Cinnamon Roasted Sweet Potatoes and Apples image

This cinnamon roasted sweet potatoes and apples recipe is a healthy and easy fall side dish. Made with only 6 nutritious ingredients including pure maple syrup and ground cinnamon, it's a perfect dish to serve on Thanksgiving.

2 medium sweet potatoes (4 cups, cut into 1" cubes)
2 medium apples (about 2 cups, cut into 1" cubes)
3 TBS coconut oil (melted & divided)
1 tsp sea salt
2 TBS pure maple syrup
1 tsp ground cinnamon

Steps:

  • Preheat oven to 425 degrees F.
  • Grease a large baking pan, set aside.
  • In a large bowl, toss cubed sweet potatoes with 2 TBS of melted coconut oil. Stir until coated.
  • Add sea salt and stir until evenly distributed.
  • Bake in the preheated oven for 20 min, stirring halfway through, until sweet potatoes just barely start to brown.
  • While the sweet potatoes are baking: stir the remaining 1 TBS of coconut oil into the apples. Add maple syrup and cinnamon and stir to combined.
  • After 20 minutes, or the sweet potatoes have begun to brown, remove the sweet potatoes from oven and add the apple mixture and stir to combine.
  • Return to the oven and bake for 20 more minutes, stirring halfway through.
  • Once the sweet potatoes and apples are browned and the maple syrup has caramelized on them remove them from the oven and serve immediately!

This baked sweet potato dish is juicy, fresh, and well-loved in my house. Usually, I make it with at least two kinds of sweet potatoes. My favorite types of sweet potatoes for this dish are Jewel sweet potato and the Hannah sweet potato variety, complemented by sweet apple

1 Hannah sweet potato (large)
1 Jewel sweet potato (large)
1 red apple (sweet variety)
1/2 cup pecans (raw)
3 tbsp coconut oil (or ghee*)
1 tsp cinnamon
1 tsp black pepper (freshly ground)
1/2 tsp nutmeg (freshly ground)
1/2 tsp Himalayan salt

Steps:

  • After washing and peeling sweet potatoes, thinly slice them using a mandoline slicer or knife.
  • Decore an apple and thinly slice it using a mandoline slicer or knife. set aside
  • In a small bowl, combine cinnamon, nutmeg, triple filtered (processed) coconut oil, black pepper, and Himalayan salt.
  • Set oven to preheat at 425°F degrees
  • In a large bowl, combine sliced sweet potatoes with your oil/spice mixture. Be gentle but Mix well, ensuring every sliced is well coated.
  • Arrange sweet potatoes in an alternating pattern in the casserole dish and distribute apples evenly.
  • Cover with a lid and place into the preheated 425°F oven for 45 min.
  • When the time is up, remove the lid and bake for 5 more min. Then sprinkle pecans on the top. Bake for an additional 10 min. Serve right away

Simply Roasted Apples & Potatoes are the perfect combination of sweet and savory. Everything caramelizes and becomes beautifully tender. Plus it's all ready in 30 minutes!

5 medium potatoes (yellow, gold, or russet)
3 tbsp olive oil (extra virgin)
1 tsp salt
1/2 tsp dried basil (or 1 1/2 tsp fresh basil)
1/2 tsp dried rosemary (or 1 1/2 tsp fresh rosemary)
1/2 tsp ground mustard
1/2 tsp garlic powder
1/2 tsp black pepper
5 medium apples (I prefer gala but others work as well, leave peel on)

Steps:

  • Preheat oven to 425 degrees.
  • Slice your potatoes in half. Slice again so each potato is in four pieces. If your potato is fairly large you may need to cut some of them one more time. You want your potato pieces to be about the same size as the apple slices.
  • Add the potato pieces to a large ziplock bag or large bowl. Drizzle with olive oil, basil, rosemary, salt, ground mustard, garlic powder, and pepper. If using a bag, squeeze out excess air, seal, and shake until potato pieces are coated. If using a bowl, stir and flip potato pieces until they're coated.
  • Spread coated potatoes on a 12 x 17 baking sheet.
  • Place in the oven and bake for 5 minutes. (We are not fully cooking the potatoes at this point.)
  • Slice apples into quarters, removing and discarding the core and seeds.
  • Remove pan from oven. Add sliced apples. Use spatula to flip the potatoes and move the apples around so they too are coated with oil. Spread everything in a single layer.
  • Bake for 15 to 20 minutes or until potatoes are done. They should give a little when you press them.
  • Remove from the oven and serve immediately.

4 large sweet potatoes
1 teaspoon vegetable oil, or as needed
2 tablespoons vegan margarine (such as Earth Balance®), melted
⅓ cup maple syrup
2 large apples - peeled, cored, and thinly sliced
1 pinch cinnamon, or to taste
1 pinch ground cloves, or to taste
½ cup apple juice

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Place sweet potatoes on a baking sheet.
  • Bake in the preheated oven until cooked through but still firm, about 20 minutes.
  • Remove sweet potatoes from oven; leave oven on. Allow sweet potatoes to cool until safe to handle; peel and cut into 1/2-inch slices.
  • Coat a deep 1 1/2-quart baking casserole with oil. Arrange 1/2 the sweet potato slices on the bottom. Drizzle with 1/2 of the melted vegan margarine followed by 1/2 of the maple syrup. Top with apple slices and sprinkle lightly with cinnamon and cloves. Repeat layers. Pour apple juice on top. Cover casserole with a lid or aluminum foil.
  • Bake in the hot oven, covered, for 30 minutes. Remove lid or aluminum foil and bake for 10 minutes more. Serve immediately or cover and keep warm until serving.

1 pound boneless, skinless chicken breasts (cut into 1/2-inch cubes)
1 teaspoon kosher salt (divided)
1/2 teaspoon black pepper
4 slices thick-cut bacon (chopped)
3 cups Brussels sprouts (trimmed and quartered (about 3/4 pound))
1 medium sweet potato (peeled and cut into 1/2 inch cubes (about 8 ounces))
1 medium onion (chopped)
2 Granny Smith apples (peeled, cored and cut into 3/4 inch cubes)
4 cloves garlic (minced (about 2 teaspoons))
2 teaspoons chopped fresh thyme (or 1/2 teaspoon dried thyme)
1 teaspoon ground cinnamon
1 cup reduced-sodium chicken broth (divided)

Steps:

  • Heat the olive oil in a large, nonstick or cast iron skillet over medium high, until hot and shimmering. Add the chicken, 1/2 teaspoon kosher salt, and black pepper. Cook until lightly browned and cooked through, about 5 minutes. Transfer to plate lined with paper towels.
  • Reduce skillet heat to medium low. Add the chopped bacon and cook until crisp and brown and the fat has rendered, about 8 minutes. With a slotted spoon, transfer the bacon to a paper towel-lined plate (I simply laid another paper towel on top of the plate with the chicken, then stacked the bacon on that). Discard all but 1 1/2 tablespoons bacon drippings from the pan.
  • Increase skillet heat back to medium high. Add Brussels sprouts, sweet potato, onion, and remaining 1/2 teaspoon salt. Cook, stirring occasionally, until crisp-tender and the onions are beginning to look translucent, about 10 minutes.
  • Stir in the apples, garlic, thyme, and cinnamon. Cook 30 seconds, then pour in 1/2 cup of the broth. Bring to a boil and cook until evaporated, about 2 minutes. Add the reserved chicken and remaining 1/2 cup broth. Cook until heated through, about 2 minutes. Stir in reserved bacon and serve warm.
