SALMON FILLETS WITH A WASABI COATING

Salmon Fillets with a Wasabi Coating image

Yield Makes 2 servings

Number Of Ingredients 13

For the Rice:
3/4 cup/100 g wild rice
1 large beet
1 pomegranate
1 tablespoon olive oil
A small handful of chopped fresh mint
Salt and pepper
For the Wasabi Coating:
2 tablespoons mayonnaise
1/2 teaspoon ground cumin
1 teaspoon wasabi paste or powder mixed to a paste with water
2 salmon fillets, about 6 ounces/175 g each
Salt and pepper

Steps:

  • In a saucepan, cook the wild rice (two parts water to one part rice) by boiling for 45 minutes. Leave to the side to cool.
  • Meanwhile, in another saucepan, cover the beet with water; bring to a boil, then reduce the heat and simmer for about 30 minutes, until the beet is tender. Drain, and when cool enough to handle, peel off the skin and cut the beet into coarse chunks.
  • Chop the pomegranate in half and extract the seeds. Add the pomegranate, beet, olive oil, and mint to the rice. Leave to the side.
  • Make the wasabi coating by mixing together the mayonnaise, cumin, and wasabi. Taste and adjust if you want. Preheat the oven to 350°F/180°C.
  • Wash and dry the salmon, and season. Heat a griddle or ovenproof frying pan big enough to fit both salmon fillets and, when it is searing hot, drop in the salmon, skin-side down. Turn after 5 minutes or when the skin is brown and crispy. Take off the heat, carefully turn again, and spoon the wasabi coating onto the top of the salmon. Put the pan into the oven and cook for around 10 minutes, until the coating begins to brown. Serve on the wild rice.

Categories     Lunch/Snacks

Time 25m

Yield 6 patties

Number Of Ingredients 10

1 (14 ounce) can salmon (boneless or skinless)
1/4 cup low-fat mayonnaise (I like Hellmann's Just 2 Good)
1/4 cup plain breadcrumbs
1 egg, beaten
2 tablespoons wasabi (!!)
1 teaspoon tamari or 1 teaspoon soy sauce
1 tablespoon rice vinegar or 1 tablespoon lemon juice
1/4 cup finely chopped red bell pepper
extra breadcrumbs
cooking spray

Steps:

  • Mush the top ingredients together in a big bowl; Adding extra breadcrumbs till the texture is workable.
  • Roll into balls and flatten into patties.
  • Press the patties into the extra breadcrumbs.
  • Spray tops with Pam, flip and spray bottoms.
  • Cook in large skillet over medium-high heat until nice and brown and firm to the touch.
  • You can use the same technique with Tuna.
  • I like that to have an italian flavor, so I take out the wasabi and soy and add basil and oregano and shredded mozzarella.
  • They are great with pasta sauce.

TEA SMOKED SALMON WITH WASABI LATKES

Tea Smoked Salmon with Wasabi Latkes image

Provided by Ming Tsai

Categories     main-dish

Number Of Ingredients 20

1 pound salmon fillet, center cut, skin off
1/2 cup mirin
1/2 cup water
1 tablespoon sugar
1 tablespoon salt
1/4 cup ginger julienne
1 teaspoon toasted Szechwan peppercorns
1 cup long grain rice
1 cup sugar
1 cup oolong tea or black lychee tea
2 cups warm riced potatoes (boiled in salted water, drained well)
1 tablespoon butter
1/4 cup sliced green scallions
1 tablespoon horseradish
1 tablespoon wasabi powder mixed with a little water to form paste
Salt and black pepper
Salt and black pepper
1 cup all-purpose flour
3 eggs, beaten
1 cup panko bread crumbs

Steps:

  • Cut the salmon in 4 equal pieces and place in a small hotel pan or baking dish. In a bowl, mix together mirin, water, sugar and salt, stir until dissolved. Add ginger and peppercorns to liquid. Pour brine on salmon and marinate for 1 hour. Pull salmon out of brine and place in a bamboo steamer.
  • In a wok lined with foil add the rice, sugar and tea. Mix well and turn wok on medium heat. When mixture starts to smolder, place bamboo steamer on top. Seal the seam between the bamboo steamer and wok with wet cloths. Turn wok down to low and smoke for 15 minutes. Turn wok off and let smoke another 15 minutes. Salmon will be about medium rare and should be served warm.
  • For the "latkes": In a bowl, mix warm potatoes and butter. Mix in scallions, horseradish and wasabi. Season with salt and pepper. Shape potato mixture into 2 1/2 inch diameter cakes. Dredge the cakes in flour followed by egg and finally panko. Deep fry cakes at 350 degrees until golden brown.
  • Plating: Put a small mound of apple salad in the center of the plate, a potato cake on top and the salmon on top of the cake. Drizzle emulsion around the plate and garnish with chives.

ASIAN SALMON CAKES WITH CREAMY MISO AND SAKE SAUCE

Asian Salmon Cakes with Creamy Miso and Sake Sauce image

A tasty flavorful appetizer, or great as a meal that uses lots of wonderful Asian flavors! You can also easily substitute for the ingredients and use leftovers too such as corn instead of onions, leftover salmon (BBQ'd, broiled or baked) instead of fresh or canned - and they still turn out great! A-plus crowd pleaser!

Time 30m

Yield 6

Number Of Ingredients 16

1 tablespoon vegetable oil
1 teaspoon sesame oil
2 cloves garlic, chopped
1 green onion, chopped
1 tablespoon miso paste
1 cup heavy cream
¼ cup sake
¼ cup fresh lime juice
1 ½ cups dry bread crumbs
1 (7 ounce) can salmon, drained and flaked
⅓ cup chopped onion
¼ cup chopped fresh cilantro
1 egg
1 tablespoon soy sauce
1 tablespoon water
2 tablespoons vegetable oil

Steps:

  • Heat the vegetable oil and sesame oil in a large skillet over medium heat. Add the green onion and garlic, and cook until tender. Stir in the miso paste and sake until blended. Bring to a simmer then stir in the cream and lime juice. Return to a simmer and cook until thickened, about 7 minutes. Remove from heat and set aside.
  • In a medium bowl, stir together the bread crumbs, salmon, onion, and cilantro. IN a small bowl, whisk together the egg, soy sauce and water using a fork. Stir about half of this into the salmon mixture, and if it seems dry, stir in a little more until the salmon mixture will stick together in patties.
  • Heat the oil in a large skillet over medium-high heat. Form the salmon mixture into 2 inch patties for appetizers, or 4 inch patties for a main dish. Fry patties for about 4 minutes per side, or until golden brown. Serve with the sauce drizzled over, or separately for dipping.
