SLOW COOKER TEX MEX CHEESY CHICKEN AND RICE
Chicken is slow cooked with beans, corn and southwest seasonings, then combined with cheese, rice and your favorite taco toppings for Tex Mex comfort food the whole family will love.

Steps:
- Spray slow cooker with cooking spray. In small bowl, mix taco seasoning mix, cumin, salt and pepper. Sprinkle both sides of chicken with seasoning mixture and add slow cooker.
- Pour Rotel tomatoes, beans and corn over chicken in slow cooker. Cover and cook on low for 4 hours, or until chicken is cooked through. Remove chicken from slow cooker and shred with two forks.
- Turn slow cooker to high. Add Velveeta and cheddar cheese to sauce in slow cooker and cook for 15 minutes. Beat with a whisk until cheeses are melted and smooth.
- Add rice to slow cooker, along with shredded chicken and stir to combine. Cover and cook 10-15 minutes more. Stir in green onions and cilantro just before serving
- Serve in bowls, topped with Fritos corn chips and your favorite taco toppings

TEX-MEX CHICKEN AND RICE CASSEROLE
A tasty twist on a classic casserole! This Tex-Mex chicken and rice casserole has got bold flavors and is incredibly easy to put together!

- Preheat oven to 425 degrees Fahrenheit. Set aside a 9x13" oven-safe casserole dish and lightly spray it with cooking spray.
- In a large pot or skillet over medium-high heat, add cooking oil and once heated, add the onions. Cook until tender.
- Pour in the box of rice and vermicelli, including the seasoning packet.
- Stir for two minutes then pour in the chicken broth and water.
- Bring to a boil then bring down to a simmer and cover for 20 minutes.
- After the rice mixture has cooked for 20 minutes (note: not all the liquid will have cooked away, it finishes in the oven), add in the chicken. It's okay it doesn't cook all the way through as it finishes up in the oven.
- Remove from heat and add diced tomatoes, green chiles, cumin, chili powder, cayenne, salt, and pepper. Stir together.
- CAREFULLY pour mixture into prepared casserole dish.
- Bake for 25 minutes, covered, then uncover the casserole and sprinkle cheese on top and let it melt.
- After removing from oven, let sit for 10-15 minutes. The waiting time is crucial because the liquid will continue to absorb into the rice and the casserole will have a thicker consistency.

TEX-MEX SKILLET CHICKEN AND RICE

- Preheat the broiler. Whisk the salsa, sour cream and 3/4 cup water in a bowl.
- Heat the olive oil in a large ovenproof nonstick skillet over medium-high heat. Add the broccoli, bell pepper, scallion whites and garlic; season with salt and pepper. Cook, stirring, until softened, about 6 minutes. Add the cumin and stir until toasted, 30 seconds.
- Stir in the chicken, rice, salsa mixture and 1 teaspoon salt. Bring to a boil, then reduce the heat to medium and simmer until heated through and saucy, 1 to 3 minutes. Fold in half of the cheese; top with the rest. Broil until the cheese melts, 2 to 4 minutes. Top with the scallion greens.

EASY TEX-MEX CHICKEN AND RICE

- In a deep skillet, heat the olive oil over medium-high heat. When the oil is hot, add the garlic, onion, chili powder, cumin, cayenne pepper, salt, pepper and turmeric. Cook, stirring often, until the onion is soft and the spices are toasted, about 3 minutes.
- Pour in the tomato sauce, diced tomatoes and green chiles, chicken and both bags of rice. Stir together and cook until the rice is heated through and beginning to absorb some of the liquid, about 5 minutes. Turn the heat to low and sprinkle the pepper jack over the top. Cover with a lid and allow the cheese to melt completely, 2 to 3 minutes.
- Sprinkle over the cilantro and serve.
VELVEETA CHEESY CHICKEN & RICE SKILLET
I decided to refer to my cookbook collection to find a tasty meal last night and this was the ticket. Richard prepared it and was tickled ppink with how well it turned out. We made 4 large breasts so we used some more oil than called for and cooked them slowly so they wouldn't burn etc. This came from my Favorite brand Name Best-Loved Recipies cookbook. This tasted like rice a roni with moist chicken... yummy!

- add 1 tsp of the oil to a 12 inch skillet; heat over medium high heath 1-3 minutes or until shimmering. Meanwhile, drain corn; pat dry with paper towels. Add corn to skillet in a single layer. Cook without stirring 5 mintues or until carmelized on one side. Remove corn from skillet; set aside.
- As corn cooks, cut chicken into 1 inch pieces. Combine chicken and seasoning mix in a large bowl. Add chicken to skiller. Cook over medium-high heat 5-7 minutes or until center of chicken is no longer pink, stirring occasionally. Remove chicken from skillet; set aside.
- Add remaning 1 tbsp oil to skillet. Add rice; stir until well coated with oul. Add broth and salsa; bring to a simmer over medium-high heath. Cover skillet; reduce heat to low. Simmer 5 minutes or until most of the liquid is absorbed.
- To serve spoon chicken over rice mixture in skiller, spinkle with cheese and corn. Cover; let stand 5 minutes or until cheese is melted. Sprinkle with cilantro.

- Heat oil in a 12-inch sauté pan over MEDIUM-HIGH heat. Add the chicken and season with the salt and pepper. Cook, stirring frequently, for about 5 to 6 minutes or until the chicken is lightly browned. Use a slotted spoon to transfer the chicken to a dish and set aside.
