A favorite Filipino breakfast roll, this pandesal is a bit sweet and crusted with fine bread crumbs before baking.

1 teaspoon active dry yeast
1 cup lukewarm water
1 teaspoon white sugar
¼ cup white sugar
⅛ cup vegetable oil
1 teaspoon fine salt
3 cups all-purpose flour, divided
⅛ cup fine bread crumbs, divided, or as needed

Steps:

  • Pour yeast into water. Add 1 teaspoon sugar and set aside to soften, about 7 minutes.
  • Mix 1/4 cup sugar, oil, and salt together in a bowl. Add softened yeast mixture and 1/2 of the flour. Mix well. Add remaining flour little by little, mixing constantly, until dough does not stick to the sides of the mixing bowl.
  • Transfer dough to a lightly floured work surface and knead until smooth. Form into a ball and place in a lightly greased bowl. Brush surface of dough with more vegetable oil and cover with a damp cloth. Let rise in a warm place until doubled in size, about 2 hours.
  • Punch dough down and roll into 2-inch rounds. Cover rolls with 1/2 of the fine bread crumbs and let rise again, 15 to 20 minutes.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Cut rounds into 1 1/2-inch pieces and arrange on a slightly greased baking sheet, cut-side up. Sprinkle with remaining bread crumbs and let rise until doubled in size, about 30 minutes more.
  • Bake in the preheated oven until slightly brown, 20 to 25 minutes.

1 teaspoon garlic, chopped
1/2 sweet onion, chopped
1/2 cup tomato sauce
300 g cabbage
300 g Chinese cabbage
5 pieces green beans
1/2 cup chickpeas, cooked
2 pieces plantains
180 g firm tofu
2 teaspoons sugar
1/2 teaspoon salt
1 cup water
1 tablespoon canola oil

Steps:

  • In a casserole, combine the cabbage; chopped, pakchoi cabbage; sliced, green beans, sliced into two pieces (if too long), plantains; sliced into two pieces and tofu; cubed. Fill with water and boil in a few minutes until vegetables are cooked.
  • While boiling, In a wok, fry the garlic together with the onion for 1 minute.
  • Add the tomato sauce, salt and water then bring to a boil
  • Add the sliced boiled vegetables and simmer for 5 minutes.
  • Add sugar.

1 cup lukewarm water
1/2 cup vegetable oil
2 eggs (room temp)
1 teaspoon salt
1/2 cup sugar
4 3/4 cups bread flour (I suggest bread machine flour)
1 tablespoon fast rising yeast (I suggest for bread machine yeast)
breadcrumbs

Steps:

  • If you have a bread machine, add all ingredients (except the bread crumbs) in the order suggested by the manufacturer. Usually the liquid ingredients then dry ingredients. Select DOUGH cycle. But I suggest to combine lukewarm water and yeast and let it stand for 5 minutes before adding all the ingredients, then follow procedure 5-11.
  • To knead the dough manually, Combine lukewarm water and yeast. Stir. Let it stand for 5 minutes. Combine all ingredients except bread crumbs. (liquid ingredients then dry).
  • Knead the dough until smooth and elastic.
  • Place in a greased bowl. Let it stand in warm place to rise, covered for 1.5-2 hrs or until doubled.
  • Punch down the dough and turn out on a lightly floured board.
  • Divide dough into 24 equal parts and shape into ovals.
  • Roll lightly in bread crumbs.
  • Place on greased cookie sheet.
  • Cover, let rise in warm place, free from draft, until light and double- about 2-4 hrs to achieve light and fluffy bread. (Tip: I usually make the dough the night before, let it stand, 'till ready to bake it in the morning. So, you'll have fresh bake pan de sal at breakfast with kraft cheese -- yummy).
  • Bake at 375 degrees, for 15-20 minutes or until golden brown.
  • Enjoy!

  • If your breadcrumbs come in bigger pieces, blitz them in the blender or in a food processor until you get a fine texture, and then prep it by pouring it on a plate, and set aside.
  • Heat up the non-dairy milk until lukewarm, or 100° Fahrenheit. Stir in the yeast and set it aside for 10 minutes to bloom. (Do not heat the milk any hotter or you’ll end up killing the yeast.)
  • In the bowl of a stand-mixer, add in the bread flour, salt, and sugar. Mix until well combined. When your yeast has bloomed, add it to the dry ingredients along with the softened butter. Attach the bowl to the stand-mixer and use the dough hook attachment. Set your mixer on “stir” and allow it to mix all the ingredients together. Once a shaggy dough has formed, set the speed to 2 and let it knead the dough for 10 minutes. You’ll know when your dough is fully kneaded when it springs back when you lightly press down on it.
  • Remove the dough from the bowl, and form it into a nice round ball. Place it in a lightly greased bowl, cover with a damp cloth, and set it aside in a warm spot for 1 hour to rise or until doubled in size.

  • In a small saucepan, whisk together the tangzhong ingredients until no more dry flour remains. The mixture will be lumpy, but that's fine. Turn on heat to medium, and whisk constantly while cooking. Turn off the heat as soon as the mixture becomes a thick paste. This should only take a couple minutes. This is the tangzhong.
  • Into a stand mixer bowl with a dough hook attachment, add the soy milk, sugar, Just Egg, and yeast. Use a spatula or whisk to mix until well-combined.
  • Add the tangzhong, bread flour, butter, and kosher salt. Mix on low for 2 minutes or until ingredients are incorporated, scraping the sides and bottom as necessary. Increase speed to medium and mix until the dough is soft and supple (about 8-10 minutes), again scraping the sides and bottom as necessary.
  • Lightly oil a large bowl with about 1-2 tbsp of vegetable oil. Turn off the stand mixer. Form the dough into a ball, and transfer it to the oiled bowl. Use your hands to spread some oil across the entire surface of the dough.
