VEGETARIAN BAKED BEANS
These easy-to-make baked beans from author Margaret Roach are an ideal meal choice for vegetarians looking to up their protein intake. If you prefer spicy foods, add some hot sauce. Meat-eaters, try substituting thick-cut bacon for onions.

Steps:
- Preheat oven to 325 degrees.
- Place beans in a large pot and add enough water to cover; let soak overnight. Drain and return to pot; add enough water to cover and simmer over medium-high heat for 30 minutes. Drain and transfer to a large bowl; stir in molasses, maple syrup, mustard, and tomatoes. Set aside.
- Coat the bottom of a Dutch oven or a 9-by-13-inch high-sided baking dish with olive oil. Add onions and top with bean mixture. Add enough boiling water to cover bean mixture by 1 inch. Cover Dutch oven with lid or baking dish with parchment paper-lined aluminum foil. Transfer to oven and bake until beans are softened, about 1 1/2 hours, checking water level and adding more as necessary.
- Uncover beans and continue baking until thick and syrupy, about 45 minutes more. Season with salt and pepper and serve.
VEGAN BAKED BEANS

- Preheat the oven to 325 degrees F.
- Place the dried mushrooms in a medium bowl and cover with 2 cups boiling water, make sure each mushroom is submerged. Let steep for 10 minutes. Strain through a fine-mesh strainer, reserving the liquid. Roughly chop the steeped mushrooms and set aside.
- Heat the olive oil in an ovenproof heavy-bottomed pot or Dutch oven over medium-high heat. Add the onions, bell peppers and chopped mushrooms and cook, stirring often, until the vegetables are slightly softened, 3 to 4 minutes. Reduce the heat to medium and add the garlic, chili powder, smoked paprika and cayenne and cook, stirring, until fragrant, about 1 minute.
- Add the tomato puree, bourbon, molasses, brown sugar, Worcestershire sauce, mustard, 2 teaspoons salt and 1/4 teaspoon pepper, bring to a simmer and cook to combine, about 3 minutes. Add the beans, vegetable broth and reserved mushroom liquid. Raise the heat to high, bring to a boil and cook for 10 minutes. Cover the pot, transfer to the oven and bake until the beans are tender, about 3 hours.
- Uncover and increase the oven temperature to 350 degrees F. Bake until the sauce thickens and the beans on top begin to brown, about 30 minutes.
VEGETARIAN BAKED BEANS

- Place navy beans into a large container and cover with several inches of cool water; let stand 8 hours to overnight.
- Drain navy beans and put into a pot with 5 cups water.
- Bring water to a boil; reduce heat and simmer until beans are tender, about 1 hour.
- Preheat oven to 250 degrees F (120 degrees C).
- Combine beans, onion, brown sugar, molasses, vinegar, mustard, garlic, nutmeg, and cinnamon in a 2-quart casserole dish with a lid; season with pepper. Place lid on dish.
- Bake in the preheated oven, 5 to 7 hours, stirring halfway through and adding water if mixture is too dry. Remove lid and bake until mixture has reduced to desired thickness, about 1 hour more.

OLD FASHIONED FRENCH CANADIAN BAKED BEANS
This was a staple for me growing up in Quebec and brings back many happy memories. A perfect winter comfort food!!! I have tweaked an original recipe and wanted to share it with you. Great at breakfast with fried egg and sausage. A hearty meal with crusty bread and salad. It takes some time but well worth the wait -- I hope you enjoy them. Special note: some people prefer using salt pork when preparing baked beans - I use sliced bacon instead.

- Cover beans with water and soak overnight.
- Rinse beans then bring to a boil in approximately 1 quart of water, bay leaf and garlic - simmer for 30 minutes.
- Turn off heat and let beans stand for approximately 1 1/2 hours until soft. Drain and reserve the bean liquid. Discard bay leaf and garlic.
- Mix together remaining ingredients (excluding beans and bacon).
- Add beans to bean pot (or any covered dish).
- Stir in molasses mixture to beans. Top off with some of the reserved bean liquid.
- Arrange bacon on top.
- Cover and bake at 300 degrees for 7 hours. For the final hour of cooking, remove cover to let bean brown up nicely.
- Note: check occasionally and keep beans covered with reserved bean liquid during cooking.

- Place beans and 2-1/2 qts. water in a 6-qt. Dutch oven; bring to a boil and boil for 2 minutes. Remove from the heat; soak for 1 hour. Drain and rinse beans; return to pan with remaining water. Bring to a boil. Reduce heat; cover and simmer for 1 hour or until beans are tender. Drain, reserving cooking liquid. Return beans to pan; add remaining ingredients and mix well. Cover and bake at 350° for 2 to 2-1/2 hours or until beans reach desired consistency, stirring occasionally. Add some of the reserved cooking liquid if too thick.

- 1. The night before place beans in a colander and rinse under cold water. Place the beans in the crock pot and cover with fresh cold water to cover by 2 inches.Leave to soak overnight for at least 8 hours or up to 12. The next day drain the beans and rinse again. Put the beans in a pot and cover with 5 cups cold water . Heat to boiling and cook until tender approx 30 mins.Drain. In a small bowl mix together the cinnamon, basil and pepper. Set aside. In a heat safe bowl mix together the boiling water, molasses, maple syrup, vinegar, oil, and ketchup. Mix well and set aside. Place half the beans in the crock pot. Sprinkle with half the apricots and onions. Evenly pour half the tomatoes over top. Sprinkle with half the spice mixture. Repeat. Pour water/ molasses mixture over top, making sure that the liquid is mixed in. Cover and cook on low 8 -10 hours or high 4 - 5 hours.
OLD FASHIONED BROWN SUGAR AND MOLASSES OVEN-BAKED BEANS

- Remove stones from beans, rinsing well in a colander.
- Place beans in a large pan, adding a teaspoon of salt along with enough water to cover contents by 3 inches.
- Over high heat, bring beans to a rolling boil for 2 minutes.
- Remove pan from heat, cover pan and let stand for 1 hour.
- Uncover pan, breing contents back to a boil.
- Reduce heat and simmer until beans are tender (1 to 1 1/2 hours).
- As necessary, add more water to keep beans well covered.
- Drain beans well, reserving liquid.
- In a 2 1/2 quart bean pot (or casserole) combine molasses, brown sugar, mustard, ketchup and 1/2 teaspoon salt.
- Add drained beans. Then stir in enough reserved cooking liquid to cover beans.
- Mil well.
- One one side of pot, push whole onion down into beans.
- Cut several gashes in the salt pork and push it down into beans on other side of the pot.
- Cover pot, place in oven and set heat to 350 degrees.
- Bake until beans are bubbling (about 1 hour).
- Reduce heat to 250 degrees and continue to bake for 6 to 8 hours more, stirring every hour or so.
- As beans cook, they will absorb liquid.
- Continue cooking, adding reserved liquid (or water) a little at a time to keep beans moist, but not soupy.
- Baked beans are done when thick and fragrant, with a deep, brownish red color.
- When serving, remove and discard onion, while keeping in sliced salt pork if desired.

I do check the flavor level at this point, mostly for salt, but remember that the flavors will meld together and mellow a bit, so continue to taste throughout. - Transfer the pot into the oven and bake for 20-25 minutes, until thicker and bubbly. The bean mixture will thicken up as it cools.
