- Over medium heat, bring honey, water, and fresh mint to a boil, whisking occasionally. Once the syrup has reached a boil, remove from heat and allow to cool to room temperature, about 30 minutes or so.
- With a blender or food processor, puree watermelon and lemon juice together. Strain the mixture through a sieve to remove the pulp (if you do not mind pulp, you can skip this step).
- Pour the watermelon juice and lemon juice into a large pitcher.
- Remove mint from simple syrup, and pour the syrup into the pitcher.
- Add in 3 cups of water (this is to taste, so you can add more/less water until it reaches your desired flavor).
- Stir the mixture.
- Refrigerate until ready to serve.
- Serve with ice, lemon wedges, or fresh mint, if desired.

- In a blender, puree watermelon in batches until smooth; pour through a fine-mesh sieve into pitcher (you should have about 8 cups of juice). Stir to combine. (Refrigerate, covered, up to 3 days.) Add vodka, if using; serve over ice.

- Cut the top off the watermelon and hollow it out using a large spoon, fishing out any pips along the way. Mash the flesh through a sieve into a bowl. Put the flesh in a blender (or use a tall jug and hand blender) with the lemon juice and sugar, whizz to a purée, then stir in the soda.
- Heap some ice into the hollowed-out watermelon and fill it with the lemonade mixture. Serve the rest in a jug with the lime slices and mint. Have a bowl of extra crushed ice on the side so people can help themselves.

- 1. Make the lemon mint simple syrup. Combine water, sugar, mint leaves, and one of the halves of lemons in a small saucepan. Bring up to a boil and then simmer 3-5 min or until all the sugar is dissolved. Set aside for about an hour to cool. After cooled strain mint leaves out.
- 2. I like my watermelon juice pulp-free. I use a seedless watermelon, cut in cubes. Puree in a food processor or blender. Pour through a fine sieve using the back of a large spoon to push on the pulp. Discard pulp and repeat the process until you have about 4 cups of watermelon juice.
- 3. Juice lemons... it takes about 3-4 large lemons.
- 4. Mix watermelon juice, lemon juice, and simple syrup mixture in a pitcher. Drop 5-6 large mint leaves in the pitcher for extra mint flavor. Mix well.
- 5. Serve over ice garnished with a lemon slice and mint leaf.
- 6. This can easily be made into an adult beverage by adding a shot of vodka to one serving. Store leftovers in the refrigerator. The mixture will separate but just remix it. Keeps well for several days.

- Place watermelon, lemon juice, sugar, and salt in a blender and blend on high speed until smooth, about 1 minute. Strain through a fine mesh strainer into 1-quart liquid measuring cup. Add cold water to equal 1 quart.
- Place mint in the botton of a pitcher and muddle lightly with a wooden spoon. Add watermelon mixture and stir to combine. Add ice. Serve immediately in ice-filled glasses garnished with mint sprigs.

- Make a simple syrup by combining 1/2 cup sugar and 1/2 cup water in a small pan over medium-high heat. Heat the liquid just until the sugar is complete dissolved, 5-6 minutes. Set the simple syrup aside to cool.
- Pulse the watermelon in a blender until smooth. (You may need to do this in 2 batches.) Strain the pureed watermelon through a fine mesh collander into a large bowl. Discard the pulp and rinse the blender container out with water.
- Return the watermelon liquid to the blender. Add the lemon juice and mint and blend until the mint is very finely chopped. Transfer the Watermelon Mint Lemonade to a juice pitcher. Slowly adjust for your desired sweetness by adding simple syrup to the lemonade. (I found that I needed only about half of the simple syrup, but depending on the sweetness of your watermelon, this may vary.)
