VEGGIE SAUSAGE HERB STUFFING (LOW CARB)
You may not miss the bread with this one. Not sure where I got started with this one but a little of this and a little adding of that ended with this.

Steps:
- Preheat oven to 350 degrees F.
- Brown sausage.
- Add celery onion cook until brown.
- Drain Fat.
- Beat eggs in a bowl.
- Add to sausage mixture.
- Add all remaining ingredients.
- Put in 8 x 8 square baking dish.
- Bake for about 30 minutes.

Stuffing is commonly made with bread or croutons, which makes it off limits to low-carbers. But it doesn't have to be made that way. There's nothing wrong and everything right with substituting chopped vegetables to make up the missing bulk. So don't get stuffed. Try this recipe instead of all that bread!

Steps:
- Preheat oven to 350 degrees F.
- Remove sausage from casing and crumble it into a pan over medium heat. Add the celery and onion and cook, stirring, until browned. Drain fat if necessary.
- Beat the eggs in a bowl. Using a spoon, mix in the sausage mixture and all the remaining ingredients. Pour the stuffing into the baking dish and bake until hot and browned, about 30 minutes. Serve immediately.

- Preheat the oven to 250 degrees Fahrenheit. Spread bread pieces on a baking sheet in a single layer and bake for 35-45 minutes until toasted. Set aside.
- While the bread is baking, heat the olive oil in a deep skillet or enamel dutch oven. Add the onion, leek, carrots, celery, mushrooms, and parsnip. Cook for 7-9 minutes or until onion is softened and translucent. Add the garlic and saute for 1 minute.
- Stir in the rosemary, sage, oregano, salt and pepper. Cook another 1 minute and then turn off the heat. Transfer to a 9″ x 11″ baking dish and set aside.

- Preheat oven to 450 degrees. Spray a sheet pan with cooking spray then add cauliflower. Sprinkle seasoned salt all over and then drizzle avocado oil. Massage the seasoning and oil into the cauliflower so that it's evenly distributed. Place into oven and cook for about 25 minutes stirring cauliflower half way through.
- While the cauliflower is roasting. Heat a large skillet over medium high heat. Add sausage into the pan and gently break apart with spatula. Add onion, carrots, and celery along with sage, thyme, and rosemary. Mix well and cook all together for 5-6 minutes until sausage is browned and vegetables are soft. Add in minced garlic and cook for another 30 seconds. Turn heat off and stir in parmsesan.
- When the cauliflower is done roasting add to the sausage and veggie mixture. Stir together well. Serve hot!
- This can be made up to three days ahead of time. Preheat oven at 350 degrees and cook for about 25 minutes or until warm. It reheats perfectly!
