Chicken and Pasta Salad With Raw Vegetables image

This is an outstanding dish. It looks so appetizing on a platter. It is so colorful with the red tomatoes, green pepper and the cheese colored croutons. It's a great dish to take to a potluck or serve on a hot summer day. I got this recipe about 10 years ago from Doddi at work. There is a 12 chilling I included as cooking time.

1/2 lb pasta, I use Rotini Pasta
8 ounces garlic & herb salad dressing mix (I use Good Seasons)
3 cups cooked chicken, diced
1/4 cup mayonnaise, I use Hellman's
1 pint cherry tomatoes, cut in half
1 cup scallion, sliced
1/4 lb fresh mushrooms, sliced
1 green pepper, sliced
1 1/2 cups cheese and garlic-flavored croutons

Steps:

  • Toss hot pasta with 3/4 cup of salad dressing, reserve remainder to serve on side with completed salad.
  • Cover and chill 12 hours.
  • Just before serving toss chicken with mayonnaise and pasta and place on a platter. Sprinkle tomatoes, scallions, mushrooms, green pepper and croutons on top of chicken and pasta.
  • Serve with reserved dressing.

1 cup chicken, chopped
1 stalk celery, chopped
1/4 cup onion, chopped
1/4 cup green olives, chopped
1/4 cup cucumber, chopped
1 teaspoon olive juice
1 1/2 cups pasta, uncooked
2 tablespoons mayonnaise
1 teaspoon sodium-free seasoning (I used Mrs. Dash)
1/4 cup Italian dressing

Steps:

  • Boil pasta while chopping up veggies and chicken.
  • Rinse and drain pasta with cold water
  • Place pasta in a large bowl and mix with Italian dressing; set aside for 15 minutes.
  • Mix up chopped chicken, veggies, seasoning and mayo.
  • Mix pasta and veggie/chicken mixture.

4 small boneless skinless chicken breasts (1 lb.)
2 tsp. A.1. Dry Rub Bold Original
2-2/3 cups rotini pasta, cooked, cooled
2 cups chopped spring lettuce mix
1 pkg. (10 oz.) grape tomatoes
1 red pepper, chopped
1 cup frozen peas, thawed
2 carrots, thinly sliced
2 green onions, sliced
1/4 cup chopped fresh cilantro
1/2 cup KRAFT Classic Ranch Dressing

Steps:

  • Heat grill to medium heat.
  • Rub chicken with Dry Rub; grill 6 to 8 min. on each side or until done (165ºF). Cool completely.
  • Cut chicken into bite-size pieces; place in large bowl.
  • Add remaining ingredients; mix lightly.

Italian Pasta Salad With Fresh Vegetables image

This is a great summer meal-in-one. Its bursting with fresh-from-the-garden goodness with added spark from the salami. Be as creative as you like with the optional veggies. I often have a few handfuls of something from the garden or a half a cup of leftovers that go right in. Even if you don't particularly like anchovies try adding the anchovy paste at least once. You don't really taste it -- it just improves the flavor of the dressing. Try it at your next potluck or picnic!

1 green pepper, chopped
1 red pepper, chopped

1/4 cup black olives, sliced
1/2 lb hard salami or 1/2 lb pepperoni, diced

pepperoncini peppers (optional) or other hot pepper (optional)

snap peas (optional)
green peas (optional)

Steps:

  • Mix all salad ingredients and any optional veggies in a large bowl.
  • Put all dressing ingredients into a bowl and mix vigorously with a whisk or fork to make sure that the anchovy paste is thoroughly blended inches.
  • Toss salad with dressing and refrigerate for several hours or overnight.
  • Taste and correct seasonings if necessary. If the pasta has soaked up too much dressing make a little more.
  • There should be a tang too it, maybe even a bite. If it seems bland make more dressing but don't overwhelm the fresh, bright flavor of the veggies.

2 cups whole wheat rotini pasta
1 tablespoon olive oil, or as needed
1 pound chicken, cut into bite-size pieces
10 asparagus spears, cut into 1/2-inch lengths
1 small zucchini, sliced
1 small yellow squash, sliced
½ small onion, sliced
½ cup sliced mushrooms
¾ cup low-sodium chicken broth
1 tablespoon extra-virgin olive oil
1 pinch red pepper flakes, or to taste
½ cup feta cheese, crumbled

Steps:

  • Bring a large pot of lightly salted water to a boil; cook the rotini at a boil until tender yet firm to the bite, about 8 minutes; drain.
  • Heat olive oil in a skillet over medium heat. Cook chicken in hot oil until browned completely, 3 to 5 minutes. Add asparagus, zucchini, yellow squash, onion, and mushrooms; continue to cook until the chicken is no longer pink in the middle, about 5 minutes more.
  • Pour chicken broth over the vegetable mixture, place a cover on the skillet, and continue cooking until vegetables are tender, about 10 minutes.

I found this recipe on another web site and made it for Sunday night dinner - the family loved it. I wanted to get it posted before I lost the recipe. You could low carb this recipe by omitting the pasta and serving on a bed of salad greens.

1 1/2 cups yellow squash, julienne-cut
1 1/4 cups carrots, julienne-cut
1 cup sliced onion, vertically sliced
1 cup zucchini, julienne-cut
1 cup red bell pepper, julienne-cut
1 tablespoon olive oil
4 boneless skinless chicken breasts
1/2 teaspoon dried basil
1/2 teaspoon dry oregano
1/4 cup balsamic vinegar
1/4 cup fresh lemon juice
1 tablespoon olive oil
1 1/2 teaspoons Dijon mustard
1 teaspoon salt
1/4 teaspoon black pepper
1 garlic clove, crushed
1 (12 ounce) box ziti pasta, cooked
2 tablespoons fresh basil, chopped
16 cherry tomatoes, halved
feta cheese, to garnish

Steps:

  • Preheat oven to 450 degrees.
  • Combine all the vegetables with the olive oil, toss gently to coat. Bake at 450 for 20 minutes, turning occasionally; cool.
  • Prepare grill.
  • Sprinkle chicken with dried basil and oregano; cook chicken 4 minutes on each side or until chicken is doen. Cool; cut into 1/4 inch wide strips.
  • Combine all ingredients for the vinaigrette, with a whisk.
  • Combine the roasted vegetables, chicken, vinaigrette, pasta, fresh basil, tomatoes and feta in a large bowl; toss gently to coat.

2 chicken breasts, cooked and chopped
1 cup small shell pasta
4 vine sweet mini bell peppers, sliced
1 celery heart, chopped
1/2 cup water chestnut, chopped
1/2 cup cabbage, purple, sliced and chopped
1/2 cup fresh cut green beans, steamed slightly
1 cup grape tomatoes
1/4 cup green onion
1/4 cup shredded carrot
1 (4 ounce) can black olives, sliced
1/4 cup broccoli floret
1/4 cup cauliflower floret
1/2 cup light mayonnaise
1 tablespoon dill weed
salt
2 tablespoons capers

Steps:

  • Cook chicken breasts in any way desired. I let them cook in the crock pot over a few hours because that's easiest for me, but you could boil, grill, pan-fry or bake the chicken also. Cook pasta as directed on the box, drain and rinse with COLD water. Mix the chicken and pasta in a large bowl and set in the fridge while you chop vegetables. Chop all vegetables. I "steam" my green beans by putting them in a plate of water and cooking them in the microwave for a few minutes (in a low powered microwave). Drain olives before putting them in the mix. Stir in with Light Mayo and dill weed and salt to taste. Let chill in the fridge.
