Vegan Peanut Butter-Chocolate Pudding image

This pudding is so decadent and suitable for those with dairy allergies and those who prefer a vegan diet. The peanut butter flavoring I use is made by Watkins™, and is completely optional.

⅓ cup unsweetened cocoa powder
½ cup coconut sugar
¼ cup cornstarch
3 tablespoons peanut butter powder
2 ¼ cups chocolate-flavored almond milk
½ teaspoon almond extract
1/2 teaspoon peanut butter flavor (optional)

Steps:

  • Whisk together cocoa powder, coconut sugar, cornstarch, and peanut butter powder in a saucepan. Slowly pour in 1/4 of the chocolate-flavored almond milk; whisk to combine. Turn heat to medium-high. Pour in remaining almond milk and continue whisking until mixture has thickened, about 8 minutes. Stir in almond extract and peanut butter flavoring.
  • Remove from heat. Allow to cool before serving, at least 1 hour.

1/4 cup unsweetened cocoa powder
1/4 cup cornstarch
1/4 teaspoon sea salt
2 cups soymilk (plain or vanilla)
1/2 cup agave nectar or 1/2 cup honey
2 teaspoons vanilla extract

Steps:

  • Combine cocoa powder, corn starch, salt in a 1 quart saucepan. Add just enough soy milk to make a smooth paste. Gradually stir in rest of the soy milk and agave nectar or honey.
  • Cook over medium heat, stirring constantly, until mixture thickens. Remove from heat and stir in vanilla. Pour into serving dishes and chill. Serves 4.

  • Add full-fat coconut milk and arrowroot starch to a large saucepan and whisk to combine. Cook over medium heat until bubbly and thickened (approximately 5 minutes).
  • Remove saucepan from heat and stir in maple syrup, peanut butter, vanilla, and a pinch of salt (optional). Taste and adjust flavor as needed, adding more maple syrup for sweetness, vanilla extract for vanilla flavor, salt for saltiness, and peanut butter for a more peanut-buttery flavor.
  • Pour mixture into a medium mixing bowl (glass is best) and let cool on the countertop for 10 minutes. Cover mixing bowl with plastic or parchment wrap so that it touches the surface of the pudding (to prevent a film).
  • Chill overnight in the fridge (or until thickened and cold). Serve as is or topped with coconut whipped cream, crushed peanuts, and/or chocolate ganache. It would also work well as a pie filling!

  • Gently melt the chocolate chips in the microwave or a double boiler. Chocolate should be smooth and silky.
  • While your chocolate is melting, place the silken tofu, non-dairy milk, and vanilla extract in a food processor and blend until completely smooth. With the motor running, pour the chocolate into the tofu mixture in a slow and steady stream and process until completely smooth. Divide between four pudding jars. Tap to release any bubbles and place in the refrigerator while making the peanut butter layer.
  • Combine all the ingredients for the peanut butter pudding in a food processor and blend again until completely smooth. Spoon the peanut butter pudding over the chocolate pudding and return to the refrigerator for at least one hour.
