VENISON TENDERLOIN WITH ROASTED RED PEPPERS



Venison Tenderloin with Roasted Red Peppers image

I love working with fire-roasted red peppers, and I find they marry really well with venison, whether it be from antelope, deer or elk. I imagine it'd be good with caribou or moose, too. The sauce that underlies this is a pretty classic Port wine sauce. Keys to this recipe are having tenderloin - any deer or antelope will be fine - fire-roasted red peppers, decent Port and dried morel mushrooms. You can substitute dried porcini mushrooms, and you can use backstraps, which are the top loin of the animal.

1 venison tenderloin
Salt and freshly ground black pepper
3 tablespoons butter
1/4 cup Port wine
1/2 cup venison broth or beef stock
1 whole, large fire-roasted red peppers
2 tablespoons dried morel mushrooms
Chives for garnish

Steps:

  • Take the tenderloin from the fridge and salt it well. Set it aside to come to room temperature for about 20 minutes.
  • Lay out the roasted red pepper and cut it into large squares (circles would be fine, too). Remove any stray seeds.
  • Grind the dried mushrooms to a powder in a spice grinder, the add to the venison stock.
  • Heat 2 tablespoons butter in a saute pan over medium-high heat. When it stops frothing, saute the tenderloin about 3-5 minutes per side, depending on how you like your meat. Set aside under foil when done.
  • To make the sauce, deglaze the pan with the Port. Scrape up any brown bits with a wooden spoon. When the Port is reduced to a little more than a glaze, add the venison stock and bring to a boil. Reduce this to the point where when you run a spoon through it, the sauce takes a moment to close the trail you left in the pan with the spoon. Turn off the heat and add the final tablespoon of butter. Swirl to combine.
  • To serve, pour some sauce down on a plate, then top with the red peppers. Slice the tenderloin and arrange it on the red pepper. Garnish with chopped chives.

1 lb venison tenderloin (medallions)
1/2 teaspoon fresh ground pepper
3 medium onions (thinly sliced)
1 garlic clove (mashed and diced)
3 tablespoons butter
4 ounces mushrooms (fresh, sliced)
3 tablespoons flour
2 cups water
salt

Steps:

  • Lightly sprinkle tenderloins with pepper and set aside.
  • Sauté onions in 1 tablespoon butter.
  • Add garlic and cook another 3 minutes.
  • Add mushrooms, sautéing another 10 minutes.
  • When done, remove vegetables and add the rest of the butter.
  • Sauté venison 2-3 minutes per side.
  • When done, place on platter and return vegetables to pan.
  • Add flour stirring until it becomes a thick brown paste.
  • Add water, continuing to stir, until gravy is of desired consistency, adding more water if you wish.
  • Correct seasoning and pour over tenderloins.
  • Serve.

Another favourite venison recipe. This recipe considers farm-raised deer which is readily available in better butcher shops, or some larger super markets. A favourite cook offers up this recipe, and can be found in "Lee Bailey's Cooking for Friends". I like Lee Bailey's recipes because he shops for fresh ingredients; I have tried to make a habit of doing just that for each dinner party.

2 1/2 lbs axis venison loin or 2 1/2 lbs denver cut venison
2 cloves garlic, minced
salt and black pepper
2 tablespoons olive oil
1 1/2 cups cabernet sauvignon wine
1/2 cup shallot, coarsely chopped
1 small carrot, thinly sliced
1 bay leaf
2 sprigs parsley
1 cup beef broth
1 tablespoon cold unsalted butter

Steps:

  • Preheat the oven to 450 degrees F.
  • Rub the venison with garlic and sprinkle with salt and pepper.
  • Put olive oil in a heavy skillet.
  • Add venison and sear over high heat until browned on all sides- about 3 minutes Place in oven and roast until medium-rare; for 16- 20 minutes, turning once.
  • Meanwhile, combine the wine with the vegetables and herbs and bring to a boil.
  • Reduce by half over medium heat- about 8 minutes.
  • Strain out vegetables and discard.
  • In a saucepan, reduce broth by half over high heat- about 7 minutes.
  • Combine all the liquids.
  • When meat is done, remove to cutting board and cover loosely with foil.
  • Pour any fat from the pan and deglaze with the reduced liquids
  • Whisk in the cold butter and add salt and pepper.
  • Spoon a bit of sauce over each meat serving.

  • Trim any silverskin off the tenderloins and transfer to a sturdy resealable plastic bag. Ingredients. 2 (1 to 1-1/2 lb) venison tenderloin.
  • Make the marinade: Combine the red wine, garlic, soy sauce, and red wine vinegar in a small mixing bowl and whisk to combine. Stir in the chopped rosemary and the pepper.
  • Place the tenderloin into a resealable bag and pour the marinade over it. Refrigerate for 8 hours, or overnight.
  • Remove the tenderloins from the marinade (discard the marinade) and pat dry. Knock off any pieces of garlic or rosemary. Season generously with black pepper and less generously with coarse salt.
  • Arrange the tenderloins at a diagonal to the grill grate and sear, turning with tongs as needed, until well-browned on all sides, about 3 to 4 minutes per side.
  • Continue to cook until the tenderloins reach your desired degree of doneness, about 15 to 20 minutes total for medium-rare, 135°F on a meat thermometer.
