VEGETABLE CROQUETTES - VEGAN
This is one of my favorite recipes, and is also a favorite of my non-vegan family! It takes some time to prepare but is well worth the effort. The mixture can be made ahead of time and left in the fridge to cool - this sometimes makes them easier to shape, especially if the vegetables were very juicy. Found in Lynda Stoner's 'Vegan Now'.

Steps:
- Boil potatoes until soft, and then mash.
- Melt vegan margarine in frying pan, add garlic, onion and curry powder. Cook until lightly browned. Add carrot and zucchini and continue to cook until soft.
- Remove from the heat, add potatoes, and leave for a short time to cool. Add egg replacer mix, 2 tablespoons of crumbs and vegan parmesan and mix well.
- When mixture is cool enough, shape mixture into small logs. Combine extra crumbs and parsley, then roll croquettes in the mixture until coated.
- Heat enough oil in frying pan to cover it, the croquettes will also soak a lot of it up, so you will need to add some more as you go. Fry Croquettes on both sides until golden brown, and drain on absorbent paper.

BROCCOLI & POTATO CROQUETTES
These crunchy croquettes are both a stealthy way to get more vegetables into your kids as well as a great vegetarian party nibble

- Put the potatoes in a medium saucepan and just cover with cold water. Bring to the boil and simmer for 14-16 mins until completely cooked through. Drain and mash well, then put back in the saucepan over a low heat and cook for 1-2 mins, stirring constantly - this will remove excess moisture.
- Meanwhile, bring a small saucepan of water to the boil, add the broccoli and simmer for 6-7 mins until tender. Drain really well and pat dry with kitchen paper (it's important to do this thoroughly as excess water will make the croquettes a little wet). Finely chop the broccoli, then add to the mashed potato with the egg yolk, cheese and breadcrumbs. Divide the mixture into 12 equal balls and roll each one into a short sausage shape. Chill for 10 mins in the freezer.
- Meanwhile, make the dip. Put the cream cheese, yogurt and chives in a bowl and stir to a soft consistency, adding the milk if needed.
- Put the flour, beaten eggs and sesame seeds in three separate bowls. Roll the croquettes in the flour, dip in the beaten egg, then roll in the sesame seeds.
- Heat the oil in a large, non-stick frying pan and fry the croquettes on a low-medium heat for 4-5 mins, turning frequently for an even, golden colour. Drain on kitchen paper and serve with the cream cheese dip.

- In a large skillet, heat the olive oil over medium high heat and sauté the onions and garlic until the onions start to brown, about 2 minutes.
- Add the beefless ground and stir to incorporate. Then add the chopped parsley and season the mixture with salt, pepper and the nutmeg. (You can also add a dash of cinnamon if you'd like!)
- Once the mixture is fragrant, add the broth, stir and then add the flour (all at once). Cook, stirring constantly, until the dough starts coming off the bottom of the pan. Remove from heat and wait for the dough to cool so you can make the croquettes.

- Boil potatoes for approx. 18 minutes, until they feel tender when poked with a fork. Drain potatoes and mash with 1/4 cup unsweetened plant milk, 2 tsp vegan butter, and 3/4 tsp salt. Set aside.
- Heat 2-3 tsp vegan butter over medium-high heat in a large skillet. Add garlic, onion, carrots, broccoli, bell pepper, and mushrooms. Cook for 2-3 minutes. Add spinach and green onion. Sauté until tender. Season with a pinch of salt (about 1/8-1/4 tsp).
- Measure out approx. 2 tbsp of potato mixture, roll it into a ball and flatten into a 3/4" patty. Arrange patties on parchment paper. Makes 14-18 patties. Chill or freeze so that patties are firm before breading.
- Frying: Heat 1/2" of oil over medium heat. Once oil is evenly hot, fry patties in batches of 1-5 (depending on size of oil vat), flipping after about 1-1 1/2 minutes. Each patty should be golden-brown and fully heated within 2 1/2-3 minutes.
