This is a wonderful orange bread and the orange peels are as soft as the bread. There was a restaurant on the island of Waikiki that was known for this bread. It can be frozen for up to 2 months. You can switch it up and use lemon peels or a combination of both. Enjoy this bread!

1 c orange peel, chopped
water to cover
1 c sugar
4 c all purpose flour
1/8 tsp salt
3 Tbsp sweet butter, softened
2 eggs
6 tsp leveled, baking powder
3/4 c sugar
2 c milk

Steps:

  • 1. Preheat oven to 350F. Butter two loaf pans. ( Or spray with Pam spray) Place chopped orange peel in a saucepan. Cover with water. (just enough to cover) Boil until peel is tender. Remove from heat, add the sugar, stir slightly and return to a boil till mixture reaches medium syrup stage. Reserve and cool.
  • 2. Sift flour with baking powder and salt. Cream butter, sugar, and eggs. Add dry ingredients, alternating with milk, to the creamed mixture. With an electric mixer continue beating for 3 minutes.
  • 3. Fold in cooled orange peel with syrup. Pour into prepared pans. Bake 40 to 50 minutes,or until done in center of bread.

1/4 cup unsalted butter, at room temperature
1/4 cup sugar
1/4 cup brown sugar, packed
2 large eggs
1/2 cup orange juice
1/2 teaspoon vanilla
2 tablespoons grated orange zest
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
Confectioners sugar, for serving
Cranberry butter, for serving (recipe follows)

Steps:

  • Preheat the oven to 350 degrees F. In a large mixing bowl, cream the butter and both sugars together with an electric mixer. Beat in the eggs, one at a time, then mix in the orange juice, vanilla, and orange zest. Add the flour, baking powder, salt, orange zest, and vanilla and mix together well. Generously butter and flour a 10 inch bundt pan and scoop the batter into it, smoothing the top with a spatula. Bake for 30 to 35 minutes, or until the sides shrink away from the pan and the center of the loaf springs back. Cool the pan on a rack for 10 minutes, then turn out onto a round platter. Sprinkle a little confectioners sugar over the top of the bread and serve warm or at room temperature, accompanied by small pots of cranberry butter.

The beauty of this recipe is its versatility. Experiment as you wish with the ingredients. Some people like raisins or currant in their loaves (I do not, but that should not stop anyone). This recipe is a delicious, healthy version of an old standby, and one which the entire family can enjoy. The following recipe has batter sufficient for one loaf; I have doubled the ingredients to create two loaves and bake them at the same time. Eat one, and freeze the other. Enjoy. 2 cups whole wheat flour or 2 cups kamut
1 teaspoon cinnamon, ground
1 teaspoon baking powder
1 teaspoon baking soda
1 cup walnuts, chopped
1/2 cup raisins (optional) or 1/2 cup currants (optional)
3 ripe bananas, mashed
2 eggs, well beaten
1 teaspoon vanilla (pure or extract)
1 cup pasteurized honey
1 tablespoon orange rind
2 large oranges, juice and pulp of

Steps:

  • Preheat oven to 375°F.
  • Mix all the dry ingredients together in a large bowl.
  • Add all wet ingredients in a blender and mix for 15 seconds.
  • Add the blended ingredients to the dry ingredients and mix well.
  • Pour mixture into a well-greased bread pan and place on middle rack in preheated oven.
  • Bake for approximately 45 minutes.
  • Insert toothpick to test for doneness (it should come out clean).
  • Cover the loaf with foil if it is starting to brown too quickly on top.
  • Let cool for 30 minutes and then enjoy.

6 slices bread (crumbled)
2 tablespoons butter
1/2 cup brown sugar
2 eggs (lightly beaten)
1/2 cup flour
1 teaspoon baking powder
1/2 cup orange juice
1 teaspoon grated orange rind
1/2 cup dried fruits (raisins, cherries etc)
2 tablespoons slivered almonds
2 tablespoons maple syrup

Steps:

  • Sift the flour and baking powder and mix well.
  • In a seperate bowl, mix the butter and sugar and beat till light.
  • Add the beaten eggs and mix until well blended.
  • Next add the fruit, bread crumbs and orange rind.
  • Fold in the flour and orange juice alternately.
  • In a pudding mould, Layer the bottom with maple syrup.
  • Sprinkle the almond slivers on it.
  • Pour the mixed pudding batter into the mold over the syrup it.
  • Put a lid on the mold and put it in a rice cooker.
  • Pour water in the cooker upto half the mould height.
  • Switch the cooker into cooking and let it cook for 1 hours.
  • After 1 hr remove the mould from the cooker and let it cool for 5 minutes.
  • Invert the mould into a plate and cut into slices.
  • Serve warm with custard.

4 cups flour
1 2/3 cups sugar
6 teaspoons baking powder
1 orange, quartered (skin, seeds and all)
1 1/2 cups milk
2 eggs
1/2 cup oil

Steps:

  • Mix together flour, sugar and baking powder.
  • In a blender, mix orange, milk, eggs and oil.
  • Transfer mixture to large bowl and gradually add flour mixture to the orange mixture, blending well.
  • Place dough in two well greased large loaf pans.
  • Allow to stand for 20 minutes.
  • After time has passed, bake in a 400 degree oven until loaves have raised and started to brown.
  • Reduce heat to 300 degrees, slash each loaf lengthwise with a sharp knife. Bake about 40 minutes more or until toothpick inserted in the center comes out clean.
  • Let stand ten minutes before removing from pan. Cool completely.
