I felt like making a soup that had ingredients that all of my family loves. So voila! My warm heart stew contains all of the best beans and robust bratwurst of the season. We enjoy this, and my family even asks me to make it in the summer!

6 bratwursts, chopped
4 carrots, chopped
1 onion, chopped
2 (14 ounce) cans chicken stock
1 (14 ounce) can beef broth
1 ½ cups sauerkraut
1 (15 ounce) can pinto beans, drained
1 (15 ounce) can kidney beans, drained
1 (15 ounce) can navy beans, drained
¼ cup chopped fresh basil leaves
1 tablespoon parsley
salt to taste

Steps:

  • Place the bratwursts, carrots, and onion in a slow cooker. Pour in chicken stock and beef broth. Mix in sauerkraut, pinto beans, kidney beans, navy beans, basil, parsley, and salt.
  • Cover, and cook 4 hours on High.

1/2 teaspoon pepper
2 stalks celery
2 medium garlic cloves, minced
2 medium carrots
20 ounces lean top round roast
1 cup green beans
2 medium potatoes, without skin
2 cups low sodium beef broth
28 ounces low-sodium tomatoes
3/4 medium onion
1/2 lb mushroom, sliced
1 tablespoon Worcestershire sauce
nonstick cooking spray

Steps:

  • Coat a 4 quart pot with cooking spray and heat over moderate heat for 1 minute.
  • Cut roast into 1 1/2 inch cubes.
  • Season with the pepper.
  • add to pot and brown for 4 - 5 minutes.
  • Add the onion, garlic ,crushed tomatoes, worcestershire sauce and beef broth to the pot.
  • Bring to boil.
  • Turn heat down to simmer and add diced celery,carrots, mushrooms,and green beans.
  • Cover and simmer until tender about 45 minutes.
  • Dice peeled potatoes and add to pot.
  • Add more water if needed.
  • Simmer until tender, about 45 minutes.

3 lbs boneless beef chuck roast, cut into 2 1/2 inch pieces
8 red potatoes, cut in half
3 carrots, cut into 1 inch pieces
3 onions, cut in half
1 (8 ounce) package mushrooms, cut in half
1/2 cup fresh parsley, chopped
1 cup apple juice
1 (10 1/2 ounce) can beef broth
1 (6 ounce) can tomato paste
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/2 teaspoon thyme leaves
1 teaspoon garlic, minced
2 bay leaves

Steps:

  • In Dutch oven, place onions, bacon, and beef.
  • Cook over medium-high heat until beef and bacon are browned.
  • Stir in all remaining ingredients, cover, and bake at 325 degrees for 1 1/2 hours.
  • Uncover and continue to bake for 2-2 1/2 hours, stirring occasionally, until beef is fork tender.

  • Wash the beef heart. Use a sharp knife to remove arteries and fat. Slice into 1-inch cubes. Slice into large chunks potatoes and apples, remove the core. Peel onion, dice small.
  • In a large dutch oven over medium-high heat, melt ghee. Add meat and let it sit for 2-3 minutes without stirring so the sides can brown. Stir a couple of times to let meat brown from all sides but don't completely cook through. Add onions, stir well.
  • Add water to the pot. Add apples, potatoes, salt, and vinegar. Once water slightly started to boil, reduce the heat to low, cover, and simmer on low for 1 1/2 hour (or more). Serve warm; the best flavor will be the following day.
