5 1/2 cups vegetable stock
1/3 cup sun-dried tomato
1 onion, chopped
2 cups arborio rice
1 cup mozzarella cheese, shredded
1 cup grated parmesan cheese
1/4 cup fresh basil, chopped
to taste salt and pepper

Steps:

  • In a large saucepan, bring stock to a simmer. While the stock is heating up, drain sun-dried tomatoes, reserving the oil. Coarsely chop tomatoes and set aside.
  • In a large skillet, warm 2 tablespoons tomato oil, add onion and saute until translucent, about 6 minutes.
  • Add rice to the pan and stir until white spots begin to appear in the center of the grains, about 1 minute. Spoon a ladle full of the vegetable stock into the pan and cook on low until all of the stock is absorbed, about 2 minutes. Continue adding stock one ladle full at a time until the rice is tender and the mixture is creamy, approximately 20-25 minutes.
  • Add cheeses, sun-dried tomatoes, 2 tablespoons of remaining tomato oil, basil, salt, and pepper. Mix well and serve.

1 tablespoon butter or olive oil
1 cup thinly sliced leeks or finely chopped onions
1 1/2 teaspoons Italian herb blend
1/4 teaspoon crushed red pepper flakes, or to taste
1 1/2 cups arborio rice
1/2 cup dry white wine
1 can (15-ounce) diced tomatoes, or plum tomatoes, coarsely chopped, with liquid
2 1/2 cups chicken or vegetable broth
1/2 cup pitted Kalamata or other Mediterranean black olives, pitted and halved
6 ounces smoked mozzarella, shredded
1/2 cup Sicilian or other good quality green olives, pitted and coarsely chopped
1 cup loosely packed fresh parsley leaves
Salt to taste

Steps:

  • Heat the butter in pressure cooker over medium-high heat. When it begins to foam, add the leeks, herbs, and crushed red pepper and cook, stirring frequently, for 1 minute. Stir in the rice and coat it with the butter. Add the wine and cook over high heat, stirring, until it evaporates, about 1 minute. Add the tomatoes, broth and black olives.
  • Lock the lid in place. Over high heat, bring to high pressure. Lower the heat to maintain high pressure and cook for 4 minutes. Quick-release the pressure by setting the cooker under cold running water. Remove the lid, tilting it away from you to allow any excess steam to escape.
  • Boil over medium-high heat, stirring constantly, until the rice is tender but still chewy and the risotto loses most of its soupiness and becomes creamy and thick, 3 to 4 minutes. Turn off the heat and stir in the smoked mozzarella, green olives, parsley, and salt, if needed. Continue to stir just until the mozzarella has softened and the parsley becomes limp, about 30 seconds. Serve in large shallow bowls.

2 cups finely shredded escarole
2 tablespoons butter
1/3 cup finely chopped onion
1 pound Arborio rice, available in specialty food shops, about 2 1/3 cups
1/2 cup dry white wine
4 cups simmering fresh or canned chicken or vegetable broth
Salt to taste, if desired
Freshly ground pepper to taste
1/3 pound smoked mozzarella cheese, cut into small cubes, about 1 1/2 cups
1/4 cup olive oil
1/4 cup freshly grated Parmesan cheese

Steps:

  • Prepare the escarole and set it aside.
  • Heat the butter in a saucepan and add the onion. Cook, stirring, until the onion is wilted. Add the escarole and cook until it is wilted. Add the rice and cook, stirring, about one minute. Add the wine and cook, stirring, about two minutes, or until the wine is absorbed.
  • Add the simmering broth, salt and pepper and cook over moderately high heat, stirring often from the bottom, about eight minutes. Add the mozzarella cheese and olive oil. Cook one minute and stir in the Parmesan cheese. Cook, stirring from the bottom, about three to five minutes.

2 tablespoons each of butter and olive oil
1/2 cup finely chopped onion
1/2 cup each finely diced celery and carrot
1 1/2 cups short grain or Arborio rice
Minced garlic
5 cups simmering water
1 cup thawed frozen petite peas
Salt and freshly ground black pepper
1/2 cup grated fresh Parmesan cheese
1/4 cup chopped fresh basil leaves
1/4 cup toasted pine nuts, optional

Steps:

  • Heat the butter and oil in a heavy wide saucepan. When foaming subsides add the onion and cook for 5 minutes or until golden brown. Add half of the celery and carrot and cook for 3 to 4 minutes or until tender but still crisp. Add the rice and cook, stirring continuously, for 5 minutes or until toasty. Add the garlic and simmer a few seconds. Add 1/2 cup boiling water and cook until rice has fully absorbed it. Continue this way until 1 1/2 cups water have been absorbed, then add 1 cup of boiling water.
  • After 20 minutes or when the rice is half cooked add the remaining celery and carrot and cook for 10 minutes more. Add the peas and finish cooking the rice. Season to taste with salt and pepper. Right before serving, stir in the Parmesan cheese and basil. Garnish with pine nuts.
  • (If you want a more ample meal, serve this with grilled boneless chicken breasts marinated in lemon juice; grill them when rice is half way done.)

1 cup chopped onion
2 teaspoons minced garlic
1/3 cup butter, cubed
1-1/2 cups uncooked arborio rice
1 cup white wine
4 cups chicken broth or vegetable broth
3 cups fresh broccoli florets
2 cups chopped yellow summer squash
2 cups frozen peas, thawed
1 package (10 ounces) frozen cooked winter squash, thawed
1/2 teaspoon salt
1/8 teaspoon white pepper

Steps:

  • In a Dutch oven, saute onion and garlic in butter for 2-3 minutes or until tender. Add the rice; cook and stir for 1 minute or until rice is glossy and coated with butter. Stir in wine; cook for 2 minutes or until wine is absorbed. , Stir in the remaining ingredients and bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until rice is tender. Let stand, uncovered, for 10 minutes before serving.

Dried mushrooms are reconstituted in hot water. Lettuce and fennel are sweated down in some hot butter in a big, heavy-bottomed pot, then set aside. Onion takes their place, followed by short-grained arborio rice, followed by hot water. Then the cook stirs and stirs, performing the old dance of risotto. (I tried the dish using the stock left by the mushrooms but found it too muddy and dank.) The mushrooms, diced small, go into the pot along with some more water and stirring. Then, at the end, the lettuce and fennel, some Parmesan, a heavy dusting of nutmeg and whatever butter is left. The result is remarkable, particularly in the matter of the lettuce, a mineral thread of flavor above the soft forest floor of the rice.

1/2 ounce dried mushrooms
6 tablespoons unsalted butter
5 green leaf lettuce leaves, shredded
1 leaf of a fennel bulb, finely diced
1 small onion, finely diced
1 cup arborio rice
2 tablespoons grated Parmesan
Kosher salt
Nutmeg

Steps:

  • Put the mushrooms in a bowl, and pour hot water over them. Allow them to steep for 20 minutes, then squeeze them out and mince. Reserve the mushroom broth for another purpose.
  • Put four cups of water in a pot, and set it over high heat to boil. Keep it hot.
  • In a heavy saucepan set over medium heat, melt 5 tablespoons butter and when it foams, cook the lettuce and fennel until soft. Lift them out of the pan and set aside. Add another tablespoon of butter if necessary, and cook the onion until translucent. Add the rice, and stir until it is glistening and hot.
  • Add a cup of the hot water to the mixture, and stir it until the liquid is absorbed, approximately 5 minutes. Add another cup of the water, and stir again until it is absorbed. Add the mushrooms, and stir again, then add a pinch of salt and another half cup of the hot water. When the liquid has been absorbed, taste the rice to see if the grains offer the slightest resistance to your teeth. If not, add the rest of the water, and stir again to combine.
  • Stir in the lettuce, the fennel, the Parmesan and any remaining butter, then grate nutmeg generously over the mixture.
