1 (4 pound) beef brisket, quartered
1 cup water
2 tablespoons Worcestershire sauce

Steps:

  • Mix pepper, salt, paprika, chili powder, garlic salt, and onion powder together in a bowl; rub onto brisket pieces to coat. Lay brisket in pressure cooker. Pour water and Worcestershire sauce over the meat. Lock pressure cooker lid in place and set steam vent to Sealing. Select Pressure Cook (Manual) and cook for 60 minutes on High pressure. Once the cooking cycle has completed allow pressure to release naturally for 15 minutes, then set steam vent to Venting to quick-release remaining pressure. Remove brisket to a cutting board. Drain liquid from the pot through a fine-mesh strainer; discard fat and solids. Slice brisket 1-inch thick. Drizzle pan liquid over brisket to serve.

1 teaspoon celery salt

Steps:

  • Cut brisket in half; rub with liquid smoke if desired, celery salt, pepper and salt. Place brisket fatty side up in a 6-qt. electric pressure cooker. Top with onion. Combine beer and Worcestershire sauce; pour over meat. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 70 minutes. Allow pressure to naturally release for 10 minutes; quick-release any remaining pressure. If brisket isn't fork-tender, reseal cooker and cook for an additional 10-15 minutes. , Remove brisket, cover with foil and keep warm. Strain cooking juices, then return juices to pressure cooker. Select saute setting and adjust for medium heat; bring liquid to a boil. In a small bowl, mix cornstarch and water until smooth; gradually stir into juices. This is my go-to recipe for brisket. I usually use bison brisket, but beef brisket works as well. This recipe is easy to prepare and using the pressure cooker greatly reduces cooking time as compared to other methods. The brisket comes out moist, tender, and flavorful, and the gravy is also excellent. I have used this recipe for briskets as large as 6 pounds with equal success, but increased the cook time to 55 minutes. I use an electric pressure cooker for this recipe, but it can also be made in a pressure cooker on the stove. The rub step can be skipped.

1 (3 pound) beef brisket, trimmed of excess fat
¼ cup beef rub
1 tablespoon olive oil
2 yellow onions, sliced
5 large cloves garlic, sliced
1 teaspoon salt
½ cup beef broth
½ cup dry red wine
¼ cup ketchup
1 teaspoon paprika
1 teaspoon dried thyme leaves
1 teaspoon dried rosemary
¼ cup cornstarch

Steps:

  • Coat beef brisket with beef rub, rubbing it into both sides. Place brisket in a large resealable plastic bag; refrigerate 4 hours to overnight.
  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select the highest Saute function. Heat oil and lower the brisket into the pot using tongs, fatty side facing down. Cook until bottom is a rich, dark brown, about 6 minutes. Turn and sear until the other side is browned, about 6 minutes more. Transfer brisket to a plate.
  • Adjust pressure cooker to the medium Saute setting. Add onions, garlic, and salt. Cook, stirring frequently, until onions are soft and beginning to brown, about 10 minutes. Scrape the bottom of the pot as you stir the onions to release the browned bits from the bottom.
  • Stir broth, wine, ketchup, paprika, thyme, and rosemary into the sauteed onion mixture. Lower the seared brisket back into the pressure cooker, fatty side up. Close and lock the lid; be sure pressure valve is set to the sealed position. Select high pressure according to manufacturer's instructions; set timer for 50 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, about 10 minutes. Release any remaining pressure carefully, about 5 minutes. Unlock and remove lid. Transfer brisket to a plate or carving board.
  • Strain the cooking liquid into a fat separator, collecting the cooked onions and garlic in the strainer. Return the drained onions and garlic to the pressure cooker. Pour the cooking liquid back into the pot, discarding the fat that is left behind. Blend cooking liquid, onions, and garlic into a thick gravy using an immersion blender.
  • Turn the Saute setting on medium. Mix cold water and cornstarch together in a bowl; pour into the pressure cooker. Cook, stirring frequently, until gravy has thickened, 6 to 8 minutes.
  • Slice the brisket against in the grain into 1/4-inch slices. Pour gravy over and serve hot.

3.5-4 pound beef brisket
1 tablespoon avocado oil
3 cloves garlic, minced
1/2 large yellow onion, chopped
1 cup beef broth
1/2 cup BBQ sauce
1 tablespoon cumin
1 tablespoon paprika
1 tablespoon chili powder
1 tablespoon garlic powder
1/2 teaspoon cayenne
2 teaspoon kosher salt
1/2 tablespoon ground mustard

Steps:

  • Combine spices in a small bowl. Rub over the entire surface of the brisket. Set aside.
  • Heat the oil in the Instant Pot on Sauté mode.
  • Once hot, add the onions and garlic. Cook for 2-3 minutes until slightly softened, stirring frequently to not allow garlic to burn.
  • Turn off Sauté mode.
  • Place the brisket on top of the onion mixture in the Instant Pot. You may need to cut it in half to fit properly.
  • Pour the beef broth and BBQ sauce into the pot.
  • Close the lid on the Instant Pot, turn the valve to the "sealing" position.
  • Set the Instant Pot for 90 minutes on "Meat/Stew" mode (or pressure cook high if your Instant Pot doesn't have that setting).
  • Once done cooking, let the Instant Pot naturally release for 10 minutes then turn the valve to "venting" and quick release the rest of the pressure.
  • Remove the lid and use tongs to remove the brisket from the pot to a cutting board.
  • Slice or shred the brisket depending on preference.
  • Turn the Instant Pot to Sauté mode and cook, reducing the sauce left in the pot for 5 minutes or so until slightly thickened. Whisk consistently as it cooks.
  • Add the brisket back to the pot with the sauce to coat or, plate the brisket and spoon the sauce on top before serving.

2 teaspoons fine sea salt
1 teaspoon ancho chile powder (optional)
1/2 teaspoon fresh ground black pepper
1 cup water
2 tablespoons Worcestershire sauce
Thin-sliced onions
Dill Pickles
Texas style barbecue sauce

Steps:

  • Cut the brisket crosswise into 4 equal pieces, each about 2 inches across. Sprinkle the brisket with the salt, ancho chile powder, and black pepper. Put the brisket in the pressure cooker pot, trying to get it into a loose single layer - but don't pack it in. If the pieces don't fit, add a second layer crosswise to the first layer, like you're building a house with Lincoln Logs. Pour the water and Worcestershire sauce over the beef.
  • Lock the lid, then pressure cook at high pressure for 60 minutes in an electric PC or 50 minutes in a stovetop PC. Let the pressure come down naturally, about 15 minutes more. Unlock the lid, opening it away from you - the steam is hot. Test the brisket with a fork - it should be easy to poke a fork through the thickest part of the thickest piece. If it's not done, lock the lid and cook for another ten minutes at high pressure.
  • Carefully lift the pieces of beef out of the cooker and transfer to a carving board. Strain the liquid in the pot into a fat separator. Slice the brisket into 1/2 inch thick slices, drizzle with a little of the defatted sauce, and serve, passing barbecue sauce at the table.

2 6-to 7-pound point-end veal breasts, boned, fat trimmed (about 2 1/2 pounds each after boning), bones reserved and cut into pieces
Dried thyme
1 1/2 pounds medium onions, quartered
2 tablespoons all purpose flour
1 1/2 pounds button mushrooms, thickly sliced
4 cups chicken stock or canned low-salt broth
2 cups dry imported Marsala
2 ounces dried porcini mushrooms, rinsed, drained
8 large garlic cloves
1/4 teaspoon (generous) ground allspice
Fresh thyme (optional)

Steps:

  • Preheat oven to 350°F. Season veal generously with dried thyme, salt and pepper. Heat heavy large skillet over high heat. Add veal bones and cook until some fat is rendered, turning occasionally, about 5 minutes. Add onions and sauté until brown, about 15 minutes. Sprinkle flour over and stir 3 minutes. Transfer mixture to large roasting pan, spreading onions in center and bones around edge. Add 1 brisket to same skillet and cook until brown, about 5 minutes per side. Transfer brisket to roasting pan and place atop onions. Repeat with second brisket.
  • Add button mushrooms, stock, Marsala, dried mushrooms, garlic and allspice to same skillet. Bring mixture to boil, scraping up browned bits. Cover tightly with heavy-duty foil. Roast until briskets are very tender, about 2 hours. Uncover; let cool at least 30 minutes.
  • Transfer briskets to platter. Remove bones from pan and discard. Spoon onions into strainer set over large saucepan. Press onions hard to release juices. Discard onions in strainer. Set mushrooms aside. Strain pan juices in roasting pan into same large saucepan. Spoon fat from top of pan juices and discard. Boil until pan juices coat spoon lightly, about 20 minutes. Return reserved mushrooms to sauce. Season to taste with salt and pepper.
  • Cut briskets diagonally across grain into thin slices; trim fat, if desired. Overlap slices in large casserole. Spoon mushroom sauce over. (Can be prepared 3 days ahead. Cover with foil and refrigerate. Rewarm covered in 350°F oven before continuing, about 45 minutes.) Garnish with fresh thyme, if desired, and serve.

1.3-1.5kg/3lb-3lb 5oz beef joint, such as rolled brisket or shin
1 large onion, quartered
1 leek, halved
3 stalks celery, halved
2 tbsp sea salt

2 tbsp tomato purée
5 garlic cloves, peeled
200ml/7fl oz red wine
200ml/7fl oz beef stock
2 bay leaves
1kg/2lb 4oz baby new potatoes
4 parsnips, peeled and quartered
4 large carrots, peeled and quartered
100g/3½oz butter
1 bunch chives, chopped

Steps:

  • Heat the oil in the pressure cooker over a medium-high heat, add the meat and brown it all over. Remove and set aside.
  • Add the onion, leek and celery to the pan and fry for 3-4 minutes, until just starting to soften.
  • Add the salt, pepper, tomato paste and garlic and cook for 3-4 minutes, until fragrant. Add the red wine and stir with a wooden spoon, scraping up any browned bits from the bottom of the pan. Let the alcohol bubble away for a couple of minutes.
  • Sit the beef on top of the veg and add the stock and bay leaves. Fix the lid on the pressure cooker and place over a high heat until it reaches pressure. Reduce the heat to low and cook for 1 hour 15 minutes. (If using an electric pressure cooker, cook on high pressure for 1 hour 15 minutes)
  • Remove the pressure cooker from the heat and leave to depressurise.
  • Put the potatoes, parsnips and carrots in the pan on top of the meat and onion mixture. Bring back to pressure and cook for a further 10 minutes.
  • Remove the meat, potatoes, parsnips and carrots from the pan and serve on a large platter.
  • Add the butter to the pan juices and place over a medium-high heat. Mash the onion, leek, celery and garlic to make a sauce and let it bubble away for 10 minutes. Pour the sauce over the meat and sprinkle with chopped chives.
