1 1/2 cups self rising flour
2 tablespoons sugar
1/2 teaspoon salt
4 tablespoons butter, melted
1 teaspoon vanilla extract
1 1/4 cups milk
1 egg

Steps:

  • Beat egg until frothy.
  • Add milk and butter.
  • Mix well.
  • Add sugar, salt and vanilla extract. Mix well.
  • Add flour and mix until smooth.
  • Add a little water if it is too thick. Mixture should just barely pour out of a spoon.
  • Heat a heavy cast iron griddle or skillet over medium low burner.
  • Wipe with butter with a paper towel just enough to grease the surface lightly.
  • When heat is correct a small drop of water will just bounce and break in to smaller drops.
  • Pour batter a 1/4 cup at a time for each pancake.
  • Turn when top begins to bubble slightly.
  • Second side cooks quicker so keep an eye on 'em.
  • Repeat until out of batter, remember to wipe the griddle with butter between each batch.

Bake for 15-20 minutes or until sides are crisp and golden brown., In a small saucepan, combine sugar and cornstarch. Stir in water until smooth; add strawberries. Cook and stir over medium heat until thickened. Coarsely mash strawberries. Serve with pancake. Dust with confectioners' sugar.

2 tablespoons honey
2 tablespoons peach preserves
3 cups sliced peeled peaches (about 5 medium) or frozen unsweetened sliced peaches

Steps:

  • Preheat oven to 400°. Place butter in a 9-in. deep-dish pie plate; heat in oven until butter is melted, 2-3 minutes. Meanwhile, in a small bowl, whisk eggs, milk, vanilla and salt until blended; gradually whisk in flour. Remove pie plate from oven; tilt carefully to coat bottom and sides with butter. 3/4 cup all-purpose flour
3/4 cup milk, heated 20 to 30 seconds in the microwave
1 tablespoon plus 1 teaspoon sugar
2 teaspoons vanilla extract
Pinch salt
1 pint fresh or frozen blueberries
1 teaspoon sugar
1/2 teaspoon fresh lemon zest
2 tablespoons confectioners' sugar

Steps:

  • Preheat the oven to 400 degrees F.
  • Place the butter in a large saute pan and place in the oven to melt.
  • Meanwhile, in a blender, combine the eggs, flour, hot milk, 1 tablespoon sugar, vanilla extract, and pinch of salt, and blend on medium-high speed until uniform. Cook's Note: If mixing by hand, combine the eggs with the milk until the mixture is light yellow and no longer stringy, about 1 minute. Add the flour, sugar, vanilla, and pinch of salt, and whisk vigorously to remove the lumps, about 30 seconds.
  • Carefully, remove the hot pan from the oven. The butter should be melted.   • While the Dutch baby bakes, in a small bowl combine the fresh blueberries, 1 teaspoon sugar, and lemon zest. Stir to coat, and set aside to marinate.
  • Using a spatula, remove the entire Dutch baby from the pan and place on a cooling rack for a few minutes to allow the steam to escape without condensing along the bottom and rendering the pancake soggy. Slice the pancake into wedges on a serving platter or cutting board and sprinkle with the confectioners' sugar through a sieve. Serve with the marinated blueberries.
