VEGETABLE FRIED RICE
This dish combines the nutty flavor of brown rice with the fresh taste of bell peppers, baby peas, and other vegetables.

Steps:
- In a saucepan bring water to a boil. Stir in rice. Reduce heat, cover and simmer for 20 minutes.
- Meanwhile, heat peanut oil in a large skillet or wok over medium heat. Add onions, bell pepper, garlic and pepper flakes, to taste. Cook 3 minutes, stirring occasionally.
- Increase heat to medium-high and stir in cooked rice, green onions and soy sauce. Stir-fry for 1 minute. Add peas and cook 1 minute more. Remove from heat. Add sesame oil and mix well. Garnish with peanuts, if desired.

Steps:
- Mix soy sauce and lime juice; set aside.
- In skillet, heat oil over medium heat.
- Add onion and garlic; cook, stirring, 1 minute.
- Stir in red pepper and carrots; cook until crisp-tender, 2-3 minutes.
- Add rice; cook, stirring, 2 minutes.
- Add soy sauce mixture; cook stirring, 2 minutes.
- Add peas; cook 2 minutes.
- Sprinkle with cilantro and, if desired, garnish with scallion.

Steps:
- Soak Basmati rice for 15 minutes and cook adding 1 1/2 cups of boiling water and a tsp of oil. Fluff it with a fork and spread it on a plate to cool.The cooked grains should be separate.
- Finely chop beans, carrot, capsicum and spring onion greens.
- Mince garlic and ginger.
- Shred cabbage into thin fine strip.
- Method.
- Heat oil in a pan, when the oil is very hot, add garlic and ginger, saute for a few seconds.Then add beans and fry for a few seconds, followed by carrot, cabbage, capsicum and spring onion greens. (Add vegetables in the same order).
- All the vegetables should be sauteed on high flame and continuous stirring is necessary as we want the vegetables to be crunchy and not fully cooked.
- Add cooked rice, soya sauce, vinegar, needed salt and pepper. Mix well and serve hot.
- Note.
- The whole procedure should be done on high flames.
- Chopping the vegetables finely is very important.
- I did not add soya sauce as I prefer to have without it but you can add soya sauce according to your taste to make it more Chinese.
- Adding finely chopped mushrooms along with vegetables makes it even more delicious.
- Using olive oil adds more flavor but you can also use any refined oil. Buy Olive oil which is meant for cooking purpose.

Steps:
- In a small bowl, stir together the soy sauce, brown sugar, and sesame oil; keep nearby.
- In a large skillet or on a griddle, cook onion and mushroom in coconut oil until the mushrooms release their water and that evaporates.
- Stir in the garlic, ginger, and cook until fragrant.
- Add the water chestnuts, scallions and peas, seasoning well with salt and pepper.
- Add the rice and cook until rice is lightly golden in some spots, then add sauce, stirring well.
- Stir in sesame seeds just before serving, or use them as a garnish.
