Steps:
- Preheat the oven to 350 degrees F.
- Put the apples into an 8 by 8-inch glass baking dish. Spoon the brown sugar into the center of each apple, dividing the sugar evenly among them. Pour the water into the bottom of the dish and bake until tender, about 45 minutes.
- Pour the ale and Madeira into a large slow cooker. Put the cloves, allspice, and cinnamon into a small muslin bag or cheesecloth, tied with kitchen twine, and add to the slow cooker along with the ginger and nutmeg. Set the slow cooker to medium heat and bring the mixture to at least 120 degrees F. Do not boil.
- Add the egg whites to a medium bowl and using a hand mixer, beat until stiff peaks form. Put the egg yolks into a separate bowl and beat until lightened in color and frothy, approximately 2 minutes. Add the egg whites to the yolks and using the hand mixer, beat, just until combined. Slowly add 4 to 6 ounces of the alcohol mixture from the slow cooker to the egg mixture, beating with the hand mixer on low speed. Return this mixture to the slow cooker and whisk to combine.
- Add the apples and the liquid from the baking dish to the wassail and stir to combine. Ladle into cups and serve.
HOLIDAY CLASSIC WASSAIL
This wassail has been a holiday tradition in my house for many years. An added bonus - the house smells wonderful while it's simmering!

Steps:
- Place the cinnamon sticks, cloves, and allspice in the center of a large paper coffee filter. Fold the ends over and roll up burrito-style. Tie closed with dental floss or thread, leaving long ends.
- Mix apple juice concentrate with water as directed on can (you should end up with 6 cups of juice).
- In a saucepan combine apple juice, cranberry juice, sugar, and bitters. Bring to a boil. Tie the ends of the "spice bag" string to the middle of a wooden spoon and lay the spoon over the top of the pot so that the "spice bag" hangs in the juice without touching the bottom of the pot. Reduce heat and simmer at least 10 minutes.
- Remove from heat and add rum.
- Once I've made the wassail and added the rum, I pour this into a crock pot on low temp so that the warm wassail can be served up throughout the evening!

- Place the apple halves, cut side up, on an aluminum foil lined baking sheet. Sprinkle with brown sugar and bake for 45 min, until soft.
- While the apples bake, pour the apple cider and brandy into a large soup pot and warm the mixture over medium-low heat. Do not bring it to a boil. Add the ginger and nutmeg. Place the allspice berries, cloves, and cinnamon sticks into a tea bag or tie them into a bundle of cheesecloth to keep them from getting lost as they steep. Place the bag into the cider and heat the cider until warm, 20-30 min. (Alternately, place the wassail mixture into a large slow cooker. Heat on low for 4-5 hours.)
- In a small bowl, beat the egg yolks until pale in color and frothy using an electric hand mixer. Set aside.
