This delicious, creamy Vegan Cauliflower Casserole is the ultimate comfort dish and a bonus is that it is also healthy for you! Simple cauliflower florets, smothered and baked in a cheesy sauce is easy to prepare and so tasty!

1 medium head cauliflower cut into florets
1 cup raw cashews soak for at least 2 hours
1 1/2 - 2 cups water
1/4 cup nutritional yeast flakes
1/4 cup red bell pepper chopped
1 tablespoon onion chopped
1 clove garlic
1 tablespoon tahini paste (optional)
1 1/2 teaspoons salt
pinch Cayenne pepper (optional)
paprika and parsley for garnishing

Steps:

  • Preheat oven 400 degrees F. Lightly oil a casserole dish and set aside.
  • Wash and steam cauliflower florets for 5 minutes or until florets are tender. Reserve a cup of steam cauliflower to blend with the cashew cheese sauce. Place remaining florets in a casserole dish and set aside.
  • Rinse and drain cashews. Place cashews in a high-speed blender with water, nutritional yeast flakes, red bell pepper, onion, garlic, tahini, salt and cayenne pepper,
  • Process until smooth and creamy. Add the cup of cauliflower florets and blend, scraping down the sides of blender with a spatula. You may need to add extra water.
  • Pour sauce over cauliflower florets. Sprinkle top with paprika. Bake for 35 minutes or until edges are slightly brown.
  • Remove from oven and allow to cool slightly, garnish with parsley and serve.

1 medium head cauliflower, about 2 pounds, cut into small florets
3 tomatoes, chopped
6 cloves garlic, chopped
2 tablespoons olive oil
1 and 1/2 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon chili powder
1 lemon
1 tablespoon tomato paste or red pepper paste
1/2 cup hot water
Parsley for garnish

Steps:

  • Put the cauliflower florets, tomatoes and garlic in a pot.
  • Drizzle olive oil over them.
  • Season with the spices and salt.
  • Squeeze lemon over them and put a lemon wedge into the pot (you can just put the one you squeeze).
  • In a small bowl, mix tomato paste or pepper paste with hot water and pour it in the pot.
  • Cook it covered over medium low heat until almost tender, about 15 minutes.
  • Meanwhile, preheat oven to 375F (190C).
  • Transfer the cooked dish into a casserole pan and bake it for 15-20 minutes.
  • Garnish with parsley and serve.

2 cups broccoli, chopped into bite sized pieces
2 cups cauliflower, chopped into bite size pieces
2 cups rice milk
1/4 cup canola oil
1/4 cup flour
2 tablespoons nutritional yeast flakes
1 teaspoon salt
1/4 teaspoon nutmeg
3/4 cup panko breadcrumbs (dried bread crumbs)
1/2 cup vegan cheese, shredded
3/4 tablespoon paprika
3/4 tablespoon dried parsley

Steps:

  • Preheat oven to 400°F.
  • Cook broccoli and cauliflower in boiling water for 3 minutes.
  • Drain and set aside.
  • Blend together milk, oil, flour, nutritional yeast flakes, salt, and nutmeg until smooth.
  • Cook, stirring well, over medium heat in a saucepan until thickened.
  • Turn off heat.
  • Add broccoli and cauliflower to saucepan and stir until combined.
  • Pour mixture into a greased 8x8-inch casserole dish.
  • Sprinkle panko bread crumbs, cheese, paprika, and then parsley over the top.
  • Cook for 10 minutes.
  • Enjoy!
