14 -16 lbs smoked ham, fully cooked,spiral-cut
6 cloves garlic
8 1/2 ounces mango chutney
1/2 cup Dijon mustard
1 cup light brown sugar, packed
1 orange, zest of
1/4 cup freshly squeezed orange juice

Steps:

Preheat oven to 350°.
Place ham in a heavy roasting pan.
To make the glaze, mince garlic in a food processor.
Add remaining ingredients; process until smooth.
Pour glaze over ham and bake 1 hour, until ham is fully heated and glaze is well browned.
Serve hot or at room temperature.

Steps:

Preheat oven to 350 degrees. Lightly score the surface of the ham using a sharp knife and place in baking pan on a rack. Stir together the mustard and maple syrup and coat the ham with the mixture. Press the cloves randomly over the ham. Bake for 1 hour.

1 smoked bone-in ham (10 to 12 pounds), room temperature
1/2 cup apricot jam
2 tablespoons Dijon mustard
3/4 cup pure maple syrup
2 tablespoons dark rum
1 garlic clove, minced
Fresh bay leaves, for garnish (optional)
Kumquats, for garnish (optional)

Steps:

Preheat oven to 350 degrees. Place ham on a roasting rack in a large roasting pan. Cover tightly with foil. Bake, rotating pan halfway through, 4 hours.
Meanwhile, make glaze: In a small saucepan, heat jam until liquefied. Strain through a fine sieve into a small bowl; discard solids. Stir in mustard, maple syrup, rum, and garlic.
After 4 hours, remove ham from the oven, and brush with glaze. Continue baking the ham, glazing every 15 minutes, until an instant-read thermometer inserted into thickest part of the ham (avoiding bone) registers 140 degrees, about 1 hour more. Remove from oven, and transfer to a carving board or platter. Garnish ham with bay leaves and kumquats, if desired. Slice thinly around the bone, and serve hot or at room temperature.

1 (8 lb) ham
3 quarts sweet apple cider
2 cups raisins
2 cups vermont maple sugar (or brown sugar if your not a Vermont native)
2 teaspoons dry mustard
1 teaspoon powdered clove
1/2 cup water

Steps:

Simmer ham in cider for 2 hours.
Drain, skin ham, and cover it with paste made from maple sugar, mustard, cloves, and water.
Place in baking pan, pour cider over it, add raisins to pan, and bake 2-1/2 hours at 325 degrees.
Baste frequently.
Make thickened gravy of cider raisin drippings.
