4 crusty long bread rolls ((Note 1))
6 tbsp pork or chicken pate ((Note 2))
6 tbsp mayonnaise ((Note 3))
4 - 8 slices Thi Nguoi ("pink ham") OR brawn ((aka head cheese, Note 4))
4 - 8 slices Cha Lua Vietnamese pork loaf OR chicken loaf ((Note 5))
4 - 8 slices roast or grilled pork cold cuts ((Note 6))
1.5 cups fresh coriander/cilantro sprigs ((Note 7))
2 cucumbers (, finely sliced lengthwise into long strips)
4 green onion stems (, cut into the length of the rolls)
2 red chillies (, finely sliced (or more!) (or less...))
2 tsp Maggi Seasoning (, for drizzling (Note 8))
4 medium carrots (, peeled cut into 2-3mm / 1/10" batons)
1 1/2 cups (375ml) hot water (, boiled)
1/2 cup (100g) white sugar
4 tsp salt
3/4 cup (185ml) rice wine vinegar ((sub apple cider vinegar))
Pork meatballs for Banh Mi ((Note 9))
Shredded rotisserie or poached chicken ((Note 10))

Steps:

  • Split rolls down the centre of the top (see video).
  • Spread 1.5 tbsp pate on one side, then 1.5 tbsp mayonnaise on top.
  • Layer in the hams, cucumber slices and green onion.
  • Stuff in plenty of carrots and coriander sprigs.
  • Sprinkle with fresh chilli - as much as you dare!
  • Drizzle with Maggi Seasoning (about 1/2 tsp per roll).
  • Close sandwich together and devour!

2 cups white distilled vinegar
3 tablespoons sugar
2 tablespoons kosher salt
2 cups julienned daikon radish (cut into strips or run through a mandoline)
1 cup julienned carrots
1/2 English cucumber, partially peeled in sections to leave some skin on, cut into half moons
1 cup mayonnaise
1 to 2 tablespoons Sriracha
1/2 teaspoon toasted sesame oil
2 tablespoons vegetable oil
1 large yellow onion, 1/4-inch dice (about 2 cups)
1 heaping tablespoon peeled and finely grated ginger
8 cloves garlic, minced
2/3 cup chicken stock
1/2 cup fish sauce
1/2 cup hoisin sauce
1/2 teaspoon ground black pepper
2 pounds ground pork
Six 8-inch hoagie rolls
2 fresh jalapenos, halved and thinly sliced
1 cup fresh cilantro leaves
1/2 cup salted roasted peanuts, chopped

Steps:

  • For the pickled vegetables: Heat the vinegar, sugar and salt in a small pot until the sugar and salt are dissolved. Pour the hot vinegar mixture over the daikon, carrots and cucumbers. Let steep for at least an hour.
  • For the spicy mayonnaise: Mix the mayonnaise, Sriracha and sesame oil together. Adjust the heat by either adding more Sriracha or mayonnaise.
  • For the pork: Heat the canola oil in a straight-sided skillet over medium heat. Add the onions and cook until slightly softened, 4 to 6 minutes. Add the ginger and garlic and cook another 2 minutes. Add 1/2 cup of the pickling liquid from the pickled vegetables and cook until reduced by half, 1 to 2 minutes. Add the chicken stock, fish sauce, hoisin sauce and black pepper and stir to combine. Simmer until reduced slightly and thickened, 10 to 15 minutes. Add the ground pork, breaking up the meat with the back of a wooden spoon or spatula, and cook until the pork is cooked through, 6 to 8 minutes.
  • For the sandwich build: Preheat the oven to 350 degrees F. Heat the rolls for 5 minutes, to crisp the crust and soften the interior. Slice the rolls open, but keep them hinged. Schmear desired amount of spicy mayo on the bottom roll, place some pork on top of that, top with some pickled vegetables, fresh jalapenos, cilantro leaves, and finish with the chopped peanuts. Grab with two hands, eat whole and close your eyes while enjoying this first class ticket to Saigon.

Beer or red wine is the beverage of choice for this authentic recipe of French influenced Vietnamese cuisine.

4 boneless pork loin chops, cut 1/4 inch thick
4 (7 inch) french bread French baguettes, split lengthwise
4 teaspoons mayonnaise, to taste
1 ounce chile sauce with garlic
1/4 cup fresh lime juice
1 small red onion, sliced into rings
1 medium cucumber, peeled and sliced lengthwise
2 tablespoons chopped fresh cilantro
salt, to taste
pepper, to taste

Steps:

  • Preheat the oven's broiler. Place the pork chops on a broiling pan and set under the broiler. Cook for about 5 minutes, turning once, or until browned on each side.
  • Open the French rolls and spread mayonnaise on the insides. Place one of the cooked pork chops into each roll. Spread chile sauce directly on the met. Sprinkle with a little lime juice and top with slices of onion, cucumber, cilantro, salt and pepper. Finish with another quick drizzle of lime juice.

1 clove garlic, crushed
1/2 teaspoon salt
1/4 cup rice wine vinegar
1 teaspoon sugar
1/2 cup carrot, peeled and grated
1/3 cup thinly sliced white onion
2 tablespoons jalapeno chile, finely chopped
1 (16 inch) baguette
4 teaspoons low-fat mayonnaise
3/4 lb boneless skinless chicken breasts, cooked or 3/4 lb pork tenderloin
1 tablespoon fresh lime juice
1/2 teaspoon five-spice powder
1/2 cup fresh cilantro

Steps:

  • With chef's knife, mash garlic and salt into a paste.
  • Transfer to a mixing bowl and add vinegar and sugar, stirring to dissolve.
  • Add carrots, onions and chilies.
  • Toss to coat, set aside.
  • Slice baguette into 4 equal lengths.
  • Split each piece horizontally.
  • Spread cut sides with mayonnaise.
  • Arrange the meat on the 4 bottom halves.
  • Sprinkle with lime juice and 5-spice powder.
  • Top with the carrot salad and a shower of cilantro leaves.
  • Cover with bread tops.

Vietnamese-Style Sandwich: Banh Mi image

1/2 cup water
1/4 cup sugar
1/4 cup distilled white vinegar
1/2 cup julienned carrot
1/2 cup julienned daikon radish
Kosher salt
1 teaspoon vegetable oil
1 tablespoon finely chopped onion
6 ounces ground pork
1 tablespoon roast pork seasoning mix*
Pinch garlic powder
Pinch ground black pepper
Four 10-inch baguettes
Mayonnaise, as needed
8 thin slices Vietnamese-style pork roll (cha lua), or bologna
8 slices Vietnamese-style salami, or ham or turkey
4 teaspoons soy sauce
1/2 cup fresh cilantro sprigs
1/4 medium English cucumber, cut lengthwise into 4 slices
Freshly ground black pepper
Asian-style chili oil, to taste, optional

Steps:

  • Make the slaw: In a small saucepan, combine the water, sugar, and vinegar and bring to a boil. Transfer the vinegar mixture to a bowl and cool. Add the carrot and daikon, mix well, and season with salt. Set aside to marinate for 30 minutes or store in the refrigerator up to overnight.
  • Meanwhile, make the seasoned pork: Heat the oil in small nonstick skillet over medium heat. Add the onion and cook, stirring, until soft. Add the pork, seasoning, garlic, and pepper and cook, stirring, until just cooked through, about 2 to 3 minutes. Remove the heat and set aside covered with foil to keep warm.
  • Make the sandwiches: Preheat oven to 400 degrees F. Slice the baguettes open lengthwise, and slather the insides with mayonnaise. Arrange the baguettes on a baking sheet and bake until hot and crusty about 5 minutes. Remove the baguettes from the oven and immediately fill each with some of the seasoned pork. In each sandwich, arrange 2 slices each of the pork roll and salami, 1 teaspoon soy sauce, 1/2 tablespoon cilantro, 1 slice cucumber, ground pepper, and chili oil, if using. Serve immediately with the slaw on the side.

4 tablespoons rice wine vinegar
2 limes, juice of
6 tablespoons sugar
1 tablespoon asian fish sauce
asian turnip

sliced turkey or deli ham

Steps:

  • Mix garlic, rice wine vinegar, lime juice, sugar, and fish sauce. This is a marinade for the carrots and turnip.
  • Shred the carrots and turnip with a large grater and soak in the marinade. Allow this to soak for at least 3 hours.
  • When ready slice open your crusty french rolls, place deli meat like normal, add marinated carrot and turnip, top with alot of cilantro.
