncovered, until thickened, about 10 minutes. Stir often to prevent the bottom from sticking or burning. Remove the sauce from the heat and set aside to cool for 10 minutes. Once the sauce has cooled, process the sauce in a blender until smooth.
- Pour 1 cup of the tangy barbecue sauce and ¼ cup of water over the beans and bacon and mix well. Once the smoker has reached the desired temperature, add two Weber Firespice apple or hickory wood chunks (or a combination of both) to the charcoal.
