This vegan ceviche is so refreshing. Traditional ceviche is quite popular in some countries of Latin America and the Caribbean, but it's made with seafood.

1 14-ounce can hearts of palm, drained and sliced (400 g)
2 chopped tomatoes
1/2 chopped red onion
2 tbsp chopped fresh parsley or cilantro (8 g)
2 tbsp lemon or lime juice
2 tbsp nori flakes (optional)
Dash of cayenne powder (optional)
1/4 tsp salt

Steps:

  • Mix all the ingredients of the ceviche in a bowl until well combined.
  • You can eat it immediately, although it's better to let the ceviche marinate in the fridge covered for at least 1 hour.
  • Keep in a sealed container in the fridge for 1 to 2 days.

1 cup cucumber, quartered and diced
1 yellow or orange bell pepper, diced
1 avocado, diced
3/4 cup diced strawberries*
1/2 cup red onion, finely diced
1 14 oz can of hearts of palm, drained and sliced into rounds
3 tbsp fresh cilantro, chopped
1 jalapeño, seeds removed and finely minced
¾ tsp salt
1/2 cup freshly squeezed lime juice
2 tbsp olive oil

Steps:

  • Add all ingredients to a large mixing bowl and toss well to coat.
  • Refrigerate for 30 minutes-1 hour. Taste and adjust seasoning as desired.
  • Serve cold with tortilla chips. Enjoy!

For this ceviche, we use hearts of palm as a base, and we infuse the marinade with seaweed to harness that ocean flavor and with mushrooms for umami.

4 sheets of nori seaweed, cut into 1/4-inch pieces
150 milliliters of lime juice
150 grams oyster mushrooms, or other similar mushrooms
1/2 red onion, diced
1 400-gram can of whole hearts of palm
1/2 cucumber, diced
1 handful fresh cilantro, chopped
1 ripe avocado, chopped
1 serrano chile, minced
150 grams cherry tomatoes
2 tablespoons olive oil
Kosher salt, to taste
Soy Sauce
Tostadas, tortilla chips, or saltines for serving

Steps:

  • Gather the ingredients.
  • Combine seaweed and lime juice in a small, non-reactive bowl and soak until the seaweed is soft, about 5 minutes.
  • Strain the seaweed in a fine mesh strainer, pressing to release all of the lime juice. Reserve the seaweed and lime juice in separate bowls.
  • Add the onions to the lime juice and marinate for about 5 minutes.
  • To a large bowl, add the onion, seaweed, hearts of palm, cucumber, avocado, tomatoes, serrano chile, cilantro, oil, and soy sauce. Gently fold ingredients together. Taste and add more soy sauce and salt, if needed. Marinate a final 5 minutes.
  • Serve with tostadas, tortilla chips, or saltines.

1 cup vegetable broth
1 cup quinoa
4 ripe avocados, cubed
2 (10 ounce) baskets cherry tomatoes, quartered
3 cups chopped lacinato (dinosaur) kale
2 cucumbers, cut into 1/2-inch cubes
3 scallions, thinly sliced
1 jalapeno pepper, seeded and minced
2 tablespoons minced fresh cilantro
1 lemon, juiced

  • Bring water, vegetable broth, and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender, about 20 minutes. Remove cover and let sit for 5 minutes. Spread quinoa onto a baking sheet and refrigerate until chilled, at least 30 minutes.

This is my alternative to shrimp, which I developed in order to have something shrimpesque in my veg sushi and stirfries! It's actually super easy to make. The type of seaweed/nori/dulse you use changes the seafoodiness of the flavour quite a bit, so try experimenting. I prefer dulse, but it's really down to personal taste. Enjoy!

1 cup gluten flour
1 teaspoon garlic powder
1 teaspoon paprika
1/2 cup sweet potato puree (tip ( babyfood works really well)
1 tablespoon vegetable oil
8 cups water
1 -2 tablespoon salt, to taste
1 -2 tablespoon dulse seaweed

Steps:

  • Sift together the gluten flour, garlic powder and paprika. Mix well.
  • In another bowl, combine the sweet potato puree and the oil.
  • Mix the dry ingredients into the wet, and knead by hand until you have a smooth dough. (2-3 minutes only, no need to over-do it. Keep in mind that the longer you knead the tougher the "meat" will be).
  • Pound the dough flat (about 1/2"), and slice into strips, approximately 1/2" thick (maximum) and 2" long. (These will poof up a lot while cooking, so don't be fooled into making them bigger! Smaller is best in this case!) Set aside.
  • In a medium saucepan, combine water, salt and seaweed to make a broth. Stir well.
  • Place strips into COLD broth, and then turn up the heat to medium-high, and bring to a boil.
  • Reduce heat and simmer for 30 minutes, or until floating to top and cooked through. (Note: thicker slices will require longer cooking times, and less for thinner slices.).
  • Serve with cocktail sauce, or garlic butter or butter alternative, or in your favourite main dish.

  • Halve the limes, then juice using a citrus press or a pair of kitchen tongs. You should have about 1 cup (240 ML) total.
