1 cup shredded carrot
1/2 cup finely sliced green onion
1 red pepper thinly sliced
6 large shiitake mushrooms, grilled and sliced thin
2 cups bean sprouts
1/2 cup chopped cilantro
Salt and freshly ground pepper
8 very thin 8-inch square spring roll wrappers
Garlic-Soy Dipping Sauce, recipe follows
Spicy Peanut Dipping Sauce, recipe follows
1/2 cup soy sauce
1/4 cup rice vinegar
2 tablespoons peanut oil
1 teaspoon hot sesame oil
1 teaspoon minced garlic
Pinch of sugar
2 tablespoons finely chopped garlic
1/2 cup smooth peanut butter
1/2 cup soy sauce
1 teaspoon sugar
1 tablespoon rice vinegar
1 tablespoon hot chile oil
1/2 cup cilantro leaves, finely chopped

Steps:

  • Combine all vegetables in a bowl and season with salt and pepper to taste. Lay the spring roll wrappers on a flat surface, pointed edge toward you. Put a 1/8 of the filling in the bottom third of the wrapper, bring the pointed edge over the filling, fold in the sides tightly. Dab the top pointed edge with water and roll tightly. Serve with sauces.
  • Combine all ingredients in a small bowl.
  • Combine all ingredients in a bowl and whisk until smooth, add cilantro just before serving.

2 tablespoons fresh lime juice
1 tablespoon fish sauce
1 tablespoon water
1 tablespoon chili paste with garlic
1 teaspoon sugar
2 teaspoons grated peeled fresh ginger
2 garlic cloves, minced
12 sheets rice paper (8 inch round)
3 leaves green leaf lettuce, quartered
3 cups fresh broccoli sprouts or 3 cups alfalfa sprouts
3 carrots, juilienned
2 cucumbers, juilienned
2 yellow bell peppers, juilienned
24 medium shrimp, cooked, peeled, and halved lengthwise
36 fresh mint leaves

Steps:

  • To prepare sauce, combine first 7 ingredients, stirring with a whisk until sugar dissolves; set aside.
  • To prepare spring rolls, add hot water to a large, shallow dish to a depth of 1 inch. Place 1 rice paper sheet in dish; let stand 30 seconds or just until soft. Place rice paper sheet on a flat surface.
  • Arrange 1 lettuce piece in center of sheet. Top with 1/4 cup sprouts, 3 carrot strips, 3 cucumber strips, 3 bell pepper strips, 4 shrimp halves, and 3 mint leaves.
  • Fold sides of sheet over filling; roll up jelly-roll fashion. Gently press seam to seal. Place spring roll, seam side down, on a serving platter (cover to prevent drying).
  • Repeat procedure with remaining rice paper, lettuce, sprouts, carrot, cucumber, bell pepper, shrimp, and mint. Serve with dipping sauce.

A very fresh and delicious way to enjoy salmon, using rice paper for the wrapper. The ingredient list may look long, but it is mostly ingredients that you will have on hand. If you have never used rice paper before, this is a great way to learn how to use them. If you are not particular about making an even 16 rolls, go ahead and play with the amounts to use more or less of what veggies you want. The veggies add a delicious crunch and flavor to the rich salmon.

1/2 cup soy sauce
1/4 cup rice vinegar
1 tablespoon hoisin sauce
2 teaspoons sesame oil
1 teaspoon fresh rosemary, thinly sliced
2 teaspoons fresh ginger, finely chopped
2 teaspoons fresh garlic, finely chopped
2 teaspoons green onions, thinly sliced
1 lb salmon fillet, skinless
1 tablespoon olive oil (optional)
salt and pepper
2 tablespoons sesame seeds, toasted
2 cups jicama, cut into 2-inch-long matchsticks
2 cups carrots, cut into 2-inch-long matchsticks
2 cups napa cabbage, cut into thin strips
2 cups fresh bean sprouts
16 round rice paper sheets, 9 inch
pie plate filled with very warm water

Steps:

  • Dipping Sauce:.
  • Mix all sauce ingredients in a bowl. Set aside for the flavors to meld while you are making the spring rolls.
  • The Spring Rolls:.
  • Cook salmon in olive oil or a nonstick sprayed medium heat pan until cooked through, about 3 minutes a side, depending on the thickness. Sprinkle with salt and pepper to taste. Break salmon apart into medium chunks with a fork and let cool while you prepare your other ingredients.
  • Get your ingredients ready so that they are separate and ready to grab for each roll. I split each ingredient pile into 4 so I can divide them more evenly between the 16.
  • Set 1 rice paper sheet in very warm water in a pie plate and let sit for about 15 seconds, or until soft and pliable. Remove and set on counter or other flat space where you can place the rice paper. When you remove a sheet, add another one to the hot water while you make a roll, so it will be ready to use for the next one. You will have to replace the water a few times, as it cools.
  • Add 1/16th of each of the ingredients vertically on the rice paper, taking up the center half of the sheet. Fold the top quarter and bottom quarter to meet at the center of the ingredients, overlapping slightly. Tightly roll the sheet from one side to the other to make a secure spring roll. The rice paper will automatically stick to itself to "glue" it together. There is a demo on Recipezaar with photos of another way to roll them.   • Repeat until you have 16 rolls and place on a plate or baking tray as you go along. You can make these hours before a party if you wish.

2 ounces dried mai fun noodles
12 ounces cooked shrimp, Chopped
1 cup green cabbage, Finely Chopped
1/2 cup carrot, Peeled And Chopped
1/2 cup green onion, Chopped
1/2 cup bean sprouts, Chopped
1/4 cup red bell pepper, Finely Chopped
2 teaspoons fish sauce
16 egg roll wraps
1 large egg
vegetable oil, For Frying
1/2 cup soy sauce
1/4 cup mirin
1/4 cup rice vinegar
2 green onions, Finely Chopped
4 teaspoons ginger, Minced
3/4 teaspoon hon dashi (Japanese bonito-type soup stock granules)

Steps:

  • Cook noodles in pot of boiling water until tender, about 1 minute.
  • Drain. Rinse with cold water.
  • Drain well.
  • Coarsely chop.
  • Place noodles in bowl. Mix in next 7 ingredients.
  • Season with salt and pepper.
  • Place 1 egg roll wrapper on work surface.
  • Place 1/4 cup shrimp mixture in 3-inch-long log down center of wrapper.
  • Fold bottom of wrapper over filling, then fold in sides of wrapper over filling.
  • Brush top edge of wrapper with egg.
  • Roll up tightly, pressing to seal edge.
  • Repeat with remaining wrappers and shrimp mixture. (Can be made 6 hours ahead. Cover; chill.).
  • Pour oil into heavy large pot to depth of 3 inches.
  • Heat to 350°F
  • Working in batches, add rolls to oil; deep-fry until golden brown, about 5 minutes.
  • Drain on paper towels.
  • Serve with sauce.
  • To make soy-ginger dipping sauce:.
  • Whisk all ingredients in bowl to blend. Makes about 1 cup.

All veggie spring rolls are a great side dish or appetizer. I like to dip them in sweet & sour sauce. DELICIOUS!

1 cup broccoli
1 cup carrot
2 cups cabbage
1 cup snow peas
8 -10 shallots
1 cup mushroom
fresh grated ginger
2 -3 tablespoons vegetable oil
2 -3 teaspoons sesame oil
2 -3 teaspoons soy sauce
2 teaspoons sugar
salt
white pepper
egg roll wraps or spring roll wrappers
water

Steps:

  • Cut up all veggies into small pieces (thinly sliced).
  • In large pan or wok heat up veg. oil and add mushrooms and ginger. After a minute, add rest of veggies. Cook for 2-3 minute
  • Add sesame oil, soy sauce, sugar, salt and pepper, to taste. Cook another 3 minutes.
  • Remove from heat.
  • Take a wrapper, use fingers to moisten the edge with water, lay the wrapper in a diamond shape and place veg mixture in middle.
  • Fold up bottom, sides and then roll up to the top (use enough water to seal).
  • I bake mine in a cake pan that has been greased with some oil spritzed on top, 400 degrees for 10-15 min (until brown), but you could steam or fry.

3/4 cup Muir Glen™ organic tomato puree (from 28-oz can)
2 tablespoons lime juice
1 teaspoon grated gingerroot
1 teaspoon soy sauce
1/2 teaspoon sesame oil
1/2 teaspoon chili paste or 1 teaspoon finely chopped hot chile
2 cups bean sprouts
2 cups shredded Chinese (napa) cabbage (8 oz)
2 cups snow (Chinese) pea pods, cut into julienne strips
18 six-inch rice-paper wrappers
2 cups finely chopped cooked sea bass or whitefish (3/4 lb)
1/3 cup chopped fresh cilantro
3 tablespoons finely chopped unsalted roasted peanuts

Steps:

  • In small bowl, mix all dipping sauce ingredients until smooth. Cover; refrigerate until serving time.
  • In saucepan, heat 1 inch water to boiling, or place steamer basket in 1/2 inch water in saucepan (water should not touch bottom of basket) and heat to boiling. Add bean sprouts. Cover; cook or steam 2 minutes. Immediately rinse with cold water; drain. Repeat with cabbage and pea pods.
  • Place rice-paper wrappers, 2 at a time, in bowl of hot water 45 seconds. Remove and place on plate. When completely soft, separate wrappers.
  • Place about 2 tablespoons fish, 1 tablespoon each bean sprouts, cabbage and pea pods, 1 teaspoon cilantro and 1/2 teaspoon peanuts on center of each wrapper. Fold one end of wrapper up about 1 inch over filling; fold right and left sides over folded end. Fold remaining end down, wrapping around roll. Serve with dipping sauce.
