This is an updated version of my adopted recipe. The review it had stated the pizza dough did not cook thru after toppings were added. This recipe and directions will help that problem.

3 -3 1/2 cups flour
2 1/2 ounces fast rising yeast
1 teaspoon salt
1 cup water, very warm
2 tablespoons olive oil

Steps:

  • Preheat oven to 400 degrees F.
  • In large bowl, combine flour, yeast, and salt. Add warm water and olive oil, knead about 5 minutes or until mixture is well combined and forms a ball. Let dough sit for 10 minutes in a warm place.
  • Roll out dough and fit to oiled cookie sheet or pizza pan. Place in oven and bake for approximately 10 minutes or until very slightly browned.
  • Remove from oven and let cool. Add pizza toppings of your choice. Return pizza to oven and bake approximately 10-20 minutes or until cheese is melted. Cool, slice, and serve.

500g strong white bread flour, plus extra for dusting
1 tsp dried yeast
1 tsp caster sugar
1 ½ tbsp olive oil, plus extra
100ml passata
1 tbsp fresh basil, chopped (or 1/2 tsp dried oregano)
1 garlic clove, crushed
200g vegan mozzarella-style cheese, grated
2 tomatoes, thinly sliced
Fresh basil or oregano leaves, chilli oil and vegan parmesan to serve (optional)

Steps:

  • Put the flour, yeast and sugar in a large bowl. Measure 150ml of cold water and 150ml boiling water into a jug and mix them together - this will mean your water is a good temperature for the yeast. Add the oil and 1 tsp salt to the warm water then pour it over the flour. Stir well with a spoon then start to knead the mixture together in the bowl until it forms a soft and slightly sticky dough. If it's too dry add a splash of cold water.
  • Dust a little flour on the work surface and knead the dough for 10 mins. Put it back in the mixing bowl and cover with cling film greased with a few drops of olive oil. Leave to rise in a warm place for 1 hr or until doubled in size.
  • Heat oven to 220C/200C/gas 9 and put a baking sheet or pizza stone on the top shelf to heat up. Once the dough has risen, knock it back by punching it a couple of times with your fist then kneading it again on a floured surface. It should be springy and a lot less sticky. Set aside while you prepare the sauce.
  • Put all the ingredients for the tomato sauce together in a bowl, season with salt, pepper and a pinch of sugar if you like and mix well. Set aside until needed.
  • Divide the dough into 2 or 4 pieces (depending on whether you want to make large or small pizzas), shape into balls and flatten each piece out as thin as you can get it with a rolling pin or using your hands. Make sure the dough is well dusted with flour to stop it sticking. Dust another baking sheet with flour then put a pizza base on top - spread 4-5 tbsp of the tomato sauce on top and add some sliced tomatoes and grated vegan cheese. Drizzle with a little olive oil and bake in the oven on top of your preheated baking tray for 10-12 mins or until the base is puffed up and the vegan cheese has melted and is bubbling and golden in patches.
  • Repeat with the rest of the dough and topping. Serve the pizzas with fresh basil leaves or chilli oil if you like and sprinkle over vegan parmesan just after baking.

3/4 cup water (+ 3 tsp (200ml))
5 tsp olive oil (, scant (20g))
1 tsp salt
3 cups whole wheat flour (, scant (365g))
2 tsp vital wheat gluten flour
1 tsp instant dry yeast ((7g))

Steps:

  • Add ingredients in the order listed, making a well for the yeast in the top of the flour.
  • Set machine to "pizza dough" and walk away!
  • Split finished pizza dough ball in two.
  • Mix yeast with (warm) water in a large bowl.
  • Add olive oil, 2.5 cups of whole wheat flour, gluten flour and salt to bowl.
  • Mix it by hand until it starts to clump together.
  • Put the remaining 1/2 cup of flour on a clean, flat surface, place the dough on top and knead by hand for at least 8-10 minutes until all the extra flour has been incorporated and the dough becomes smooth.
  • Put it into an oiled bowl (covered) in a warm place for about an hour to rise.
  • Punch it down, split it in half, and let rise again (uncovered) for about 45 minutes.
  • Roll out your pizza dough to fit your pizza tray, and top with desired toppings (or leave it plain).
  • Cook in a hot (200°C/392°F) oven for 15 to 25 minutes until ready.

This pizza is so delicious and pretty to serve that my guests always love this pizza and don't feel it's missing anything by being vegan. I used Sue L's Recipe #104173 and our Recipe #252423 for the crust. Preparation and cooking time includes time to make Recipe #252423 for the pizza.

2 medium prepared pizza crust, I used Healthy Italian Breadsticks or Pizza Crust - see description above
15 ounces pizza sauce, I used Pizza Sauce
1/4 cup pesto sauce
3 cups vegan mozzarella cheese (I use Lisanatti's Almond Mozzarella style cheese but you can use something like Veggie Shreds Mozzar) or 3 cups vegan mozzarella cheese (I use Lisanatti's Almond Mozzarella style cheese but you can use something like Veggie Shreds Mozzar)
1/2 cup yellow tomatoes, sliced
1/2 cup tomatoes, sliced (I like to use cherry tomatoes)
1 yellow squash (you can even use both zucchini and squash if you want) or 1 -2 zucchini, cut into 1/8-inch rounds (you can even use both zucchini and squash if you want)
1/2 cup red onion, sliced
1/2 small orange bell pepper, diced
6 fresh mushrooms, sliced (optional)
black olives (optional)
red pepper flakes (optional)

Steps:

  • Preheat oven to 350 degrees F.
  • If using Recipe #252423 for the crust, wait until the crusts have baked for 20 minutes and then add and arrange all of the toppings (if using a different pizza crust, then follow the directions for that pizza crust).
  • Spread pesto sauce and then pizza sauce over pizza dough. Sprinkle half of the vegan cheese all over sauce. Arrange tomatoes, and yellow squash or zucchini, over pizza. Scatter onion and bell pepper over vegetables. Sprinkle on the other half of the vegan cheese. Scatter on mushrooms, olives, and sprinkle with red pepper flakes, if desired.
  • Put the pizza back in the oven to cook for about 10 more minutes.

5 cups all-purpose flour, plus more for dusting
1/2 cup cornmeal
2 envelopes (1/4 ounce each) rapid-rise yeast
4 teaspoons coarse salt
1/4 cup olive oil, plus more for brushing

Steps:

  • Make the dough: In a food processor, pulse together flour, cornmeal, yeast, and salt. With processor running, add oil and then 2 cups cold water in a steady stream; process until dough just forms a ball.
  • Turn out dough onto a floured work surface. Knead until smooth and elastic, 3 to 4 times. Place in a resealable plastic bag; let rise until doubled in bulk, 2 hours at room temperature or overnight in the refrigerator (let come to room temperature before proceeding, about 40 minutes).
  • Divide dough into four equal portions; roll into balls, and cover with a clean kitchen towel or plastic wrap until puffed, about 20 minutes.
  • Preheat oven to 500 degrees. Place each dough ball on a baking sheet; using your hands, gently flatten, and pull into 8-by-10-inch ovals. Top as desired.
  • Bake until crust is golden brown and toppings are hot, rotating sheets halfway through, 10 to 12 minutes.

1 envelope instant dry yeast

2 tablespoons olive oil, plus 2 teaspoons

Steps:

  • Combine the bread flour, sugar, yeast and kosher salt in the bowl of a stand mixer and combine. While the mixer is running, add the water and 2 tablespoons of the oil and beat until the dough forms into a ball. If the dough is sticky, add additional flour, 1 tablespoon at a time, until the dough comes together in a solid ball. If the dough is too dry, add additional water, 1 tablespoon at a time. Scrape the dough onto a lightly floured surface and gently knead into a smooth, firm ball.
  • Grease a large bowl with the remaining 2 teaspoons olive oil, add the dough, cover the bowl with plastic wrap and put it in a warm area to let it double in size, about 1 hour. Turn the dough out onto a lightly floured surface and divide it into 2 equal pieces. Cover each with a clean kitchen towel or plastic wrap and let them rest for 10 minutes.

  • Bake for 9–10 minutes, or until the vegetables are just cooked and the dough is golden brown. Cook one at a time or one above the other. (If cooking at the same time, you may need to leave the pizza on the lower shelf in the oven for longer.)
