I made this for our pastor one night. He loved it so much we nicknamed it "Jason's Pasta." It's a sneaky way to get our kids to eat more veggies. -Suzie Foutty Mansfield, Ohio

2 cups uncooked whole wheat penne pasta
1 pound Italian turkey sausage links, casings removed
1-3/4 cups sliced fresh mushrooms
1 can (14-1/2 ounces) fire-roasted diced tomatoes with garlic, undrained
6 ounces fresh baby spinach (about 8 cups)
1/4 cup shredded part-skim mozzarella cheese

Steps:

  • In a 6-qt. stockpot, cook pasta according to package directions; drain and return to pot., Meanwhile, in a large skillet, cook and crumble sausage with mushrooms over medium-high heat until no longer pink, 5-7 minutes. Stir in tomatoes; bring to a boil. Stir in spinach until wilted., Add to pasta; heat through. Sprinkle with cheese; remove from heat. Let stand, covered, until cheese is melted.

This Italian sausage and ground beef recipe is full of vegetables and Italian herbs -- the longer it cooks the better! Full of flavor, and makes a great base sauce for lasagna. It's critical to use fresh basil, other herbs may be dried. Do not use canned tomatoes which have any corn syrup in them. Home canned tomato equivalent is 3 quarts. If you want a spicier sauce add either crushed red pepper to taste or use hot Italian sausage.

1 pound sweet Italian sausage, casings removed
1 pound lean ground beef
¼ cup olive oil
1 large onion, diced
1 green bell pepper, diced
1 red bell pepper, diced
1 zucchini, quartered and sliced
12 ounces mushrooms, sliced
2 carrots, shredded
4 ounces fresh basil, julienned
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 tablespoon chopped fresh thyme
1 tablespoon fresh oregano
4 cloves garlic, crushed
1 tablespoon white sugar
salt and pepper to taste
3 (28 ounce) cans peeled and diced tomatoes

Steps:

  • In a medium skillet over medium heat, cook sausage and ground beef until brown. Drain, reserving 2 tablespoons drippings. Set aside.
  • In a large stock pot or Dutch oven heat oil over medium heat. Cook onions in oil until translucent. Stir in green and red bell peppers, zucchini, mushrooms and carrots and cook until just tender. Add browned sausage and ground beef. Stir in basil, spinach, thyme, oregano, garlic, sugar and salt and pepper. Cook 2 to 5 minutes. Pour in tomatoes, stir well, reduce heat, cover and simmer 3 hours, stirring occasionally.

2 cups uncooked ziti pasta (7 oz)
2 cups bite-size fresh broccoli florets
1 package (19.5 oz) lean hot Italian turkey sausage, cut into 2-inch pieces
1 tablespoon olive oil
1 large red bell pepper, cut into bite-size strips
1 large yellow bell pepper, cut into bite-size strips
1 medium sweet onion, sliced (about 1 cup)
2 cans (14.5 oz each) Muir Glen™ organic fire roasted crushed or diced tomatoes, undrained
1 cup shredded provolone cheese (4 oz)

Steps:

  • Cook pasta as directed on package, adding broccoli last 2 minutes of cooking time. Drain and return to saucepan; cover to keep warm.
  • Meanwhile, in 12-inch nonstick skillet, cook sausage over medium-high heat 8 to 10 minutes or until no longer pink. Drain; remove sausage from skillet.
  • In same skillet, heat oil over medium heat. Cook bell peppers and onion in oil 3 to 4 minutes, stirring constantly, until vegetables are crisp-tender.
  • Add pasta and broccoli, sausage and tomatoes to skillet. Heat to boiling; reduce heat. Simmer uncovered 4 to 5 minutes, stirring occasionally. Sprinkle with cheese. Cover; cook 1 to 2 minutes or until cheese is melted.

Veggie-Loaded Italian Sausage Pasta Sauce image

This veggie-loaded Italian sausage pasta sauce has become a favorite in our family! It tastes like it has simmered all day, but it comes together in less than an hour!

Number Of Ingredients 12

1 yellow or white onion, peeled and chopped
4 carrots, peeled and diced
4-5 cloves garlic, minced
4 ounces mushrooms, chopped
1/4 cup chopped fresh parsley
1 pound sweet Italian sausage
1/2 cup dry red wine OR 2 teaspoons red wine vinegar + 1/2 cup water from the cooked pasta
1 28-ounce can crushed tomatoes
1 heaping teaspoon beef or chicken soup base
5 ounces baby spinach
Parmesan cheese
16 ounces spaghetti or linguine

Steps:

  • Heat 1-2 tablespoons olive oil in a large pan over medium heat. When hot, add the onions, carrots, and garlic and cook until softened (about 5 minutes). Add the mushrooms and cook until tender. Season with salt and pepper. Add the sausage to the pan, breaking it up into small pieces, and cook until browned.
  • Add the wine to the pan and scrape off any browned bits from the bottom of the pan. Cook until about half of the wine has evaporated (if using red wine vinegar, add the vinegar with the tomatoes and then add the starchy pasta water as needed near the end). Add the tomatoes and chicken or beef base. Bring to a simmer and then lower heat and simmer, stirring occasionally, until desired thickness is reached.
  • Bring a large pot of salted water to a boil. When boiling, add pasta and cook according to package directions. When the pasta is done cooking, reserve 1/2-1 cup of the pasta water and drain the rest. Lightly drizzle the pasta with olive oil and sprinkle with a little kosher salt.
  • When the sauce has reached the desired consistency, add the spinach. If the sauce is too thick, add a little of the reserved pasta water (if you don't need it, throw it away.) Divide the pasta between plates and top with the sauce and parmesan cheese.

1 small onion, chopped
1 can (6 ounces) tomato paste
3 garlic cloves, minced
1 tablespoon sugar
1-1/2 teaspoons dried basil
1-1/2 teaspoons dried oregano
Hot cooked spaghetti

Steps:

  • In a large skillet, cook sausage over medium heat until no longer pink; drain. Transfer to a 4-qt. slow cooker. Stir in the mushrooms, tomatoes, marinara sauce, carrots, peppers, onion, tomato paste, garlic, sugar, basil and oregano. Cover and cook on low for 6-8 hours or until meat is no longer pink and vegetables are tender. Serve with spaghetti.

Kosher salt and freshly ground black pepper
One 16-ounce box gemelli pasta
1 cup 1-inch slices asparagus
1 cup snap peas
1 cup 1-inch segments green beans
2 tablespoons olive oil
2 tablespoons salted butter
1 tablespoon chili flakes
1 cup whole cherry tomatoes
2 cloves garlic, sliced
3/4 cup white wine
1 cup baby spinach
1 cup fresh shaved Parmesan
1/4 cup torn fresh basil leaves

Steps:

  • Fill a pasta pot with pasta and steamer inserts three-quarters of the way full with salted water. Place over medium-high heat and bring to a rapid boil. Cook the pasta in the pasta insert according to the package instructions.
  • Meanwhile, fill the steamer insert with the asparagus, snap peas and green beans. When there is 4 minutes left on the pasta, add the steamer insert to the top of the pot and cover with the lid.
  • Carefully remove the steamer insert and set aside. Remove the pasta insert, shaking the excess water back into the pot, and set aside. Reserve 1 cup pasta water and dispose of the remaining water.
  • Return the pasta pot to high heat and add the olive oil, butter, chili flakes, tomatoes, garlic and some salt and pepper and cook, stirring occasionally, until the garlic is fragrant and beginning to brown, about 1 minute.
  • Deglaze the pot with the white wine and 1/2 cup reserved pasta water. Stir in the drained pasta, steamed vegetables and spinach. Cook until the spinach has wilted and the sauce has slightly thickened, adding pasta water as needed.
  • Stir in three-quarters of the Parmesan and season to taste. Serve, garnished with the remaining Parmesan and torn basil.
