3 Tbsp. butter or margarine, divided
3 Tbsp. JELL-O Watermelon Flavor Gelatin (about 1/2 of 3-oz. pkg.)
1 pkg. (10 oz.) JET-PUFFED Miniature Marshmallows, divided
6 cups KELLOGG'S® RICE KRISPIES® cereal, divided
8 to 10 drops green food coloring
1 Tbsp. semi-sweet chocolate chips

Steps:

Microwave 2 Tbsp. butter in large microwaveable bowl on HIGH 25 sec. or until melted. Stir in dry gelatin mix. Microwave 15 sec.; mix well. Add 3 cups marshmallows; toss to evenly coat. Microwave 1-1/2 min. or until marshmallows are completely melted and mixture is well blended, stirring after 45 sec. (Bowl might be hot.) Add 3 cups cereal; mix well.
Press cereal mixture into 6-inch circle in center of 8-inch round pan sprayed with cooking spray.
Microwave remaining butter in separate large microwaveable bowl 25 sec. or until melted. Add remaining marshmallows; toss to coat. Microwave 1-1/2 min. or until marshmallows are completely melted and mixture is well blended, stirring after 45 sec. Stir in food coloring. Add remaining cereal; mix well. Press to form rim around cereal mixture in pan.
Press chocolate morsels into cereal mixture in center as shown in photo. Cool completely before cutting into wedges.

1 package (10 ounces) miniature marshmallows
3 tablespoons canola oil
1 teaspoon watermelon extract, optional
6 cups Rice Krispies
1/4 teaspoon pink paste food coloring
1/8 teaspoon red paste food coloring
1/4 teaspoon green paste food coloring
1/3 cup miniature semisweet chocolate chips

Steps:

In a microwave or in a large saucepan over low heat, melt marshmallows, oil and extract if using; stir until smooth. Remove from heat; remove half of the mixture to another saucepan over low heat. Stir in the green coloring; add 3 cups cereal and stir to combine. Stir the pink coloring and red coloring to remaining marshmallow mixture; add remaining 3 cups cereal and stir to combine. Press half of the green mixture around inside edge of 2 lightly-greased 9-in. round cake pans using wax paper or a lightly-greased spatula. Pack the center with half the pink mixture; press half the chocolate chips into the surface of the pink portion. In a second cake pan, repeat with remaining mixtures. Cool to room temperature. Cut each portion into 12 wedges.

Melt butter over medium heat in a medium saucepan. Add miniature marshmallows, reserving 1 cup for later. Stir until marshmallows are melted. Add 1 tsp vanilla and strip to combine.
In a large bowl, pour melted marshmallows over Rice Krispies. Mix together. Stir in the last cup of mini marshmallows and stir to combine.
Divide mixture into 2 bowls, putting about 2/5 in one bowl and 3/5 in another. Use food coloring to color the smaller amount green and the larger amount red.

Ingredients. I used the standard Rice Krispie Ceral Treat recipe. I had to double it to make mini watermelon. So buy 1 large box of cereal and 2 bags of strawberry marshmallows.
Watermelon Skin. The skin of the watermelon is made from fondant. Do not use pre-made fondant from a bucket. Make you own. The recipe I used is from Peggy Weaver's site.
Watermelon Insides. Clean up from the previous step. I made my treats using the microwave. I first melted three tablespoons of butter. Then add one bag of StrawberryMallows and coat with butter.
Forming the Melon. Use your hands and starting shaping in to melon. My wife thought it looked like raw hamburger and my daughter thought it looked like a brain.
Finshing Touches. Wrap the Rice Krispie shape up in the fondant and work out and seams. You can add more stripes over the green and just smooth them in.
