Steps:
- Preheat the oven to 400 degrees F.
- Spread the nuts out on a large baking sheet. Bake until the nuts are lightly toasted, about 8 to 10 minutes.
- In the meantime, melt the butter in a small saucepan over low heat. Add the remaining ingredients and stir to combine. Transfer the nuts to a serving bowl. Pour in the butter and toss to coat evenly. Serve warm or room temperature.
SWEET & SPICY ROASTED PARTY NUTS
These party nuts are a little sweet and a little spicy. They're completely irresistible! Be sure to buy unsalted, raw nuts for this recipe. Feel free to make it your own-I love to add fresh rosemary! Recipe yields 5 1/2 cups mixed nuts.

- Preheat the oven to 325 degrees Fahrenheit. Line a large rimmed baking sheet with parchment paper or a silicone baking mat so the maple syrup doesn't get stuck to the pan (this is important). Pour the almonds, pecans and pepitas onto the pan and set it aside.
- In a small bowl, combine the optional rosemary (or any other added seasonings), maple syrup, melted butter, salt, vanilla, and cayenne (if you using). Gently whisk until blended.
- Pour the mixture over the nuts on the prepared baking sheet. Stir well, until all of the nuts are lightly coated. Spread the mixture in a single layer across the pan (the maple syrup will pool on the bottom of the pan, but that's okay).
- Bake, stirring after the first 10 minutes and then every 5 minutes thereafter, until almost no maple syrup remains on the parchment paper and the nuts are deeply golden, 23 to 26 minutes. (The maple syrup coating will be a little sticky right out of the oven, but will harden as the pecans cool.)
- Remove the pan from the oven and stir the nuts one more time, spreading them into an even layer across the pan. Let them cool down for about 10 minutes, then, while the nuts are still warm, carefully separate any large clumps (this may or may not be necessary).
- Let the nut mixture cool completely on the pan. These will keep for up to 2 months in a sealed bag at room temperature.

- Preheat oven to 300F.
- Grease a baking sheet with cooking spray and set aside.
- In a large mixing bowl, beat the egg white with the vanilla bean paste until frothy.
- Add the nuts to the egg white mixture and stir to combine.
- In a separate bowl combine sugar, salt, allspice, and ground cinnamon; mix until thoroughly incorporated.
- Add spices to the nuts and stir to combine.
- Transfer nuts to previously prepared baking sheet and spread them out in one single layer.
- Bake for 20 minutes, stirring once half way through baking.
- Remove from oven and transfer to a wax paper lined baking sheet; let cool.
- Break apart and serve.

- In a small bowl, combine the brown sugar, cinnamon and cayenne; set aside. In a large bowl, whisk egg white; add nuts and cranberries. Sprinkle with sugar mixture and toss to coat. Steps:
- Preheat oven to 300 degrees. Beat egg white until soft and foamy. Combine all remaining ingredients except pecans; whisk into egg white. Stir in pecans until well coated; spread mixture in single layer onto an ungreased baking pan.
- Bake pecans for 15 minutes, then remove from oven. Using a metal spatula, toss, stir, and separate nuts. Reduce oven to 250 degrees and return nuts to bake until medium brown, about 10 minutes. Remove from oven; toss, and stir again. Place baking pan on wire rack to cool (they will crisp as they cool). Break up any that stick together.

- Preheat oven to 325 degrees.
- Combine vanilla extract, and egg white in a large bowl, stirring with a whisk until foamy.
- Stir in nuts.
- Combine sugar, and remaining ingredients in a small bowl, and sprinkle mixture over nuts, tossing to coat.
- Place mixture on a baking sheet lined with parchment paper and bake at 325 degrees for 15 minutes.
- Remove pan from oven, and turn off oven.
- Toss nuts, and break large pieces apart.
- Return to oven and leave in oven 10 minutes with oven off.
- Cool to room temperature.

VANILLA SPICE OATMEAL

- In a medium saucepan, bring the water and salt to a boil. Stir in the oats and raisins, reduce the heat to low and simmer, stirring occasionally, uncovered, for 5 minutes.
- In the meantime, place nuts, if using, in a dry skillet over a medium-high flame, and toast, stirring frequently, until golden and fragrant, about 5 minutes. Set aside.
- When the oats are cooked remove pan from the flame and stir in the vanilla and nutmeg. Swirl in the brown sugar and place the oatmeal in serving bowls. Pour 1/4 cup of milk on top of each bowl, and top with toasted nuts and a sprinkle of cinnamon.
- Note: For a quicker version using quick cooking or plain instant oatmeal: Cook the oatmeal according to the directions on the package. Stir raisins, brown sugar, and nutmeg into the cooked oatmeal. Top with milk, nuts (toasted or un-toasted) and cinnamon.

- Preheat oven to 325°F.
- Bring a large pan of water to a boil.
- Blanch walnuts 1 minute.
- Drain well.
- Transfer to a bowl.
- Blend corn oil with vanilla extract.
- Pour over hot nuts.
- Sprinkle in sugar and toss to mix well.
- Let stand 10 minutes.
- Arrange nuts on rimmed baking tray.
- Bake 30 to 35 minutes until nuts are light brown and crispy.
- Stir nuts a few times during baking.
- Combine remaining ingredients in a small bowl.
- When nuts are done baking, transfer to a large bowl while still hot.
- Toss with seasoning mixture.
- Return to baking sheet and spread in a single layer to cool.
- Serve at room temperature.
