WASABI SALMON CAKES
These are amazing. My husband couldn't believe I made them the first time we ate these. These are truly restaurant quality and so easy too! This recipe was given to me by an online friend.

Steps:
- Mush the top ingredients together in a big bowl; Adding extra breadcrumbs till the texture is workable.
- Roll into balls and flatten into patties.
- Press the patties into the extra breadcrumbs.
- Spray tops with Pam, flip and spray bottoms.
- Cook in large skillet over medium-high heat until nice and brown and firm to the touch.
- You can use the same technique with Tuna.
- I like that to have an italian flavor, so I take out the wasabi and soy and add basil and oregano and shredded mozzarella.
- They are great with pasta sauce.

WASABI AND MISO SALMON CAKES
Healthy oven baked salmon cakes to be eaten as an appetizer or main dish.

Steps:
- Heat the oil and saute the finely chopped onion until soft and translucent, set aside to cool down. In a large bowl crumble the drained salmon then add the chives and mix to combine well, set aside. In a separte bowl mix the miso paste, wasabi paste, ground ginger, and water, stir until well incorporated. Pour the paste mix into the salmon bowl and stir until all of the ingredients are well incorporated.
- Add the cooled sated onion to the bowl, again mixing until well combine. Mix the egg and the breadcrumbs/Panko into the salmon mixture. Keep mixing until the ingredients have a thick consistency and it can easily be gathered. Cover and place in the refrigerator at least 2 hours or overnight.
- Preheat oven to 375F or 190C. Bake for 15 minutes then flip and bake another 10 minutes.
ASIAN SALMON CAKES WITH CREAMY MISO AND SAKE SAUCE
A tasty flavorful appetizer, or great as a meal that uses lots of wonderful Asian flavors! You can also easily substitute for the ingredients and use leftovers too such as corn instead of onions, leftover salmon (BBQ'd, broiled or baked) instead of fresh or canned - and they still turn out great! - Heat the vegetable oil and sesame oil in a large skillet over medium heat. Add the green onion and garlic, and cook until tender. Stir in the miso paste and sake until blended. Bring to a simmer then stir in the cream and lime juice. Return to a simmer and cook until thickened, about 7 minutes. Remove from heat and set aside.
- In a medium bowl, stir together the bread crumbs, salmon, onion, and cilantro. IN a small bowl, whisk together the egg, soy sauce and water using a fork. Stir about half of this into the salmon mixture, and if it seems dry, stir in a little more until the salmon mixture will stick together in patties.
- Heat the oil in a large skillet over medium-high heat. Form the salmon mixture into 2 inch patties for appetizers, or 4 inch patties for a main dish. Fry patties for about 4 minutes per side, or until golden brown. Serve with the sauce drizzled over, or separately for dipping.

- Heat oven to 400°F. Spray cookie sheet with cooking spray. Place salmon, skin side down, on cookie sheet. Sprinkle with 1 teaspoon of the salt and the pepper; drizzle with oil.
- Bake 15 to 20 minutes or until salmon flakes easily with fork.
- Meanwhile, in food processor, place mayonnaise, cilantro, garlic, gingerroot, wasabi powder, lime juice, sugar and remaining 1/4 teaspoon salt. Cover; process with on-and-off pulses until cilantro is finely chopped.
- Transfer salmon to individual serving plates; top with wasabi sauce. Sprinkle with onions.

WASABI SALMON WITH MISO-SESAME SAUCE

- In a small bowl, combine miso paste, soy milk, and sesame seeds. Stir until the miso is completely dissolved. Set aside.
- Combine ginger, cayenne pepper, sake, tamari, and wasabi in a zippered plastic bag; blend well. Add salmon; seal and toss to coat. Marinate for 1 hour.
- Preheat oven to 400 degrees. Place salmon on a greased baking sheet, discarding marinade. Bake until fish flakes easily with a fork, about 13 minutes.
- Remove salmon. Transfer to a warm serving plate. Drizzle miso sauce over fillets. Garnish with flowers. Serve warm.

MISO SALMON BURGERS
Steps:
- Heat 1 teaspoon of the oil in a large nonstick pan over medium heat. Saute the garlic, ginger and scallions until softened, 1 to 2 minutes. Add the miso paste and soy sauce until well mixed. Remove from the heat and let cool while you prepare the salmon.
- Dice the salmon, then roughly chop until you can mix it like a meatball. Add to a large bowl.
- Add the miso mixture to the salmon. Stir to combine. Add the panko and egg to the salmon and mix together to bind the burger. Form into small "mini" burgers, about 4 ounces each.
- Heat the remaining 1 teaspoon oil in the same skillet over medium heat. Add the burgers and cook about 2 minutes per side, or to your liking.
PAN-SEARED SALMON SERVED WITH WASABI MASHED POTATOES
Steps:
- Preheat the oven to 350 degrees F.
- Season the salmon with salt and pepper. In a large saute pan, over high heat, add the olive oil. Pan-sear the salmon fillets until golden on both sides, about 2 minutes on each side. Transfer to a preheated oven and continue to cook until medium done.
- Serve over a bed of Wasabi Mashed Potato, with half of the Miso and Plum Sauce drizzled over and with Cilantro and Mint Vinaigrette. Garnish with julienned green onions and sprigs of cilantro.
- In a blender or food processor, process the spinach and watercress to a fine puree. Pass through a tamis or stainer. Reserve.
- Cook the potatoes in salted, boiling water until done. Pass through a ricer. Whisk in hot heavy cream and butter, 1 small piece at a time. Just before serving, stir in wasabi paste and puree of spinach and watercress. Stir until well incorporated. Season, to taste, with salt and pepper.
- In a medium saucepan, heat the peanut oil. Over medium heat, add the garlic, shallots, ginger and green onions and saute until glossy and lightly browned, about 5 minutes. Stir in star anise and black peppercorns. Continue to saute until aromatic, about 1 to 2 minutes.
- Deglaze with the plum, port and red wines. Reduce until only about 1 cup of liquid remains. Add the lamb demi-glace and chicken stock. Bring to a boil and lower to a simmer. Continue to simmer until slightly thickened. Stir in the raspberry puree, red miso paste and neriume. Continue to reduce until glossy.
- Stir in the butter. Season, to taste, with salt and pepper. If too tart, add a pinch of sugar. Strain through a chinois and keep warm until needed.
- In a small bowl combine the mustard powder and the water and stir to make a paste and set aside. In a blender, combine the cilantro, mint, egg yolk, peanuts, cashews, lemon juice, pickled ginger, vinegar and reconstituted mustard. Process to a puree. While the motor is running, slowly add the peanut oil until emulsified. Season to taste with salt, pepper, and sugar. Refrigerate until needed. Use half of the vinaigrette for the lamb and reserve half for the salmon.

MISO GLAZED SALMON
Steps:
- To make the glaze: In a large bowl combine the miso paste, soy sauce, sugar, sesame oil, and garlic.
- Preheat grill to medium.
- Brush salmon fillets with the glaze. Grill over medium direct heat and continue brushing with glaze throughout cooking process.
ASIAN SALMON CAKES WITH SESAME-WASABI CREAM

- In a medium bowl, gently combine the salmon, bread crumbs, egg, cilantro, cumin, and 2 tablespoons of the mayonnaise until combined. Shape mixture into 4 patties, each about 1-inch thick.
- In a small bowl, add the sesame oil and wasabi paste to the remaining 1/4 cup mayonnaise and mix well. Set aside.

- Stir together the miso, mirin, sugar and sake, if using. Place the salmon fillets on a plate or in a medium food bag and cover with the miso marinade. Leave in the fridge for at least 30 mins or, better still, overnight.
- Heat oven to 200C/fan 180C/gas 6. Lightly oil a baking tray. Use kitchen paper to wipe off the marinade (don't be tempted to wash it off as you will lose some of the flavour). Place the fillets on the baking tray, skin side down. Cook in the oven for 15 mins until the fish flakes easily and is cooked through.
- Meanwhile, make the cucumber salad. Using a vegetable peeler, shave the cucumber into long, thin ribbons. Whisk together the rice wine vinegar, oil and sugar. Toss the cucumber ribbons in the dressing, then curl them up on two plates. Serve with the salmon and some plain white rice sprinkled with toasted sesame seeds.

MISO SALMON LETTUCE WRAPS WITH WASABI CUCUMBERS

- Combine the miso, sesame oil, and soy sauce. Spread the miso mixture evenly over the salmon.
- While the grill is heating, prepare the cucumbers. Peel 4-5 strips from the cucumber. Cut off both ends and quarter it lengthwise. Cut the quarters crosswise into thin slices and transfer them into a serving bowl. Make the dressing for the cucumbers and set it aside.
- When the cucumbers are prepped, put the salmon on the grill. Immediately lower the heat to medium and cook until just done. This will take anywhere from 8-15 minutes depending on the thickness of your fillets. Start checking the salmon early to make sure it doesn’t get overcooked.
