Marinate rose veal chops in a zesty mix of lemon, garlic and rosemary then serve with the salsa for a simple yet flavourful supper

2 x 300g British rose veal chops
1 tsp smoked paprika
2 tbsp polenta
4 garlic cloves , sliced
zest ½ lemon
1 rosemary sprig, leaves picked
100ml olive oil
1 tsp vegetable oil
1 green green pepper , finely diced
1 garlic clove , grated
75ml extra virgin olive oil
zest ½ lemon
75g washed baby spinach
1 green chilli , sliced

Steps:

  • To marinate the veal chops, put the garlic, lemon zest, rosemary, olive oil and 1 /2 tsp salt in a container large enough to fit the chops. Give the marinade a quick stir, then add the chops and spoon the marinade all over them. Cover with cling film and put in the fridge for at least 6 hrs or overnight.
  • To make the salsa, heat a heavy-based frying pan over a high heat. Add the vegetable oil and, once hot, throw in the peppers. Stir-fry to char the edges of the peppers, then sprinkle with salt and remove from the pan to cool. Next, add the garlic, olive oil, zest and spinach to a food processor, and pulse until you have a chunky paste. Pour into a bowl, add the green chilli and charred green pepper, then season a little.
  • To make the steak seasoning, mix the paprika and polenta with 1 /2 tsp salt. Remove the chops from the marinade and wipe off any sliced garlic or herbs and excess oil. Sprinkle the seasoning over both sides of the chops.
  • Heat a griddle pan over a medium heat. Cook the chops for 3 mins until they have nice char marks, then rotate them 45 degrees and cook for 3 mins more so that the chops have 'crosshatched' marks. Turn the chops over and cook for 3 mins only on this side, then remove from the griddle and rest on a plate for 4 mins. Put the chops on serving plates and spoon over the salsa.

1 pound veal scaloppine from the butcher counter
1/4 cup chopped flat-leaf parsley, a couple of handfuls
Salt and pepper
1 pound smoked fresh mozzarella, thinly sliced
1 (16 to 18-ounce) jar roasted red peppers, drained and sliced
1/3 pound pancetta, sliced like thin cut bacon at deli counter
2 tablespoons extra-virgin olive oil, plus some for drizzling
1 clove cracked garlic
1 (10-ounce) sack baby spinach or triple washed spinach leaves
1/4 to 1/3 cup white wine or dry vermouth

Steps:

  • Arrange scaloppine on waxed paper or plastic. Sprinkle veal with parsley, salt and pepper. Place a thin layer of cheese and a few slices of roasted pepper on each scaloppine. Roll veal and wrap each roll with a slice of pancetta. Secure with toothpicks.
  • Fry veal rolls in a thin layer of extra-virgin olive oil, 2 turns of the pan, until golden all over and pancetta is crisp, 5 or 6 minutes. Remove from pan to warm platter. Return skillet to heat. Add a drizzle of oil and cracked garlic. Wilt spinach in pan, add a touch of wine or vermouth to lift drippings and combine them with greens. Using tongs, place a bed of spinach on each dinner plate and top with veal rolls. Serve immediately.

4 (10-ounce) veal chops, bone in
8 thin slices Fontina
4 slices thinly sliced pancetta
Sauteed mushrooms, recipe follows
2 tablespoons olive oil
Salt and pepper
1 shallot, thinly sliced
1 cup white wine
1 cup veal or chicken stock
2 sprigs fresh thyme
2 tablespoons unsalted butter
1 pound carrots, peeled and cut on the bias into 1/4 inch thick slices
2 cloves garlic, thinly sliced
3 sprigs fresh thyme
Salt and freshly ground pepper
2 cups chicken stock
1 cup frozen peas, thawed or fresh peas
1 pound cremini mushrooms
2 ounces dried porcini mushrooms soaked in hot water for 30 minutes and chopped
3 tablespoons olive oil
2 cloves garlic, finely sliced
Salt and pepper
1 tablespoon finely chopped fresh thyme

Steps:

  • For the veal: Heat the olive oil in a large saute pan until almost smoking. Sear the chops on both sides until golden brown. Place them in the oven and continue cooking for 5 to 7 minutes for medium doneness. Remove the chops to a plate.
  • Remove all but 1 tablespoon of the fat from the pan and place over high heat on the stove. Add the shallot and cook until soft. Add the wine and cook until reduced by half. Add the stock and cook until reduced by half. Add the fresh thyme and season with salt and pepper, to taste. Place the chops on a plate and pour the sauce over.
  • For the peas and carrots: Preheat oven to 375 degrees F.
  • Melt butter in a medium sauce pan over medium-high heat. Add the carrots and garlic and cook until the carrots are slightly softened. Add the stock and thyme, cover the pan and bring to a simmer. Place the carrots in the oven and cook for 15 minutes. Remove the lid and continue cooking for 10 to 15 minutes, add peas during the last 5 minutes of cooking.
  • Slice a slit horizontally in the side of each chop. Place 2 slices of fontina, 1 slice of pancetta and a quarter of the mushrooms in each opening. Season each chop on both sides with salt and pepper.
  • Preheat oven to 400 degrees F.
  • Slice the mushrooms into 1/4-inch thick slices. Heat the oil in a large saute pan until almost smoking. Add the mushrooms, season with salt and pepper and cook until golden brown. Add the garlic and thyme and continue cooking for 2 minutes. Set aside and let cool.

Steps:

Steps:

1 tablespoon olive oil
4 tablespoons butter
2 Veal Chops
½ cup defrosted, drained chopped spinach
¼ cup grated Fontina Cheese
¼ cup grated Parmigiano Reggiano
12 fresh sage leaves
½ cup dry white wine
¼ cup chicken stock
1 tablespoon tomato paste
salt & pepper

Steps:

  • Preheat oven to 400 degrees.
  • Cut pocket in veal chop. Lightly salt pocket. Place layer of spinach in pocket and top layer with Fontina and Parmigiano Reggiano Cheese. Seal with a toothpick to hold mixture in pocket. Lightly dredge stuffed veal chop in flour. Salt and pepper outside of floured veal chop.
  • Melt 2 tablespoons butter and olive oil in cast iron pan. Place veal chops and sage in pan and sear for 2½ minutes per side. Add tomato paste in middle of pan and pour wine over tomato sauce, stir together and cook until reduced by half (approximately 3-4 minutes). Add remaining 2 tablespoons of butter and whisk into sauce. Add chicken stock, salt and bring to boil.
  • Cover pan and place in oven to roast 15 minutes. Uncover pan and roast another 8-10 minutes. Remove from oven. If sauce is too thin, thicken by putting on burner over high heat for about 1 minute.
  • To serve place veal chop on plate and drizzle sauce on each veal chop.

5 tablespoons extra-virgin olive oil (EVOO)
4 bone-in rib veal chops, 1 1/2 inches thick
Salt and freshly ground black pepper
7 to 8 fresh sage leaves, chopped
1/2 small yellow onion, chopped
2 garlic cloves, chopped
3 tablespoons balsamic vinegar (eyeball it)
1/2 cup chicken stock or broth
1 lemon
1 pear, your favorite variety, quartered, cored, and thinly sliced
1 sack of baby spinach (about 6 cups)
1/4 pound crumbled Gorgonzola cheese, or Maytag Blue
2 tablespoons cold butter

Steps:

  • Preheat the oven to 350°F.
  • Place the pecans on a baking sheet and toast in the oven for 8 to 10 minutes, or until they smell toasty and they are golden brown. Remove the nuts from the oven and cool them completely.
  • Heat a large skillet over medium-high heat with 2 tablespoons of the EVOO (twice around the pan). Liberally season the veal chops with salt, pepper, and sage. Once the skillet is screaming hot and you see the first wafts of smoke rising, add the chops and cook on the first side for 5 minutes. Resist the temptation to move the chops around in the pan; you want a nice brown crust on them and messing with them won't help you get there. Before flipping the chops, reduce the heat to medium; flip and cook them on the second side for 8 to 10 minutes, or until desired doneness. Remove the chops from the pan and let them rest under a foil tent for about 5 minutes.
  • While the chops are resting, make the sauce. To the same skillet, add a drizzle more EVOO, the onion, and garlic and cook for 1 minute. Add the balsamic vinegar and chicken stock and simmer for 2 to 3 minutes.
  • While the sauce is simmering, prepare the salad. In a salad bowl, combine the juice of 1 lemon with about 3 tablespoons of EVOO and a little salt and pepper. Add the sliced pear and toss to coat. Add the spinach, reserved toasted pecans, and crumbled Gorgonzola or Maytag Blue cheese. Toss to combine and coat.
  • Turn the heat off the balsamic pan sauce, add the cold butter, and swirl until completely melted. Serve each chop with a little balsamic pan sauce and a serving of the spinach salad.

  • In a bowl, combine the tomatoes, basil, parsley, red onion, salt and pepper, balsamic vinegar and about 2 tablespoons extra-virgin olive oil.
  • Allow the tomatoes to sit for 10 minutes so that the salt will leach out the juice of the tomatoes.
  • Heat a grill pan or outdoor grill to medium-high heat.
  • Drizzle 2 tablespoons of extra-virgin olive oil on a plate.
  • Place the chops on the plate and turn in the oil using tongs and season both sides liberally with salt and pepper.
  • Once the grill is ready, add the chops and cook on the first side for 5 minutes.
  • Before flipping, turn the heat down to medium or move to a little off the side of the grill for more indirect heat.
  • Flip and cook them on the second side for 7 to 8 minutes, then remove the chops and let them rest covered with a tented piece of aluminum foil for about 5 minutes.
  • Once the chops are cooked and rested, add the spinach and olives to the tomatoes and toss to coat.
  • Serve the salad on or alongside the chops and spoon some of the tomato balsamic juice from the bottom of the salad bowl to top each chop.

3 to 4 Béchamel Sauce
1 pound fresh spinach
2 tablespoons unsalted butter
2 pounds boneless veal, cut into 2-inch pieces
2 medium carrots, chopped
1 rib celery (tender), chopped
1 medium onion, chopped
1 clove garlic, finely chopped
salt and freshly ground black pepper
pinch of freshly ground nutmeg
1 1/2 cups freshly grated Parmigiano-Reggiano
1 1/2 pounds cut into 4-inch squares for cannelloni

Steps:

  • 1 Prepare the béchamel sauce. 2 Put the spinach in a large pot over medium heat with 1/4 cup of water. Cover and cook 2 to 3 minutes or until wilted and tender. Drain and cool. Wrap the spinach in a lint-free cloth and squeeze out as much water as possible. Finely chop the spinach. 3 In a large skillet, melt the butter over mediumlow heat. Add the veal, carrots, celery, onion, and garlic. Season to taste with salt and pepper and a pinch of nutmeg. Cover and cook, stirring occasionally, until the meat is very tender, about 1 hour. If the meat becomes dry, add a little water. Let cool. On a cutting board with a large knife, or in a food processor, chop the mixture very fine. Scrape the meat and spinach into a bowl and add 1 cup of the béchamel and 1 cup of the Parmigiano. Mix well and taste for seasoning. 4 Meanwhile, prepare the pasta. Lay out some lint-free kitchen towels on a flat surface. Have ready a large bowl of cold water. Bring about 4 quarts of water to a boil. Add 2 tablespoons of salt. Add the pasta squares a few pieces at a time. Cook the pasta until tender but slightly underdone. Scoop the pasta out of the water and place it in the cold water. When cool enough to handle, lay the pasta sheets out flat on the towels, which can be stacked one on top of the other. Continue cooking and cooling the remaining pasta in the same way. 5 Spoon half of the remaining béchamel in a thin layer in a large baking pan. Spread about two tablespoons of the filling on one end of each pasta square and roll up, starting from the filled end. Place the pasta roll seam-side down in the prepared pan. Repeat with the remaining pasta and filling, arranging the rolls close together in the pan. Spoon on the remaining sauce and sprinkle with the remaining 1/2 cup of Parmigiano. (Can be made up to 24 hours in advance. Cover with plastic wrap and refrigerate. Remove from the refrigerator about 1 hour before baking.) 6 Place a rack in the center of the oven. 6 tablespoons unsalted butter
2/3 cup freshly-grated Parmigiano-Reggiano
2 extra-large eggs
2 pounds boneless veal loin butterflied, and pounded thin with a mallet
1/4 pound thinly-sliced Pancetta
1/4 cup extra-virgin olive oil
1 cup dry white wine
2 cups chicken broth plus
extra if needed
1/4 teaspoon salt
1/8 teaspoon freshly-ground black pepper

Steps:

  • Cook the spinach in a covered 12-inch sauté pan over high heat for 5 minutes. Remove from the pan, rinse, chop, and squeeze dry. Melt 2 tablespoons of the butter in the same pan over medium heat and add the spinach and 1/3 cup of the Parmigiano; cook 5 minutes. Cool and drain off any liquid. In a medium bowl, beat the eggs with the remaining 1/3 cup of Parmigiano. Heat a 10-inch nonstick skillet over a medium flame, add the eggs, and cook until set on both sides, about 2 minutes per side, turning once. Remove this frittata to a plate. Place the veal on a cutting board, smooth side down. Top with the Pancetta, then with the frittata, cutting the frittata as needed to cover it, and finally with the sautéed spinach. Roll lengthwise into a bundle and tie with butcher's string. Heat the olive oil and the remaining 4 tablespoons of butter in a 12-inch sauté pan over a medium-high flame. Add the veal and sear until browned on all sides, about 10 minutes, turning to cook evenly. Add the wine and cook 5 minutes. Add the broth, salt, and pepper. Reduce the heat to medium-low, cover, and cook for 1 hour, or until the veal is firm but not dry and lets out a clear juice when pierced, adding broth as needed. Discard the string, slice thinly, and serve hot, with the pan juices. This recipe yields 6 servings. Preparation Tips: Stuff the veal up to 12 hours ahead and refrigerate.
