2 pounds baby red potatoes, skin on
3 cloves garlic
Kosher salt
2 tablespoons minced fresh parsley
1 tablespoon minced fresh dill
1 tablespoon minced fresh tarragon
1 Fresno chile, seeds removed and finely chopped (about 1 tablespoon)
1 tablespoon minced fresh chives
2 tablespoons finely-minced shallot
2 tablespoons chardonnay vinegar
1 tablespoon lemon juice, plus additional to taste
1 tablespoon whole-grain mustard
1/2 teaspoon honey
1/4 teaspoon kosher salt
Freshly ground black pepper
1/2 cup extra-virgin olive oil

Steps:

  • For the potato salad: Place the potatoes and whole garlic cloves in a large pot and cover by 2 inches with cold water. Season the water liberally with salt. Bring the potatoes to a simmer over medium heat and cook until fork-tender, 20 to 25 minutes. Drain the potatoes and garlic in a colander. Transfer to a sheet tray or cutting board. Gently press each potato and garlic clove to smash them and set them aside in a bowl, covering the bowl with aluminum foil to keep the potatoes warm.
  • For the vinaigrette: In a large bowl, whisk together the shallots, vinegar, lemon juice, mustard, honey, salt and a generous grinding of pepper. Slowly whisk in the olive oil to emulsify the vinaigrette.
  • Add the warm potatoes to the vinaigrette and toss to combine. Add the parsley, dill and tarragon to the potatoes. Toss to coat, seasoning with additional lemon juice and salt to taste. Transfer to a serving bowl and garnish with the Fresno chile and chives. Serve at room temperature or keep covered in the refrigerator overnight, tossing again before serving.

This warm potato salad with fresh herbs can be made with yellow potatoes or baby red or white potatoes. Although meant to be served warm, this salad also keeps very well in the fridge for 3-4 days and taste great as cold leftovers too.

1kg yellow potatoes or baby potatoes, skin on
4 tablespoon olive oil
1/2 lemon, zested
1 lemon, juiced
2 tablespoon whole grain mustard
1/2 bunch sprigs flat leaf parsley, roughly chopped (about 1/2 cup)
4 sprigs chives, minced (about 1/8 cup)
2 sprigs basil, roughly chopped (about 1/8 cup)
1 teaspoon sea salt
1/2 teaspoon black pepper

Steps:

  • Rinse potatoes and cut in half or quarters to create bite-size pieces.
  • Boil potatoes in salted water for 18-20 minutes until tender and can be pierced with a fork.
  • While the potatoes are boiling, combine the olive oil, lemon juice and grainy mustard to create a dressing and set aside.
  • Once the potatoes are cooked, strain water and add them to a large bowl.
  • While they are still hot, pour the dressing over the potatoes and stir to ensure all potatoes are well coated.
  • Add in the lemon zest, fresh herbs and season with salt and pepper and give it one final toss.
  • Serve the salad immediately.
  • Enjoy!

1 pound new potatoes, scrubbed and cut into 1/4" slices
4 tablespoons white wine vinegar
2 tablespoons Dijon mustard
salt & pepper
1/2 cup olive oil
2 scallions, thinly sliced
3 tablespoons chopped fresh parsley

Steps:

  • In a large pot of boiling water, cook potatoes until they are tender. In a large bowl whisk together the vinegar and the mustard. Season with salt & pepper. Whisk in the olive oil a third at a time until it binds together. Add the warm, drained potatoes and toss to coat. Let the potatoes sit for 10 minutes or longer to absorb the flavor of the dressing. Add the scallions and parsley and toss to coat. Season well with salt & pepper.

2 pounds small red potatoes, halved
Kosher salt
6 strips bacon, diced into 1/2-inch pieces
1 tablespoon olive oil
2 tablespoons chopped fresh thyme
1/2 red onion, diced
3/4 cup champagne vinegar
1 tablespoon unsalted butter
1 tablespoon whole grain mustard
1/4 cup finely chopped fresh chives
2 tablespoons finely chopped fresh chervil
2 tablespoons finely chopped fresh dill
2 tablespoons finely chopped fresh parsley
2 tablespoons finely chopped fresh tarragon

Steps:

  • Place the potatoes in a saucepan and cover with 2 inches water. Generously season the water with salt. Bring to a boil, reduce the heat and simmer until tender, about 10 minutes.
  • While the potatoes cook, place the bacon in a cold skillet and turn to medium-low heat. Add the olive oil and thyme to the pan. Saute the bacon and thyme until just starting to crisp, about 7 minutes; we want to render the bacon slowly. Once the bacon has rendered some of its fat, add the onions to the bacon and cook until softened, 3 to 4 minutes. Add the vinegar, butter and mustard.
  • Once the potatoes are cooked, drain them and add immediately to the pan with the sauteed bacon. Stir to coat, adjusting the seasoning, if necessary. Add the remaining fresh herbs, toss and serve.
  • This salad can be served warm or at room temperature.
  • Cook's Note: Adding the potatoes while they are still warm will help them to soak up the flavors of the vinaigrette.

3 pounds small white boiling potatoes
Kosher salt
2 tablespoons good dry white wine
2 tablespoons chicken stock
2 tablespoons lemon juice
2 garlic cloves, minced
1/2 teaspoon Dijon mustard
Freshly ground black pepper
2/3 cup good olive oil
1/4 cup red onion, finely diced
2 tablespoons chopped fresh tarragon
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Place the potatoes and 2 tablespoons salt in a large pot of water. Bring the water to a boil, then lower the heat and simmer for 10 to 15 minutes, until the potatoes are barely tender when pierced with a knife. Drain the potatoes in a colander, then place the colander with the potatoes over the empty pot off the heat and cover with a clean, dry kitchen towel. Leave the potatoes to steam for 15 to 20 minutes, until tender but firm.
  • Meanwhile, in a small bowl, whisk together the wine, chicken stock, lemon juice, garlic, mustard, 2 teaspoons salt and 3/4 teaspoon pepper. Slowly whisk in the olive oil to make an emulsion. Set aside.
  • When the potatoes are cool enough to handle, cut them into quarters or halves, depending on their size. Place the cut potatoes in a large bowl and pour enough dressing over them to moisten. (As the salad sits, you may need to add more dressing.) Add the onion, tarragon and parsley, and salt and pepper to taste. Toss well, cover, and refrigerate for a few hours to allow the flavors to blend. Serve cold or at room temperature.

4 tsp Dijon mustard
4 tsp white wine vinegar
4 tbsp olive oil

Steps:

  • Steam or boil the whole potatoes until tender when pierced. Remove and set aside to cool a little.
  • Mix the mustard and vinegar in a big serving bowl until smooth, add the oil and season to taste if you want, then mix again until blended.
  • Slice the potatoes and toss together with the herbs in the bowl of dressing. Serve on a bed of leaves.

1 1/2 lbs tiny new potatoes, scrubbed but not peeled
1/2 cup olive oil
2 tablespoons olive oil
3 tablespoons white wine vinegar, best quality
2 tablespoons dry white wine
kosher salt
black pepper
2 shallots, minced
3 tablespoons Italian parsley, minced
2 tablespoons fresh chives, snipped

Steps:

  • Put the potatoes in the top part of a vegetable steamer and cook over simmering water until they are just tender when pierced, about 15-20 min, depending on the size.
  • Meanwhile, whisk together 1/2 cup of the oil, 2 Tbs of the vinegar, the wine, a generous teaspoon of kosher salt and several turns of black pepper. Set aside.
  • Transfer the cooking potatoes to a work surface and let cool slightly.
  • Peel the potatoes and cut into 3/8-inch thick slices.
  • Put the potatoes in a shallow serving dish and pour the oil and vinegar mixture over them.
  • Set aside for 20-30 minute Do not refrigerate you want this to be warm.
  • Meanwhile, make the final dressing.
  • Put the remaining olive oil, vinegar, shallots, parsley, and the chives into a small bowl.
  • Season with salt and pepper.
  • Pour the dressing over the marinating potaotes and toss.
  • Taste and correct the seasoning if necessary.
  • Serve.

1 cup sour cream
1 cup mayonnaise, good-quality whole-egg
1/4 cup dill, coarsely chopped fresh
1/4 cup parsley, coarsely chopped fresh continental
1 garlic clove, crushed
2 tablespoons mint, finely chopped fresh
1 tablespoon Dijon mustard
1 tablespoon fresh lemon juice
salt & freshly ground black pepper
4 green shallots, ends trimmed, thinly sliced

Steps:

  • Place the potatoes in a large saucepan and cover with plenty of cold water. Bring to the boil over high heat and cook for 15-20 minutes or until tender. Drain and set aside for 15 minutes to cool slightly. Cut into halves or quarters.
  • Use a fork to whisk together the sour cream, mayonnaise, dill, parsley, garlic, mint, mustard and lemon juice in a large bowl until well combined. Taste and season with salt and pepper.
  • Place the potatoes and green shallot in a large serving bowl. Spoon dressing over the potato mixture and gently toss until potatoes are well coated in dressing. Serve immediately.
  • Notes.
  • You can prepare this recipe to the end of step 2 up to 1 day ahead. Place in separate bowls, cover with plastic wrap and store in the fridge. Continue from step 3, 1 hour before serving the main.
