1 bunch frisée (French curly endive; 8 oz), trimmed
2 bunches watercress, tough stems discarded
1/3 cup fresh mint
3 scallions, thinly sliced
3 to 4 tablespoons extra-virgin olive oil
1 tablespoon aged red-wine vinegar or lemon juice, or to taste
1/2 cup pine nuts, toasted and salted

Steps:

  • Toss together frisée, watercress, mint, and scallions. Drizzle with just enough oil to coat, tossing. Add vinegar and salt to taste and toss again. Sprinkle with nuts.

1 clove garlic, smashed
Kosher salt
1 tablespoon mayonnaise
1 teaspoon anchovy paste (optional)
1/2 teaspoon Dijon mustard
2 tablespoons fresh lemon juice
3 tablespoons extra-virgin olive oil
1/4 cup plus 2 tablespoons grated Parmesan cheese
Freshly ground pepper
12 ounces watercress (three 4-ounce bags), tough stems trimmed
1/2 cup roasted unsalted almonds, chopped

Steps:

  • Mash the garlic and 1/2 teaspoon salt with a fork in the bottom of a large salad bowl. Stir in the mayonnaise, anchovy paste and mustard. Whisk in the lemon juice, then the olive oil. Stir in 2 tablespoons Parmesan and season with salt and pepper.
  • Add the watercress to the bowl and toss to coat in the dressing. Top with the almonds and remaining 1/4 cup Parmesan.

1 heart of romaine, coarsely chopped
1 ripe lime, juiced
1 teaspoon sugar
3 tablespoons extra-virgin olive oil, eyeball it
Coarse salt and pepper

Steps:

  • Combine watercress, mint, parsley and romaine in a small salad bowl. Combine lime juice and sugar in a small dressing bowl. Whisk oil into lime juice in a slow stream. Pour dressing over the salad and season with salt and pepper, to your taste.

1 grapefruit, supremed, plus 4 teaspoons grapefruit juice

Steps:

  • Combine the watercress, grapefruit supremes and juice, orange supremes and juice, olive oil and some salt and pepper in a large bowl. Gently toss to combine. Serve immediately.

400g (podded weight) fresh or frozen broad beans
small pack mint , leaves picked and very finely chopped
4 tbsp extra virgin olive oil
100g bag watercress
100g feta , crumbled
25g pine nuts , lightly toasted

Steps:

  • Put the broad beans in a bowl, pour over boiling water from the kettle, then drain and transfer to a bowl of cold water.
  • Remove the skins from the broad beans by splitting them with your fingernail and slipping out the bean. Make the dressing by combining the mint and olive oil in a small bowl. Season generously.
  • Toss the watercress with the broad beans, feta and the dressing. Scatter with the pine nuts and serve.

regular table salt
1 head garlic, separated into cloves, peeled and thinly sliced
3/4 cup olive oil
3 tablespoons fresh lemon juice
1 teaspoon sea salt
1/2 teaspoon fresh ground pepper
1 bunch fresh flat-leaf parsley, about 1/4 lb, stemmed (Italian)
1 bunch of fresh mint, about 1/4 pound, stemmed
2 bunches watercress, about 10 oz total weight, stemmed

Steps:

  • Bring a small saucepan three-fourths full of water to a boil and add table salt to taste. Add the garlic and parboil for about 3 minutes to soften slightly and mellow the flavor. Drain and let cool.
  • Place the cooled garlic in a small bowl and add the oil, lemon juice, sea salt and pepper. Whisk to dissolve the sea salt and form a dressing.
  • In a salad bowl, combine the parsley, mint and watercress. Drizzle the dressing over the greens and toss to coat evenly. Serve immediately.
