This is one of our favorite quick ways to use up a bumper crop of grape tomatoes (or to take care of an overenthusiastic tomato-shopping spree)! -Rose Gulledge, Crofton, Maryland

Number Of Ingredients 9

2 cups grape tomatoes
3 garlic cloves, minced
1-1/2 teaspoons minced fresh basil
1/2 teaspoon salt-free garlic seasoning blend
1/4 teaspoon salt
1/8 teaspoon pepper
1 teaspoon olive oil, divided
1/4 cup soft whole wheat bread crumbs
1/4 cup crumbled feta cheese

Steps:

  • In a small bowl, combine the tomatoes, garlic, basil, seasoning blend, salt and pepper. Add 1/2 teaspoon oil; toss to coat. Transfer to a 3-cup baking dish coated with cooking spray. , Bake at 425° for 15 minutes. Combine bread crumbs and remaining oil; sprinkle over the top. Sprinkle with cheese. Bake until cheese is softened and tomatoes are tender, 5-10 minutes longer.

1 tablespoon olive oil
2 garlic cloves, minced
1/2 pint grape tomatoes
1/4 cup dry sherry
4 ounces Baby Spinach
4 ounces arugula
1 tablespoon olive oil
salt and pepper

Steps:

  • Preheat oven to 350.
  • Put 1 T olive oil and garlic in saucepan over medium heat.
  • Saute 2 minutes then add grape tomatoes.
  • Turn tomatoes to coat with oil.
  • Add sherry, toss to coat tomatoes.
  • Place pan in oven and roast for 15 minutes.
  • Toss spinach and arugula with 1 T olive oil. Pour roasted tomatoes over greens and season with salt and pepper.

4 cups grape tomatoes
3 garlic cloves, peeled
3 tablespoons extra-virgin olive oil
2 teaspoons coarse kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • Preheat oven to 400 degrees F. In a medium bowl add the grape tomatoes and 3 garlic cloves. Drizzle with 3 tablespoons of olive oil and sprinkle with salt, pepper.
  • In a 9 by 13-inch glass baking dish, place the tomatoes and garlic cloves, ensuring they are in just 1 layer. Roast for 20 minutes, and then stir. Add 2 to 3 tablespoons of hot water, if too dry in appearance. Return to the oven and cook for 20 to 30 more minutes.
  • When ready, the tomatoes will have begun to shrivel and the liquid in the dish should have thickened. Serve hot from oven.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place tomatoes onto a large square of aluminum foil. Drizzle olive oil over tomatoes and top with garlic, basil, thyme, and salt. Wrap the foil around tomato mixture sealing tightly to keep juices inside.

  • Preheat the oven to 400°. On a large rimmed baking sheet, toss the tomatoes with the garlic, crushed red pepper and 1 tablespoon of the olive oil and season with salt and pepper. Roast the tomatoes for about 20 minutes, until they burst and their skins begin to shrivel, stirring once halfway through.
  • Pour the remaining 2/3 cup of olive oil into a medium bowl. Crush the rosemary and oregano between your fingers and submerge them in the oil. Add the tomatoes and their juices, stir gently and let stand for 30 minutes.
  • Reduce the oven temperature to 350°. Arrange the ciabatta on a baking sheet and toast for 10 minutes, or until crisp. Spoon the tomatoes and some of the infused oil over the ciabatta, sprinkle with salt and serve.
