- Preheat oven to 375°F. Mix all ingredients just until blended.
- Shape into loaf in 9x5-inch loaf pan.

- Preheat Oven to 350˚ Mix first 5 ingredients together. Stir crushed crackers into meat mixture. Pour into 9 X 13 inch Cake Pan. Cook for 45 minutes to one hour until done. Let rest for 5 minutes before serving. Salt and Pepper to Taste.

Steps:
- Pre heat over at 325°F.
- Mix ground beef, onion, garlic powder, eggs, bread crumbs bbq sauce, and worcestershire sauce together.
- Form into a loaf, place in a baking bag, and put it in a small roaster.
- Bake 1 hr, then pull loaf out of the baking bag and place on cookie sheet.
- Melt velveeta cheese on stove top, use low heat or it will burn.
- Cut the top of the meatloaf making a deep well. Keep it 1 whole piece.
- DO NOT scoop the meat out with a spoon, because the top will go back on the loaf.
- Pour the melted cheese in the meatloaf, and place the piece of hamburger back on the meatloaf.
- Mix together the sauce, and pour over meatloaf.
- Place back in the over for 20 to 30 minutes.

- Preheat the oven to 350 degrees F and line a baking sheet with parchment.
- Pulse the tortillas in a food processor until they are crumbs and transfer to a large bowl. Add the beef, pork, eggs, onion, garlic, chili powder, cumin, 1/2 cup of the tomatoes, 1 teaspoon salt and 1/2 teaspoon pepper. Mix with your hands until well combined.
- Using your hands, shape the mixture into a 12-by-3-inch log on the prepared baking sheet. Create a well in the center running the length of the log. Put the cheese in the well and top with the jalapenos. Shape the meatloaf mixture up and over the filling, making sure to seal completely; you should have a 12-by-4-inch loaf.
- Whisk together the ketchup and remaining 1/2 cup diced tomatoes in a medium bowl. Spoon the mixture over the top and sides of the meatloaf.
- Bake until the meatloaf reaches an internal temperature of 165 degrees, about 1 hour. Let cool for 10 minutes before transferring to a serving platter and slicing.

We enjoy this recipe, and I am only submitting it because my DH says he cannot read the recipe written by my mother and photocopied by me over 20 years ago!! I do not know where my mother got this recipe but I assume she copied it out of some magazine at a beauty parlour, etc.

- Combine all ingredients for meatloaf and press one half the mixture into a loaf pan.
- Combine stuffing ingredients and spread on meat mixture.
- Top with remaining meat mixture. Bake in a moderately slow over of 325 degrees F for 1-1/4 hours. Let rest 15 minutes before slicing.
- Serve with hot tomato or barbecue sauce. Serves 8.
- (Use warmed tomato soup, canned.) If the loaf pan is large enough, pour the fat off and pour the canned tomato soup over the meat for the last 15 minutes of baking.

SPINACH - STUFFED MEATLOAF
This is a great tasting meatloaf that adds that important iron to your diet. This recipe was originally from the cookbook 1,000 Low Fat recipes by Terry Golson The preparation time does not include the resting time in the fridge. I like to get it ready the day before and then just pop it in the oven an hour before dinner.

- Mix together the beef, egg whites, breadcrumbs salt& pepper, shallots garlic, worcestershire sauce& oregano.
- Use your hands to really combine the mixture.
- After you have squeezed as much moisture as you can from the spinach combine it with the cheese, nutmeg& season with salt& pepper.
- On a piece of plastic wrap or wax paper spread out the meat mixture in a rectangle apprx 12 x 8".
- Spread the spinach mixture on top leaving apprx 1/2" clear all around the meat edges.
- Using the paper (plastic) to help roll up the loaf starting from the 8" side.
- Press gently as you go to make sure you have a firmly rolled loaf.
- Press the outside edges together.
- Tightly wrap the meatloaf in plastic wrap (or wax paper) and refrigerate for at leat an hour (I make the loaf the day before and leave it rolled in the fridge over night to be baked the next day).
- Place the meatloaf on a roasting rack in a roasting pan and bake in a 350F oven for 1 hour.
- If you are using the ketchup spread it on top of the loaf before putting it in the oven.
RICOTTA-STUFFED MEATLOAF
This was a Sunday dinner staple for some years in our family. Over time, tastes changed, spouses and children were added, (in some spouses' cases subtracted!) and then we thought the recipe was lost. - Preheat oven to 350 degrees F.
- In a large bowl, mix ground turkey, ground beef, TWO of the eggs, the breadcrumbs, garlic, oregano and tomato paste together.
- The best way to do this is with your hands, so if the meats are brought almost to room temp, it will be easier and not quite such a shock to tender fingers. Make sure all the ingredients are mixed together evenly; set aside.
- In a separate mixing bowl, stir together the ricotta, Parmesan, parsley and remaining egg. If the mix seems a little runny, add a little extra Parmesan. Set aside.
- In a large roasting pan, place one half of the meat mixture and form into a rectangle, with the center a little lower than the sides.
- Spoon all of the ricotta mixture in the center of the meat loaf, leaving at least one inch all the way around.
- Carefully place the rest of the meatloaf mix around and over the top of the ricotta. The easiest way to do this so that the ricotta doesn't "escape" is to start from the sides and the ends and work inward. Smooth and shape the loaf gently and top with mozzarella cheese. An alternate to shredded cheese is to lay thin slices in a decorative pattern down the center.
- Bake uncovered for 60-75 minutes, or until internal temperature reaches 180 degrees.
- Let rest for 10 minutes before cutting into individual servings.
- Delicious with oven-roasted potatoes and a tomato-basil salad. Buon Appetito!
