This is a recipe I stumbled upon one hot lazy afternoon. Don't be scared by the ingredients, they work together to make a very tasty and refreshing salad. Go ahead and try it - be prepared for a pleasant surprise!

¾ cup halved, thinly sliced red onion
1 tablespoon fresh lime juice
1 ½ quarts seeded, cubed watermelon
¾ cup crumbled feta cheese
½ cup pitted black olive halves
1 cup chopped fresh mint
2 tablespoons olive oil

Steps:

  • Place the onion slices in a small bowl with the lime juice. The acid of the lime will mellow the flavor of the raw onion. Let stand for 10 minutes.
  • In a large bowl, combine the watermelon cubes, feta cheese, black olives, onions with the lime juice, and mint. Drizzle olive oil over it all, and toss to blend. Dig in and be prepared for a pleasant surprise!

I made up this salad one day when I bought a watermelon on special and didn't know what to do with it. It sounds unusual but it really works... It's great as a fresh starter or as an accompaniment to grilled fish or even a hot spicy curry to act as a cooler.

1 red onion, thinly sliced
2 limes, juiced
½ watermelon, cut into bite-sized cubes
1 (4 ounce) package Greek feta cheese, cubed
20 pitted black olives
2 tablespoons chopped fresh cilantro
2 tablespoons chopped fresh parsley
2 tablespoons extra-virgin olive oil
salt and ground black pepper to taste
1 teaspoon brown sugar

Steps:

  • Mix red onion and lime juice together in a bowl. Refrigerate until onion turns bright pink, about 30 minutes.
  • Add watermelon, feta cheese, olives, cilantro, parsley, and olive oil to the onion mixture; mix well. Season with salt and pepper. Add brown sugar if lime juice tastes too sharp.

1 small red onion
2 -4 limes, depending on juiciness
48 ounces watermelon, flesh- sweet ripe
9 ounces feta cheese
1 bunch flat leaf parsley, chopped (optional)
1 bunch mint, chopped
3 -4 tablespoons extra virgin olive oil
4 ounces pitted black olives
black pepper

Steps:

  • Peel and halve the red onion and cut into very fine half-moons and put in a small bowl to steep with juice of two limes (more if they are dried up) to bring out the transparent pinkness in the onions and diminish their "onion-ness.".
  • Remove the rind and seeds (if necessary) from the watermelon, and cut into approximately 1 1/2 inch triangular chunks or use a melon baller. Cut the feta into similar sized pieces and put them both into a large, wide shallow bowl. Add chopped mint, along with sprigs of parsley if desired.
  • Pour onions, along with their juices, over the salad in a bowl, add olive oil and olives, then using your hands toss the salad gently so that the feta and melon don't lose their shape. Add a grinding of black pepper and taste to see whether the dressing needs more lime.

2 -3 limes, juice of
1/2 lb feta cheese, cut into 1 inch cubes
4 cups watermelon, cut into 1 inch cubes
1/2 cup pitted oil-cured black olive
1 cup whole flat leaf parsley
1/4 cup chopped of fresh mint
3 tablespoons extra virgin olive oil
1/8 teaspoon fresh ground black pepper

Steps:

  • Place the onion slices in a small bowl, add the juices from the limes; set aside.
  • In a large bowl, combine the feta cheese cubes with the watermelon cubes, the black olives, parsley, mint, olive oil, and pepper.
  • Add the onion and lime juice mixture and gently toss to combine.

  • Cut watermelon into bite sized pieces and place in a large bowl.

½ a watermelon (about 1.5kg), peeled, deseeded and cut into chunks
200g block feta cheese , cubed
large handful black olives
handful flat-leaf parsley and mint leaves, roughly chopped
1 red onion , finely sliced into rings
olive oil and balsamic vinegar, to serve
½ a 500g pack white bread mix
1 tbsp olive oil , plus a little extra for drizzling
plain flour , for dusting
1 egg white , beaten
a mix of sesame seeds , poppy seeds and fennel seeds, for scattering

Steps:

  • Make up the bread according to pack instructions with 1 tbsp olive oil. Leave to rise in a warm place for about 1 hr until doubled in size. Heat oven to 220C/200C fan/gas 7. Knock the bread back and divide into 6 pieces. On a floured surface, roll the breads out as thinly as possible, then transfer to baking trays. Brush with the egg white and scatter with the mixed seeds. Bake for about 15 mins until crisp and brown; if they puff up, even better. You may need to do this in batches. The breads can be made the previous day and kept in an airtight container.
  • In a large serving bowl, lightly toss the melon with the feta and olives. Scatter over the herbs and onion rings, then serve with the olive oil and balsamic for drizzling over. Serve the pile of crispbreads on the side for breaking up and using to scoop the salad.

3 large ripe tomatoes, preferably green or orange heirlooms, seeded and cut into 1-inch cubes
1 medium red onion
2-4 limes, depending on amount of juice
4 tablespoons chopped fresh mint
1 bunch fresh flat leaf parsley
3-4 Tbsp. olive oil
100 gm pitted black olives (optional)
250g feta

Steps:
