PINA COLADA BANANA PUDDING

A tropical variation on an old Southern favorite.

3 cups cold milk
1 (4.6 ounce) package instant coconut cream pudding mix
1 (8 ounce) container sour cream
1 (16 ounce) container non-dairy whipped topping, divided
1 cup crushed pineapple with juice
½ cup shredded coconut
1 teaspoon rum flavoring
1 teaspoon coconut flavoring
1 (11 ounce) box vanilla wafer cookies
2 medium bananas, sliced, or more to taste
¼ cup toasted shredded coconut

Steps:

  • Whisk cold milk and pudding mix together in a large mixing bowl for 2 minutes. Allow to sit for 5 minutes until soft-set.
  • Mix sour cream and 1/2 of the whipped topping into the pudding; mix well. Stir in pineapple with juice, 1/2 cup shredded coconut, rum flavoring, and coconut flavoring.
  • Place a layer of wafer cookies in the bottom of a trifle dish. Add a layer of sliced bananas and a layer of the pudding mixture. Repeat layers until all ingredients have been used, reserving a few cookies for garnish.
  • Top with remaining whipped topping and garnish with remaining cookies and toasted coconut. Chill for 1 hour before serving.

150ml pineapple juice
50ml coconut milk
25ml lime juice
ice
cherry , to garnish
100g dark brown muscovado sugar
1 pineapple , a few strips of skin, plus leaves to garnish
5 black peppercorns
5 cloves
1 cinnamon stick

Steps:

  • To make a mock rum syrup, put the dark brown muscovado sugar and 200ml water in a saucepan, stir well and heat gently until the sugar has dissolved. Add a few strips of skin from the pineapple, add the black peppercorns, cloves and a cinnamon stick, then bring to the boil. Turn off the heat and leave to infuse until cold. Strain into a jug and set aside in the fridge until needed. Will keep for up to three days.
  • Pour the pineapple juice into a tall glass, and add the coconut milk and lime juice. Stir gently. Fill up the glass with a handful ice then slowly add 25ml of the syrup so it sinks to the bottom. Garnish with pineapple leaves and a tinned cherry.

This one is sort of a smoothie and I found it when I was looking for ways to use the coconut milk and coconut cream in my pantry...which I love! Great brekkie treat for anyone!

3 1/2 tablespoons coconut cream
1 (8 ounce) can pineapple chunks or 1 (8 ounce) can pineapple tidbits, in juice
2 small ripe bananas

Steps:

  • Dump everything (except 2 pineapple chunks or tidbits) in a blender and process until smooth.
  • Add ice and process until ice is crushed.
  • Serve in glasses and garnish with a piece of pineapple and a cherry, if desired.

12 ounces pineapple, pared and sliced or 1 cup canned pineapple chunk
1 medium banana, peeled and sliced (about 6 ounces)
1/4 cup banana liqueur (optional)
1 1/2 cups low-fat buttermilk, 1% milk fat
2 tablespoons light rum
1/4 cup cream of coconut
2 cups ice cubes
maraschino cherries (to garnish) (optional) or 1 teaspoon shredded coconut, toasted (optional)

Steps:

  • Blend all ingredients except toppings and garnish with any of the toppings if at all you wish to garnish and serve.
  • That is it.

This is just a variation of some of the other pina colada recipes i have seen on here. It has mostly the same ingredients and all, and probably tastes the same, but I just made it to suit our taste. I am just posting it so that I can keep up with it, but everyone is welcome to try it and review it. I did however make it for my family's 4th of July party and everyone raved about it. Too bad we ran out of it. :D
