Yummy to use in anything you would associate with cilantro...I like to stir it into black bean soup and chili! Make extra to freeze!

Steps:
- Combine cilantro, almonds, garlic and salt in food processor and process intil smooth.
- With machine still running, add olive oil through feed tube and process into a smooth paste.
- If not freezing, store tightly covered in refrigerator with thin layer of olive oil on top to prevent discoloration.

- Combine the cilantro, garlic and almonds in a blender or food processor and puree until smooth. Add the parmesan, oil and salt and puree to a smooth paste. Stir into hot pasta and serve.

- If your sunflower seeds are not already roasted you will need to put them in the oven for 10 minutes at 350F moving them around at the 5 minute mark.
- Once your sunflower seeds are roasted add all of the ingredients and half of the lemon juice first to your food processor. You will be adding only 1/4 cup of lemon juice so that the acidity is at your level of comfort and taste buds. Once your pesto is creamy and smooth taste it and see if you will add the other 1/4 cup of lemon juice. Your Cilantro Pesto should process around 5 to 10 minutes depending on the strength of your processor. I added the other 1/4 cup of lemon juice because I love a lemony pesto.

- Wash and prep the cilantro: Begin by rinsing the cilantro under cold water to remove any dirt. Once cleaned, dry it on a kitchen towel or in a salad spinner.
