VEGAN JAPCHAE KOREAN NOODLES
This is a delicious vegan Korean noodle dish that is typically served cold, but is also very good hot! Korean meets vegan in this quick and easy japchae recipe: a chewy and crunchy medley of glass noodles, spinach, mushrooms, green onions, and carrots.

Steps:
- Fill a large pot with lightly salted water and bring to a rolling boil; stir in noodles and return to a boil. Cook noodles uncovered, stirring occasionally, until tender yet firm to the bite, about 5 minutes. Drain and rinse with cold water.
- Toss noodles with 2 teaspoons sesame oil. Cut into shorter pieces using kitchen shears.
- Combine soy sauce and sugar in a bowl.
- Heat vegetable oil in a skillet over medium-high heat. Saute carrots and onion until soft, about 1 minute. Add mushrooms, green onions, and garlic. Saute until fragrant, about 30 seconds. Add the noodles, soy sauce mixture, and spinach. Cook and stir until noodles are heated through, 2 to 3 minutes more. Remove from heat. Toss in remaining 1 tablespoon sesame oil and sesame seeds.

VEGAN JAPCHAE
This Vegan Japchae (잡채) recipe is a delicious gluten free and vegetable packed dish ready in under 30 minutes!

Steps:
- Bring a large pot of water to a boil and cook sweet potato noodles following the directions on the package. Once cooked, drain and rinse with cold water to stop the cooking process. Add 1 tsp of sesame oil to coat the noodles, and then use scissors to cut the noodles (around 3-4 times). In the same pot, add in the spinach and blanch for 30 seconds. Rinse with cold water and squeeze the excess liquid out using a towel. Chop the bundled up spinach in half.
- Slice all the vegetables into match stick sized pieces. They should all be relatively the same size. Cut the tofu into thin rectangles.
- Put all the sauce ingredients into a small bowl and stir.
- In a large wok, over medium high heat fry the smoked tofu with a little bit of sesame oil just until lightly browned on each side. Transfer into another bowl and set aside.
- In the same wok, fry onions and garlic for 1 minute. Then add in the shiitake mushrooms and carrot and fry for another minute. Add in the zucchini and scallions and fry for one more minute. Slightly turn down the heat and add in the noodles, spinach tofu and sauce. Toss and cook until all the sauce is all soaked up.
- Serve and garnish with toasted sesame seeds.

- Prepare your vegetables by finely julienning and chopping, and prepare your japchae sauce by whisking ingredients together in a small bowl.
- Bring water to a boil and cook your japchae noodles until soft and translucent, about 6-7 minutes. They should be almost slippery in texture. Rinse with cool water and drain, cut with scissors and mix in 1 tbsp of your sauce and let sit.
- Next, to prepare the traditional way, sauté all of your veggies individually, with oil and a touch of salt and pepper. Sauté your noodles for a few minutes as well and add to the vegetable bowl. Blanch and pat dry your spinach, add to the bowl and mix well to combine. Alternatively, to prepare a bit more quickly, start by sautéing carrots, then add onion, mushrooms and scallions to the pan. Add spinach at the very end and cook very lightly, then toss in your noodles along with remaining sauce and sauté until combined.

- If you are using dry shiitake mushrooms put them in warm water for at least 30 minutes. Keep the water as it will be used in the sauce.
- Prepare the marinade. Combine the soy sauce, sesame oil, stock or water (use the shiitake stock when using dry shiitakes) and sugar and whisk until all the ingredients are well mixed. Crush the garlic cloves and press or shred the ginger and add into the marinade.
- Cut the tofu into triangles or cubes and add into the marinade bowl. Leave the tofu marinating while preparing the rest of the ingredients.
- Cook the noodles. Using a big pan, bring water to a boil and add the noodles. Cook for about 6-7 minutes and rinse with cold water. Make sure the noodles are cold to stop them from cooking further and leave aside.
