A very tasty pasta salad, especially with the best veggies of the season. If cherry tomatoes are not available, chop a few plum tomatoes, or add chopped red and green pepper in place of cucumber. To make this delicious pasta a hit with your kids, omit olives and onion. Prepares as directed, using your favorite pasta shape and substituting Kraft Cheddar Cheese, cubed, for the Feta.

450 g rotini pasta, cooked, drained and cooled (1/2 900g package)
1 cup Greek feta cheese, crumbled
1 cup cherry tomatoes, halved
1 cup cucumber, unpeeled, chopped

1/2 cup zesty Italian dressing
1/4 cup red onion, finely chopped

1 cup whole wheat rotini pasta, uncooked
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, softened
1/2 cup CLASSICO Light Creamy Alfredo Pasta Sauce
2 Tbsp. fat-free milk
1 lb. boneless skinless chicken breasts, cut into bite-size pieces
1 cup halved red pepper strips
3 cloves garlic, minced
1 cup frozen green beans
3/4 cup rinsed canned chickpeas (garbanzo beans)
1/4 cup crumbled reduced fat feta cheese

Steps:

  • Cook pasta as directed on package, omitted salt.
  • Meanwhile, mix Neufchatel, pasta sauce and milk until blended; set aside. Cook chicken, peppers and garlic in large nonstick skillet on medium heat 5 to 6 min. or until chicken is done, stirring frequently. Add green beans; cook and stir 3 min. Add Neufchatel mixture; cook 2 min. or until heated through, stirring constantly.
  • Drain pasta. Add to Neufchatel mixture along with the chickpeas; mix lightly. Top with feta.

1 can broccoli cheese soup
1 (3 ounce) container cream cheese, softened
3/4 cup milk
1/2 cup grated parmesan cheese
2 teaspoons Dijon mustard
1/4 teaspoon pepper

Steps:

  • Cook rotini per instructions, adding vegetables for last 5 minutes.
  • Drain into a collander.
  • In pan stir soup into cream cheese.
  • Add milk, parmesan, mustard and pepper.
  • Heat on low until cheese is melted and smooth.
  • Add rotini and vegetables.
  • Heat through.

1 teaspoon black pepper
1 teaspoon chopped parsley or 1 teaspoon chopped chives

Steps:
