Vegetarian Rice Paper Rolls image

Vegetarian Rice Paper Rolls filled with spicy tofu, fresh veggies and vermicelli noodles are great for a light lunch or dinner. These summer rolls are a veggie twist on the beloved Vietnamese rice paper rolls. Suitable for both vegetarians and vegans.

6 Rice Paper Wrappers
50g Vermicelli Rice Noodles, cooked to packet instructions
100g Sriracha Tofu (CLICK THROUGH TO RECIPE)
1 Carrot, julienned
1/8 Red Cabbage, thinly shredded
1/2 English Cucumber, julienned
1/2 Red Capsicum / Bell Pepper, julienned
1/4 cup Fresh Cilantro
Peanut Hoisin Dipping Sauce

Steps:

  • Place a damp tea towel or dish cloth onto a clean surface and fill a bowl with warm water. Dip a rice paper wrapper in the water for 20 seconds or until softened, then lay the wrapper on top of the damp tea towel.
  • Pile your fillings up in the middle bottom of the wrapper (be careful not to overload), then fold the bottom and sides of the wrapper over the fillings like an envelope. Roll up tightly and set aside. *NOTE this step is clearly demonstrated in step by step photos in this post*
  • Repeat with the remaining wrappers and filling ingredients.
  • Serve with peanut hoisin dipping sauce.

This is a vegetarian version of ricepaper rolls. Serve with you rfavourite asian sweet chilli or other sauce. Makes approx 30 rolls You can add cooked chicken or prawns/shrimp if you wish. You can also add in cooked and drained rice vermicelli noodles if desired. For gluten-free check your fish sauce and dipping sauce are gluten-free suitable

30 sheets rice paper
100 g snow peas, finely sliced lengthways
2 medium carrots, grated
1/4 green cabbage, finely shredded
30 leaves coriander (cilantro)
1 tablespoon tamari or 1 tablespoon soy sauce
100 g bean sprouts
8 green onions
1/2 red capsicum, finely sliced (sweet bell pepper)
30 sheets rice paper
1 lemon, juice of

Steps:

  • Prepare veges.
  • Place the shredded cabbage in a bowl with the lemon juice and fish sauce to marinate.
  • Soak the rice paper sheets, 2 to 3 at a time, in cold water for approximately 2 minutes. Lift out carefully and place on a damp tea towel to continue softening. When they are fully soft and pliable they are ready to use.
  • Using one softened rice paper sheet at a time. Place a small amount of each vegetable and 1 piece of coriander/cilantro on the edge of the paper. (Suggested amounts are 1 to 2 slices of each vegetable and about 1 teaspoon of carrot and cabbage.) It's better to under rather than over fill the rolls as they can become difficult to roll.
  • Roll up the rice paper, tucking in the edges. Place on a platter or tray. Continue with the other sheets of rice paper until all the filling is used. You can completely wrap the filling to look like a spring roll parcel or can leave one end folded neatly open to show the colourful fillings.
  • Serve rice paper rolls cold or at room temperature, and use sauce to dip rolls into. I like to use asian style sweet chilli sauce.

I just threw this together for an appetizer and they turned out as very tasty wraps - lots of crunch and peppy with the sweet chili sauce . It can be vegetarian by leaving out the crab or shrimp- still tasty. These may also be served as a side dish or as a course with an Oriental meal. I usually make the filling early in the day and roll the wraps within an hour or two before serving keep cool if you do these ahead. 15 rice paper sheets (6 inch)
1/2 cup green cabbage, finely chopped
1/2 cup fresh carrot, finely chopped
1/2 cup sweet onion, finely chopped
1/4 cup celery, finely chopped
1/4 cup sweet green pepper, chopped
3 tablespoons black sesame seeds
5 ounces imitation crabmeat (optional) or 5 ounces shrimp, chopped (optional)
oriental sweet chili sauce (or any other favorite spicy sauce, allow 1/2 - 1 tsp per roll)

Steps:

  • Mix all the ingredients except rice paper& Chili sauce Shortly before serving soften each rice paper wrap separately- Do this by submerging the wrap in a bowl of warm water for a minute of two.
  • When it is pliable it is ready, remove that one from the water and drop in another one.
  • Lay out a couple of paper towels and place the softened wrap on the towel.
  • Don't rub it just place it on the towel Place 1-2 tbsp of the veggie mix in the center of the wrap, add 1/2- 1 tsp sweet chili sauce.
  • Fold up the bottom then fold in the sides and roll to form a sealed roll.
  • Allow 3-5 per serving.

These rolls are very delicious, easy to make and low fat. Fab as a starter, and people are always very impressed. They can be served cold, but I prefer to perpare them in advance, leave them in the fridge covered with a wet tea towel and then steam them for two minutes just before serving. I like to serve them with a sweet chili sauce and vietnamese coleslaw (I shall post this recipe also).

30 g rice vermicelli
1 cup cabbage, shredded
1 carrot, grated
1 tablespoon coriander, chopped
1 spring onion, chopped
1 tablespoon rice vinegar
1 tablespoon water
1 teaspoon caster sugar
1/2 teaspoon salt
1 garlic clove, minced
18 sheets circular rice paper

Steps:

  • Firstly, mix the rice vinegar, water, caster sugar, salt and garlic in a large bowl and leave to sit.
  • Soak the rice vermicelli in boiling water for about 10 minutes, until it is no longer hard (but not soggy!).
  • Add the noodles, cabbage, carrot, coriander and spring onions to the dressing and mix well.
  • Now set up your production line- get a flat bowl and fill it with hot water. Take a rice paper sheet and soak it in the water until it's soft- about 15 seconds.
  • remove it from the water and place on a clean tea towel. Spoon some of the mixture onto the rice paper.
  • Fold in the bottom first, then the sides, and roll to form a cigar shape.
  • Continue the same with the rest of the rolls.
  • These can be prepared well in advance and stored in the fridge under a wet tea towel- see the recipe description above for serving suggestions.

COLD VEGETARIAN SPRING ROLLS

After trying several recipes for vegetarian spring rolls (all good) I came up with this combination that I like best. Although they're at their very best fresh, they also keep and pack well, making this a nice alternative to packing a salad for lunch. I also like to add cooked shrimp or fake crab to these - but then, of course, they aren't vegetarian anymore.

1 tablespoon olive oil
1 -2 tablespoon soy sauce
1 teaspoon sesame oil
2 tablespoons rice vinegar
1 -2 teaspoon sugar
1/2 teaspoon garlic and red chile paste
2 medium carrots, julienned
4 green onions, julienned
1/2 red bell pepper, julienned
1 medium cucumber, julienned (hot house or persian)
4 cups Chinese cabbage, slice thinly
5 mushrooms, sliced thinly
1/2 cup cilantro, chopped
16 rice paper, rounds softened
cilantro, garnish

Steps:

  • Combine all dressing ingredients in a large bowl. Add all vegetables and the chopped cilantro. Toss thoroughly. Taste and adjust seasonings as needed. Let set 10-15 minutes for flavors to blend.
  • Soak one rice paper at a time in water until softened. Place on clean towel, and put 1/4 to 1/3 cup of the vege mixture about 2" from the lower edge of the rice paper.
  • Fold the lower edge up to cover the filling. Fold in the sides, and roll up gently. A pretty touch is to sprinkle the upper half of the rice paper with the whole cilantro leaves prior to completing the wrap - they show through the rice paper and are very decorative. Place on a plate, seam down, and cover with plastic wrap. Repeat with remaining wrappers and filling.
  • Serve with a sauce of your choice. Use the same ingredients as the dressing if you like, or experiment with mustard or plum sauce. I like the lighter combinations better with these rolls. Even commercial Chinese salad dressing works in a pinch.
