CRANBERRY WALNUT COOKIES
These are my favorite (non-chocolate) cookies. They are soft, chewy, and delicious. My family has been making them for the holidays for years. I have no idea where the recipe came from, but I'm glad I have it!

- Preheat oven to 375 degrees F (190 degrees C). Grease a baking sheet.
- Cream white sugar, brown sugar, and butter together in a large mixing bowl. Beat milk, orange juice, and egg into the creamed mixture.
- Sift flour, baking powder, cinnamon, salt, and baking soda together in a separate bowl; blend into the wet ingredients in the mixing bowl to form a cookie dough. Stir cranberries and walnuts into the dough.
- Drop the dough onto the prepared baking sheet by the teaspoonful.
- Bake in the preheated oven until the edges are golden, 10 to 15 minutes. Allow the cookies to cool on the baking sheet for 1 minute before removing to a wire rack to cool completely. Sprinkle confectioners' sugar over the cookies to serve.

- In a bowl, beat the egg, egg whites, brown sugar, oil, applesauce and vanilla. , Combine the dry ingredients; stir into applesauce mixture just until blended. Fold in the apples, cranberries and walnuts. Pour into a 13x9-in. baking dish coated with cooking spray. , Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. CRANBERRY APPLESAUCE

- Peel and core apples then cut into large chunks. If using an immersion blender for a smooth applesauce, you may leave the peels on for added nutrition.
- Place apples, cranberries, maple syrup, cinnamon, cloves, orange zest, salt and water into a large heavy bottomed pot on medium high heat.
- Cook for 10 minutes then stir.
- Cook an additional 15-20 minutes with lid on, stirring regularly until sauce is preferred consistency.
- For chunky cranberry applesauce, just break things up with a wooden spoon or potato masher. For a totally smooth cranberry applesauce, use an immersion blender to puree.
- Preserve in jars using a water bath method.

CRANBERRY APPLESAUCE MUFFINS
I start making these in November and don't stop till Spring! They are a great addition to a Christmas brunch or egg casserole and the aroma while they bake is heavenly!

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a muffin pan, or use paper liners.
- In a small bowl, mix together applesauce, oil and egg. In a large bowl, combine flour, sugar, baking soda, cinnamon and salt. Make a well in the center, and pour in egg mixture. Stir until just moistened. Fold in cranberries and pecans. Spoon into muffin cups, 2/3 full.
- Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean. Cool in pan for 2 minutes before removing.

CRANBERRY WALNUT MUFFINS
Steps:
- Preheat your oven to 350 degrees. Lightly grease and flour a 12 cup standard muffin pan. You can also line with cupcake papers. NOTE: this recipe makes 14 muffins so you can use 2 muffin pans or you can reuse the pan you used for the initial batch of muffins.
- In a large mixing bowl, whisk together the flour, sugar, cinnamon, salt, baking soda, baking powder, nutmeg, walnuts and oats. In another mixing bowl, whisk together the eggs, vanilla extract, pumpkin puree, coconut oil and pumpkin puree. Pour the wet ingredients into the dry ingredients and gently mix until incorporated. The batter will be thick and lumpy.
- Toss the cranberries in 1 tbsp of flour to coat. Carefully fold into the muffin batter.
- Fill each muffin cup 2/3 full.
- Bake at 350 for 20-25 minutes, or until slightly golden and a toothpick inserted into the center of one of the muffins comes out clean. If using fresh berries, reduce your baking time by about 5 minutes.
- Cool on a wire rack for 15-20 minutes before serving.

CRANBERRY WALNUT MUFFINS
Steps:
- Preheat oven to 375°F. Spray 8 cups of a 12-cup muffin pan with cooking spray.
- In a bowl, mix together Splenda Sweetener, flour, baking powder, baking soda, and cinnamon.
- In another bowl, combine buttermilk, melted butter, eggs, and orange zest. Add to flour mixture and mix gently to combine. Add cranberries and walnuts and stir just until blended.

APPLESAUCE WITH CRANBERRY LOAF CAKE
Base recipe was found in the All You Magazine but I've tweaked it to make it my own. This is a full flavored cake with a lemony glaze topping which I found to take this cake just over the top of expectations. Of course you can omit the glaze and just serve as a loaf cake for breakfast. The original recipe does not include nuts but I really enjoyed it with some chopped walnuts so I've placed that as optional to this recipe. It also called for raisins but I used Craisins instead. Please note it is very important to use a thicker applesauce for this recipe - using a thin commercial canned sauce can cause the batter to become too thin and not allow the cake loaf to rise properly while baking.

- Preheat oven to 350F and prepare a 9x5 inch loaf pan with butter (or cooking spray) and then line bottom of loaf pan with parchment and butter the paper.
- Beat butter and sugar with a mixer until light and fluffy. Beat in egg.
- Stir baking soda into applesauce.
- Mix dry ingredients, theen add to butter mixture in 3 additions, alternating with applesauce.
- Stir in Craisins (and walnuts if using).
- Pour batter into prepared pan and bake for 45-50 minutes (or until toothpick test passes).
- Cool in pan on a wire rack for 10-15 minutes then turn out onto rack.
- Make glaze by mixing lemon juice and confectioner's sugar and spoon glaze over cooled cake (this step is optional if you are not using it as a dessert).
CRANBERRY SAUCE WITH APPLESAUCE

- Sprinkle the fresh cranberries in a 9x13 baking dish.
- Pour the sugar over the tops of the cranberries and coat well.
