1 (8 ounce) package flaked coconut
1 cup ground pecans
¾ cup butter
1 ½ cups white sugar
6 eggs
1 (12 ounce) package vanilla wafers, crushed very fine
½ cup milk

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch fluted tube pan such as a Bundt®. Mix together the coconut and ground pecans; set aside.
  • In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time. Beat in the crushed wafers alternately with the milk. Mix in the coconut and ground pecans. Pour batter into prepared pan.
  • Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

Flour, for dusting pan
6 eggs
2 cups sugar
One 12-ounce box vanilla wafers, crushed
1 cup sweetened flaked coconut
1 cup chopped pecans, or your favorite nut
1/2 cup milk
Butter, optional
Whipped cream, optional
Berries, optional
Caramel sauce, optional

Steps:

  • Preheat the oven to 350 degrees F and grease and flour a tube or Bundt pan.
  • In a large bowl, beat the eggs well. Mix the sugar, vanilla wafers, coconut, pecans and milk into the eggs.
  • Pour the mixture into the tube or Bundt pan. Bake until a toothpick inserted in the center comes out clean, about 1 hour. Let sit in the pan for 10 minutes, and then turn out onto a plate. Allow to cool completely.
  • If desired, heat 1 tablespoon butter in a small saute pan. Cut a 1-inch slice of cake, butter both sides and toast in the butter. Add a dollop of whipped cream and serve with berries. Drizzle with caramel sauce. Repeat with remaining cake slices.

This moist, rich Vanilla Wafer Cake doesn't taste like Vanilla Wafers at all! ;0) This vintage cake which uses the crushed cookies instead of flour is bursting with coconut and pecan flavor.

1 1/2 cups (150g) chopped pecans
8 oz. (150g) (3 cups) sweetened coconut - we used Baker's Angel Flake Coconut
11 oz. (311g) box of vanilla wafers, crushed
2 sticks (1 cup) (226g) butter, softened
1 1/2 cups (300g) sugar
6 large eggs, room temperature
1/2 cup (121g) milk
2 teaspoons (8 g) vanilla extract
Optional: A dusting of powdered sugar on top just before serving.

Steps:

  • Preheat the oven to 325 degrees F. Prepare a bundt pan (We used "Goop" -an easy homemade non-stick pan coating. Please see notes below)
  • In a medium size bowl, add the chopped pecans and coconut, set aside.
  • Crush the vanilla wafers in a plastic bag using a rolling pin or crush fine using a food processor.
  • In the bowl of your mixer mix the butter until smooth.
  • Gradually add the sugar and mix 3 to 5 minutes or until lightened in color and fluffy
  • Add the eggs one at a time, mixing after each until the yellow of the yolk has blended in.
  • Add the crushed vanilla wafers, milk and vanilla and mix well.
  • Stir in the coconut and chopped pecans.
  • The batter will be thick. Spoon into a prepared bundt pan (prepared using Goop (see Notes below) or greased and floured.
  • Bake at 325 degrees for 1 hour and 10 minutes. At 1 hour check using a long skewer or toothpick. It is done when the toothpick is clean or with just a few crumbs attached
  • Cool 10 to 15 minutes then turn out.
  • Optional: Apply a dusting of powdered sugar to the top of the cake by spooning a small amount into a sifter and lightly tapping the side. This should be done soon before serving as the powdered sugar will absorb over time.

  • Cream together the sugar and the butter.

  • Combine the egg-milk mixture with the sugar-butter one.

1/2 pound candied red cherries, cut in half
1/2 pound candied pineapple slices, cut in small wedges
1 pound walnuts, pecans or combination of both, broken in half or coarsely chopped
1/4 pound golden or dark raisins*
2 eggs
1/2 cup granulated sugar
1 (5 ounce) can evaporated milk
1/8 teaspoon salt
Whole candied red cherries (garnish)
Candied pineapple wedges (garnish)
I mix and/or match using dates, dried apricots, dark raisins - whatever I have.

Steps:

  • 1.Preheat oven to 325 degrees F. 2.In a large bowl, crush vanilla wafers. Add cherries, pineapple, nuts, and raisins; mix well. 3.In another bowl, beat eggs; add sugar, evaporated milk, and salt. Add to fruit mixture and mix well. 4.Cup Cakes: Spoon batter loosely into cupcake pans using paper or foil liners which you have sprayed lightly with oil spray. Bake in center of oven for approximately 30 minutes. Remove from oven and let cool. 5.Cake: Pack into a waxed paper-lined 10-inch tube pan. Decorate top with reserved candied whole cherries and pineapple. Bake approximately 45 minutes. Remove from oven and let stand 10 minutes. Run a sharp knife around edge, turn cake out of pan, then back over again so decorations are on top. Note: Cake and/or cupcakes can be made ahead and frozen; taste improves with age.
